Producto cárnico cocido de larga caducidad.#La presente invención se refiere a un procedimiento para la obtención de un producto cárnico cocido y embutido que comprende: (a) mezclar una masa cárnica en un porcentaje de un 85% y un 98% en peso con una mezcla de al menos una proteína con alta capacidad emulsionante y de al menos un hidrocoloide estabilizante, en una proporción comprendida entre el 5 y el 12% en peso de la mezcla total; (b) embutir la mezcla en tripas plásticas multicapa no aluminizadas de alta resistencia; (c) someter a la mezcla embutida a un proceso de cocción en autoclave a alta temperatura y alta presión y (d) enfriar la mezcla mediante corriente de agua fría.
