Abstract

Deep freeze installation (1) using cryogenics produces liquid citrus fruit juice in form of granules different in shape and size and comprises fruit collection and storage deposit (2), from which it is distributed by a conveyor belt (3) and a classifier (4) to a squeezing machine (5) which extracts the juice. A pump (6) moves the juice to a heat exchanger (7) in which the juice is refrigerated and passed to a deposit (8), from which it is impelled by a pump (9) to the upper part of a cryogenic machine (11). From this point, the juice is moved to the interior of the machine in which is a vacuum tank. An injector holder impels the drops of juice which fall by gravity to a nitrogen deposit in which they are deep frozen into granules (19), from which they are moved by a conveyor belt to a packing area.
