Abstract

Nuevas aplicaciones de geles que contienen levaduras inmovilizadas. Dichos geles que contienen levaduras inmovilizadas en su estructura, se utilizan para controlar el pardeamiento de bebidas que se produce con el paso del tiempo. Los geles comprenden una matriz de polisacárido natural como base del gel, y células de levaduras inmovilizadas en la estructura de dicha matriz. Los geles así constituidos permiten tanto corregir el color de una bebida que ya ha pardeado, como prevenir el desarrollo de color en una bebida susceptible de pardear con el paso del tiempo. Aplicación en el sector de la industria alimentaria.
