Abstract

Almond-based drink and procedure for preparation thereof. It is made up of the following ingredients, in suitable percentages: almonds, emulsifiers, pH correctors, sugar and/or natural and/or artificial sweeteners, and water to make up the total weight. The ingredients are subjected to a process which comprises successive phases of mixing the almonds and water centrifugation sweetening addition of pH correcting substances addition of emulsifiers homogenization and sterilization. The resultant product is a liquid drink with a water activity greater than 0.75, which is ready for consumption and can be kept at ambient temperature for prolonged periods of time.
