Besonders kritische Situationen stellen sich dann schnell ein, wenn portionsweise geschnitten wird, da in diesem Falle zwischen den einzelnen Portionen ruckartige Zwischenbeschleunigungen des Bandes erforderlich sind. Werden jedoch Leerschnitte eingeschaltet, so ergibt sich ein insgesamt deutlich gleichmäßigerer Bandlauf auch bei wesentlich erhöhter Schnittgeschwindigkeit. Voraussetzung dafür, daß in der Praxis mit den für einen optimalen Bandlauf erforderlichen Leerschnitten gearbeitet werden kann, ist aber wiederum das Vermeiden der störenden Schnitzelbildung, und aus diesem Grunde kommt den diese Schnitzelbildung verhindernden Maßnahmen gemäß vorliegender Erfindung besondere Bedeutung zu.Avoiding the formation of chips when making empty cuts is important not only with regard to the economy of the slicing process, but also because the targeted use of empty cuts enables a significantly higher overall cutting speed. Claims (10)

1. A circular cutting machine for cutting up food products, in particular sausage, ham, bacon, meat, cheese and the like, comprising a basic frame (1) on which are arranged, in particular with adjustable inclination, a cutting head having a drive unit (8) and a circular knife (9) which rotates in planetary manner, and also a product supply unit with a guide (4) for the product to be cut, said guide having a supporting surface for the product to be cut, with means (6) for holding the product to be cut and with a feed means (5), characterised in that the relative position between at least the supporting surface as well as the means for holding the product to be cut and the cutting plane of the knife can be changed over a predeterminable retraction stroke by means of a controllable actuating unit (7, 12), in particular for a short period of time.
2. A circular cutting machine in accordance with claim 1, characterised in that the product supply unit comprises an outer frame (2) which is journalled on the basic frame (1) and a carriage (3) which is displaceably guided on the outer frame (2); in that the feed means (5), the guide (4) for the material to be cut and the means (6) for holding the material to be cut are integrated into the carriage (3); and in that a controllable actuating unit (7), in particular in the form of a piston-in-cylinder arrangement for generating a predeterminable relative stroke between the outer frame (2) and the carriage (3), is provided between the outer frame (2) and the carriage (3).
3. A circular cutting machine in accordance with one of the preceding claims, characterised in that a slider (10) is provided in front of the rotating circular knife (9) and is capable of being switched over between a blocking position and a release position; and in that the knife-side end of the guide (4) provided on the carriage (3) for the material to be cut is disposed at the end of the advance stroke of the carriage (3) executed by means of the actuating unit (7) within the path of movement of the slider (10) and directly adjacent the circular knife (9), whereas it has a distance in the region from 15 to 40 mm, and in particular a distance of approximately 30 mm from the circular knife (9) at the end of the retraction stroke of the carriage (3).
4. A circular cutting machine in accordance with one or more of the preceding claims, characterised in that a positioning member (12) is provided between the carriage (3) and the carriage side hinge (13) for the actuating unit (7) for displacing the hinge point for the actuating unit (7).
5. A circular cutting machine in accordance with claim 4, characterised in that the positioning member (12) comprises a piston-in-cylinder arrangement which displaces the carriage over a stroke which only amounts to a fraction of the stroke of the actuating unit (7), with the piston-in-cylinder unit being controllable independently of this actuating unit (7).
6. A circular cutting machine in accordance with claim 4 or claim 5, characterised in that the stroke effected by means of the positioning member (12) amounts to approximately 1 mm and each retraction stroke effected by means of the positioning member (12) when the feed unit is stationary corresponds to at least one empty cut.
7. A circular cutting machine in accordance with one or more of the claims 6 to 8, characterised in that the piston-in-cylinder arrangement forming the positioning member (12) acts via a lever (14) on an eccentric axle on which the actuating unit (7) and a connecting part (15) fixed relative to the carriage are hinged, with the carriage (3) being moved relative to the actuating unit (7), or relative to the outer frame (2), by the lever adjustment.
8. A circular cutting machine in accordance with one or more of the preceding claims, characterised in that the actuating unit (7) and the spindle drive for the feed unit (5) are simultaneously activated in order to form initial cut pieces of the material to be cut.
9. A circular cutting machine in accordance with one or more of the preceding claims, characterised in that a hold-down clamp which acts on the particular material to be cut and acts as a kind of brake and at least one device for lateral follow-up movement of an abutment are provided on the carriage (3).
10. A circular cutting machine in accordance with claim 9, characterised in that the abutment is capable of follow-up adjustment via a spring force.
