Abstract

In an installation for treating meat by injecting a meat protein-containing suspension and of the type which comprises a) a suspension-producing section 2, 2a, 4, 4a, 5, 7, 8, in which the suspension which is intended to be injected is produced, and b) an injection section 9, in which the suspension is injected into the meat which is intended to be treated, that which is most essentially novel consists in, c) the suspension-producing section 2, 2a, 4, 4a, 5, 7, 8 comprising c1) members 2 for continuously coarsely cutting meat which is intended to be included in the suspension, c2) first combining members 2a for combining the coarsely cut meat from the coarsely cutting members 2 with a first stream of brine, c3) first members 4 for finely cutting the coarsely cut meat which has been combined with the first brine stream, in order to form a suspension, c4) second combining members 4a for combining the suspension which comes from the finely cutting members 4 with a second stream of brine, and c5) second members 7 for additionally finely dividing the meat in the mixture of suspension and brine which comes from the second combining members 4a. In this way it is possible, with the minimal amount of heating, to form an extremely fine, uniform suspension or emulsion which, when it is injected readily distributes itself between the fibres in the meat which has been treated. The invention also relates to a process which comprises using the installation.
