Während mit den Milchabfallprodukten in der milchreichen Zeit die Tiere überfüttert werden und so viel gar nicht aufnehmen bzw. mit Vorteil verarbeiten können, fehlt in der milcharmen Zeit der überschuß für das Vieh, ganz abgesehen davon, daß in der milchreichen Zeit keine guten Preise für die Nebenprodukte erzielt werden können und in der milcharmen Zeit die Preise dafür in die Höhe schnellen. Es liegt also auch im volkswirtschaftlichen Sinne, hier eine Stabilität herbeizuführen. Das geschieht durch die vorliegende Erfindung, indem frische Magermilch (der in der milchreichen Zeit anfallende überschuß) im Vakuum eingedickt, dann auf Zimmertemperatur abgekühlt und anschließend einer Säuerung bis zu einem Säuregrad von mindestens i 5o (nach S. o x -1 e t h - H e n c k e 1), gegebenenfalls unter Zusatz von Milchsäurebakterien, unterworfen wird.
