UN PROCESO QUE PERMITE LA FACIL CONVERSION DE BANANAS VERDES A ALMIBAR DE AZUCAR UTILIZANDO UNA SECUENCIA DE PASOS, QUE INVOLUCRAN EL MOLIDO DE LAS BANANAS, SU CALENTAMIENTO, SU TRATAMIENTO CON ALFA AMILASA PARA TRANSFORMAR LOS GRANULOS DE ALMIDON EN MOLECULAS DE MENOR PESO MOLECULAR (LIQUEFACCION), CAMBIANDO LAS CONDICIONES Y TRA- TANDO LAS MOLECULAS DE ALMIDON DE BAJO PESO MOLE- CULAR Y OTRA SUBSTANCIA EN EL FLUIDO LICUADO CON LAS ENZIMAS AMILOGLUCOSIDASA, PECTINASA, CELULASA, MACERASA, ETC.FILTRANDO LA LECHADA RESULTANTE PARA QUITAR LOS SOLIDOS Y SI FUERA NECESARIO, EVAPORANDO LA SOLUCION DE AZUCAR A UNA CONCENTRACION ADECUADA.
