Abstract

La presente invención se refiere a un proceso de obtención de β-glucano a partir de células de levadura, el cual involucra el crecimiento inicial de la levadura, la autolisis de dichas células para la obtención de paredes celulares de levadura, el tratamiento alcalino de estas con hidróxido de sodio que comprende periodos de retención, el tratamiento ácido del producto insoluble obtenido, y la recolección y manejo del mismo para la obtención de un producto en polvo enriquecido en β-glucano con un porcentaje inferior al 4% de grasa.
