Abstract
The invention discloses a method for producing a canned food of grains processed by coarse cereals, which belongs to the technical field of processing canned food of grains processed by coarse cereals, combines the advantage of health benefits of coarse cereals, and is matched with milk to form coarse and fine ingredients after the coarse cereals are frequently eaten to balance the functions and nutrition of human bodies. The pork and soybean matched also promote nutrition balance, and the food can be eaten as staple food, meal replacement, leisure and health care, so that the invention maintains the nutrition required by the coarse cereals on the health of human bodies to the maximum extent. The invention has positive significance in promoting the deep processing development of coarse cereals.
Description
Technical Field
The invention relates to a method for producing a canned food of grains processed by coarse cereals containing starch, belonging to the technical field of processing canned food of grains processed by coarse cereals.
Background
At present, although various types of canned drinks are sold in various supermarkets and shops in China, the conventional canned drinks have single nutrition and cannot meet the requirements of human bodies and can not be subjected to high-temperature sterilization and canning preservation in a liquid state.
Disclosure of Invention
The invention aims to provide a method for producing canned food containing starch and coarse cereals and fruit grains, which is suitable for corn, wheat, barley, oat, mung bean, red bean, sweet potato and the like. The method is realized by the following technical scheme that starch-containing coarse cereals are firstly crushed, white granulated sugar and a small amount of eggs are added, the eggs are hydrated and stirred at 80-90 ℃ in advance, and then the mixture is poured into the crushed coarse cereals and stirred uniformly to form a dough shape. (salty meat paste or beef paste and salt may also be added). And filling the dough with the edible oil, such as: square with height of 30-40 cm and length of 20-30 cm, and opening of 1-2 cm larger than bottom, and steaming for 20-30 min at 100deg.C. And taking out the coarse cereal processed fruit grains which are cut into square grains with the length and the width of 1-1.5 cm after cooling. Sweet taste is prepared into milk, salty taste is prepared into salt water. Finally, the coarse cereal processed fruit grains are put into a pot, then milk or saline water is injected, a vacuum pot sealing machine is used for sealing the pot, and the pot is steamed and sterilized at 85-100 ℃ and cooled to obtain the coarse cereal processed fruit grain.
By adopting the technology, the prepared product tank is filled with coarse cereal processed fruit grain products, the fruit grain content accounts for 50% of the total tank amount, the nutrition collocation is suitable for the human body requirement, and the milk can be used as sweet water for filling and salty brine for filling. The food is carried in travel, and is fast and convenient for main meal, meal replacement, leisure, nutrition and health care. Therefore, the invention maintains the nutrition and health care effects of the coarse cereals to the maximum extent and has positive significance for promoting the deep processing and development of the coarse cereals.
Drawings
Fig. 1 is a process flow diagram of a method for producing a canned food containing starch and coarse cereals and fruit granules.
Detailed Description
Examples: the method for producing the canned food containing starch and coarse cereal processed fruit particles in the embodiment is shown in fig. 1, and comprises the following steps:
1. firstly, selecting high-quality starch-containing coarse cereals, soybeans, skimmed milk powder or pork paste or beef paste;
2. respectively crushing starch-containing coarse cereals and soybeans, wherein the proportion of the starch-containing coarse cereals to the soybeans is 10:3 or the proportion of the starch-containing coarse cereals to the soybeans to the pork is 10:3:5;
3. pouring the starch-containing coarse cereal soybean powder or pork sauce with good proportion into a stirrer, mixing and adding 15% of white granulated sugar or 1% of salt, 2% of eggs and 0.15% of citric acid, hydrating the eggs with 80-90 degrees which is about 1 time of the eggs in advance, stirring uniformly, and then pouring the mixture into the materials of the stirrer to be uniformly stirred into dough;
4. and the prepared starch-containing coarse cereal soybeans or starch-containing coarse cereal pork balls are filled with special edible oil, such as: the stainless steel barrel with the height of 30-40 cm, the length and the width of 20-30 cm and the mouth of 1-2 cm larger than the bottom is heated and steamed for 20-30 minutes at 100 ℃;
5. the steamed starch-containing coarse cereals or starch-containing coarse cereal pork steamed corn cake is taken out after being cooled, and is cut into starch-containing coarse cereal fruit grains with the length of 1-1.5 cm square;
6. adding 20% skimmed milk powder, 15% white sugar, and 0.15% citric acid into pure drinking water prepared from milk, heating to dissolve at 80-85deg.C, and increasing the salt water preparation temperature to 100deg.C;
7. filling processed starch-containing coarse cereal soybean or starch-containing coarse cereal pork fruit granule into a can, filling milk or saline water, sealing with vacuum can sealing machine, steaming with 80 or 100 deg.C steam for 10-20 min, and cooling
Example 2: a canned food of fruit particles is prepared from starch-containing coarse cereal and corn as main raw materials, and has the same method and procedure as in example 1.
Example 3: a canned food of sweet or salty processed fruit grains using starch-containing coarse cereal whole wheat as main material is prepared by the same method and procedure as in example 1.
