Abstract
本发明涉及一种甘草酒的生产工艺方法,采用三步法生产:第一步:用高度酒分别浸泡甘草、枸杞、红枣,过滤后得到三种一次浸提液,再以三种一次浸提后部分药材分别用酒分别浸泡,过滤后得到三种二次浸提液,将两次浸提液分别混合后复蒸馏得到三种蒸馏液;第二步:以一次浸提后剩余的药材分别配入清香大曲大楂酒醅共同进行蒸馏得三种大楂基础酒;第三步:以二次浸提后的药材分别配入经蒸馏后的糟醅拌入大曲再入缸进行二楂发酵得二楂酒醅,蒸馏生产二楂基础酒;经过勾调成甘草酒。其优点是:经多次浸提、发酵、混蒸、混烧,增加有益微生物,产生多种风味物质,提升清香型白酒的风味特征,入口绵甜,酒体醇和、具有保健功效。

本发明涉及一种甘草酒的生产工艺方法,属于白酒酿造技术领域。
背景技术
甘草素有“众药之王”之称。两千年来在我国传统医学宝库中占有重要的地位。甘草是豆科甘草属植物,为世界性药材商品,也是一种重要的食用、饲用及其它轻工业用的原料商品,其品种多、用途广、销量大、市场竞争激烈。甘草适宜在土层深厚、土质疏松、排水良好的砂质土壤中生长。内蒙古是中国甘草的重要产区之一,鄂尔多斯高原是中国甘草中优质“梁外甘草”的分布中心。内蒙古鄂尔多斯甘草自然保护区位于内蒙古鄂尔多斯西南部的荒漠草原区,是乌拉尔甘草分布的中心地带。甘草是治沙先锋植物,根部的根瘤菌有固氮作用,能够增加土壤肥力,治沙改土效果明显甘草多生长在干旱、半干旱的沙土、沙漠边缘和黄土丘陵地带,在引黄灌区的田野和河滩地里也易于繁殖。
甘草(学名:Glycyrrhiza uralensis Fisch)别名:国老、甜草、乌拉尔甘草、甜根子。豆科、甘草属多年生草本,根与根状茎粗壮,是一种补益中草药。甘草性质平淡,药性温和。主要清热解毒,补脾益气,润肺止咳,缓急止痛,缓和药性的功效。甘草中最主要的活性成分是甘草酸即甘草甜素,属三萜类物质,除具有抗氧化、抗炎、抗癌、抗突变,调节免疫和脂质代谢等功能外对肝脏也有保护作用。甘草中还含有黄酮类化合物,主要成分有甘草苷(甘草甙),甘草黄酮类化合物具有良好的抗氧化作用,甘草黄酮类成分在人体内具有明显的加速脂肪分解、抗氧化和增加骨密度等保健效果。除此之外,甘草还含有丰富的矿物质和维生素,如钙、镁、铁和维生素C等,对机体健康和营养平衡也有一定的益处。
红枣(学名:Ziziphus jujuba Mill)是鼠李科枣属植物。红枣的维生素含量非常高,有"天然维生素丸"的美誉,具有补中益气,养血安神,缓和药性的功效。红枣富含蛋白质、脂肪、糖类、胡萝卜素、B族维生素、维生素C、维生素P以及钙、磷、铁和环磷酸腺苷等营养成分。其中维生素C的含量在果品中名列前茅,有维生素王之美称,具有养颜治疗失眠之功效。此外红枣还能促进肝脏合成蛋白,增加血清红蛋白与白蛋白含量,预防输血反应。红枣可以降低血压,胆固醇,预防心血管疾病。红枣在白酒的浸泡过程中,大量的营养有机物质就会更加容易的溶解出来,具有很好的促进血管通畅的作用。
枸杞(学名:Lycium chinense Miller)是茄科枸杞属植物。具有滋补肝肾,明目,润肺的功效。枸杞性甘,对免疫功能有影响作用。枸杞中含有丰富的营养物质,主要包括枸杞黄酮和枸杞色素以及脂肪和膳食纤维、蛋白质、多糖、类胡萝卜素、枸杞花色苷、有机酸及其衍生物等多种成分,同时富含多种氨基酸及钾、钠、钙、镁、铝、铜、铁、磷等微量元素近年来,大量的枸杞成分研究表明,枸杞具有抗衰老、抗肿瘤、抗糖尿病等一系列功能。
甘草、红枣、枸杞作为中国的药食同源物质,有着很高的药用价值,亦被用于各种保健酒和保健食品当中,具有广泛的应用范围和商业价值。此酒融合露酒和白酒的工艺,添加了这几种药材的白酒既保持了此酒原有风格,又丰富了酒的香气,改善了酒的口感,提升清香型白酒风味特征,实现以产品风味为导向的生产工艺调控,两者相辅相成,相得益彰。对于饮酒爱好者而言,酒的品质稳定性有所提高的同时,每天适量饮用还有助于补脾益气、延缓衰老、促进血管通畅,对健康具有一定益处。
药酒制作在我国有着悠久的历史,甘草等中草药为原料制作药酒也都被采用。但大多数药酒是采用浸泡法制作。中国发明专利申请201310095635X 公开了“一种红枣甘草酒”、中国发明专利申请2016109226182公开了“一种甘草酒配方及其制备方法”,均采用浸泡法制作。浸泡法的优点是:方法简单,制作药酒的时间短。其缺点是:浸泡出的药酒药味重口感不好;需要用高度白酒浸泡,酒劲大,入口冲;不能将药物中的有效成分充分溶于白酒中,且有效成分不易被人体吸收。
中国发明专利001012975公开了一种“甘草酒及其酿造方法”,该方法将药材用白酒浸泡后,作为原料与高粱、大麦等其它原料混合发酵再蒸馏勾兑而成,其优点是:工艺简单成熟,较浸泡法更能够将药材的有效成分融合到酒液中,保健作用更好。其缺点是:(1)采用一次浸泡发酵方法酿制,不能发挥出药材的最大功效,仍有一些有效成分被浪费掉;(2)药材组分中除甘草、枸杞、大枣外,还加有黄芪、当归、白术、党参等补气养血的药材,使得酿制出的酒补气养血的功效较大,不能随意饮用,只能作为保健酒限量饮用,对于普通人难以把控饮用量;(3)酿制出的酒口感不够绵甜,入口较冲。
发明内容
本发明的目的是提供一种经多次浸提、发酵、混蒸、混烧,能够最大限度的将药材中有效成分融合在酒液中,增加有益微生物,产生多种风味物质,入口绵甜,酒体醇和、谐调,余味爽净,既具有补脾益气、缓急止痛、止咳祛痰、益气复脉、祛风散寒的保健功效,又可随意饮用的甘草酒的生产工艺方法。
本发明的目的是通过以下方式实现的:
本发明采用三步法生产:第一步:浸提蒸馏工艺,选用优质高度陈酿清香大曲酒分别浸泡甘草、枸杞、红枣,过滤后得到三种一次浸提液,再以三种一次浸提后药材的40wt%~60 wt %分别用优质高度陈酿清香大曲酒分别浸泡,过滤后得到三种二次浸提液,将两次浸提液分别混合后复蒸馏得到三种蒸馏液;第二步:混蒸续楂工艺,以一次浸提后剩余的60wt %~40wt%药材按投粮量的10 wt %分别配入清香大曲大楂酒醅共同进行蒸馏得三种大楂基础酒,分别贮存陈酿;第三步:混蒸混烧工艺,以40wt%~60 wt %的二次浸提后的药材按投粮量的10 wt %分别配入经蒸馏后的糟醅拌入大曲再入缸进行二楂发酵得二楂酒醅,进行蒸馏生产二楂基础酒,分别贮存陈酿;最后由药材蒸馏液与两次陈酿的基础酒经过勾调成为酒精度39~53%vol的成品甘草酒。
所述优质高度陈酿清香大曲酒是;酒精度不低于60%vol、陈酿时间不低于10年的清香型大曲酒;
所述浸提蒸馏工艺中一次浸提和二次浸提,各药材与高度陈酿清香大曲酒的重量比均为1:5;
所述浸提蒸馏工艺中一次浸提和二次浸提的药材浸泡时间均为20天;
所述发酵周期:不低于28天。
本发明的优点是:经多次浸提、发酵、混蒸、混烧,能够最大限度的将药材中有效成分融合在酒液中,增加有益微生物,产生多种风味物质,提升清香型白酒的风味特征,生产出的甘草酒无色透明,复合甘草香优雅、舒适,有陈香,入口绵甜,酒体醇和、谐调,余味爽净,风格突出,既具有补脾益气、缓急止痛、止咳祛痰、益气复脉、祛风散寒的保健功效,又可随意饮用。

实施例
设备:304不锈钢罐、地缸、陶坛、蒸馏器;浸提时间:20天;发酵周期:28天;发酵中使用的糖化发酵剂:清香大曲。
投粮量:
主料:高粱900kg;
辅料:稻壳160~180kg(17wt%~20 wt %);
药材:甘草90kg、枸杞90kg、红枣90kg;
用曲量:清香大曲大、二楂分别加90kg+9kg(10 wt %+ wt 1%)(分季节,特殊情况除外)。
原辅料及药材要求:
高粱:要求颗粒饱满、皮薄、壳少、无霉、无变质、无土杂、淀粉含量在62 wt%以上。经磨粉机粉碎呈4、6、8瓣,通过40目孔筛的细粉不超过5%。
枸杞:颗粒饱满,色泽鲜红,无杂质,无不完善粒,无不成熟粒,无破碎粒,无虫蛀无霉变。
红枣:干制红枣,用充分成熟的先枣经晾干晒干或烘烤干制而成,果皮红色至紫红色。无有害杂质,无缺陷,无虫蛀无霉变。
甘草:选取皮细紧、质坚实、断面呈黄色、无变质的甘草。
大曲:要求贮存期在3~6个月之间,无虫蛀,糖化力在600单位以上。大楂用曲粉碎度为:曲块大如豌豆,小如绿豆,过16目筛细粉不超过45%;二楂用曲粉碎度为:大如绿豆,小如小米,过16目筛细粉占30~45%。
生产工艺过程如下:

1、药材蒸馏液的制备:
(1)清洗:用指定酒水将甘草、枸杞、干制红枣分别进行清洗。
(2)浸泡:
①将清洗后的甘草、枸杞、红枣用指定优质10年陈酿清香大曲62%vol酒分别按重量比计,药材与酒水的比例以1:5的比例分别浸泡,浸泡20天分离,分离后得到一次浸提液,各种药材的一次浸提液需单独存放,并做好记录。分离后的药材50wt%部分留作混入酒醅发酵使用,另外50 wt %部分进行二次浸泡。
②分离后用作二次浸泡的药材(甘草、枸杞、红枣)继续按以上方法,浸泡20天分离,分离后得到二次浸提液,各种药材的二次浸提液按种类分别与一次浸提液混合后单独存放(即甘草一次浸提液与甘草二次浸提液混合,枸杞一次浸提液与枸杞二次浸提液混合,红枣一次浸提液与红枣二次浸提液混合),并做好记录。
(3)蒸馏:
将甘草、枸杞、红枣浸提液经蒸馏器分别蒸馏,蒸馏后的蒸馏液分别单独存放。
蒸馏液有甘草香、枸杞香、枣香、陈香、酯香的复合香气,丰满、醇甜、后味长,尾浄,风格独特;
2、 大楂基础酒的生产:
(1)润糁:
将糁料围成内径约1m外径约3m的圆圈后,注入84~90℃热水,迅速用铁锹将糁料向中心翻倒,并保证糁料充分与水接触。操作要求速度快,先倒成一堆后再翻倒成数小堆,最后拌匀拢成一大堆。要求堆心温度达到48~56℃。润糁加水量视糁料干湿而定,一般加水量为510~560kg(56wt%~62 wt%)。糁料应无淋浆,如有淋浆,需调节润糁水浆量和水温。
润糁堆积过程中,每间隔5~9h倒糁一次,要倒彻底,同时将疙瘩破碎。
蒸糁前糁料能够搓碎呈粉状,无干心,否则需适时延长润糁时间。
(2) 蒸糁:
红糁:在粮甑活底甑锅甑篦上撒一层熟稻壳后,然后装甑上料,见汽撒料,操作要求料层匀而平,冒汽均匀。圆汽后,在料面上泼入约30kg的水(视材料情况而定),称之“加闷头量”。大汽蒸料时间约60~80min。红糁经蒸煮后,要求达到“熟而不粘,内无生心,无邪杂味”。
辅料:辅料清蒸时应先用喷壶将稻壳喷湿(加水量约为20kg),然后再进行清蒸,清蒸时间30~40min,清蒸后稻壳应单独存放。
(3)打量水:
蒸料结束后立即关闭汽阀,均匀泼入原料量30~35 wt%(270~315kg)的冷水,加水量应根据原粮水份、润糁加浆量、加闷头量及季节调节。
(4)摊凉、加曲:
将粮甑活底甑锅用行车提升运送至摊凉机的喂料斗上方,打开粮甑活底甑锅插销,使糁料散入喂料斗,开启摊凉机设备总控箱各启动按钮,在摊凉机输送带上摊凉扬冷,根据糁料的干湿情况调节摊凉机加水泵按钮及水龙头开关控制加水的量。通过调节摊凉机设备总控箱各按钮来控制糁料温度、上曲温度、加曲速度,保证糁料上曲均匀。
上曲温度一般冬季比入缸温度高3~5℃,春秋两季比入缸温度高1~3℃。上曲温度一般控制在春秋两季14~23℃,夏季吹凉至最低,冬季14~21℃。
(5)大楂入缸发酵:
入缸前,应将地缸先用清水清洗,再用0.4%花椒水擦洗一遍。地缸内应清洁无积水。
用行车将装有拌匀后糁料的提料斗运至地缸发酵区,打开提料斗插销,使糁料散入地缸。大楂入缸后用食品级塑料薄膜将缸封严,确保不漏气,用棉垫、厚重木盖加以保温。入缸后应对窖池进行管理,发酵情况进行检测,符合“前缓、中挺、后缓落”的规律,顶火适温夏季为28℃~35℃,春、秋、冬季24~30℃。
大楂入缸温度随着季节不同而定,一般控制在春、秋季节13~22℃,冬季12~20℃,夏季吹凉至最低,入缸材料化验酸度为0.1~0.3,淀粉为29~33 wt %,水为52~55wt%。
(6) 出缸加辅料:
酒醅出缸前测品温,一般夏季为18~24℃,春、秋、冬季为13~21℃,同时取样化验出缸酒醅酸度、水份、糖份、淀粉、酒精份(抽测),一般水份为62~72 wt%,酸度为1.2~2.2(出缸酸度、水份因在夏季、春节发酵期延长等特殊情况除外)。
酒醅出缸后用提料斗运到酒甑活底甑锅前,加清蒸辅料翻拌均匀,辅料用量可视酒醅情况微调,将一次浸泡分离后的药材(枸杞、红枣、甘草)按10 wt %的比例分别配入清香大楂出缸的酒醅中,并用扫帚打碎疙瘩,堆积在酒甑活底甑锅前,准备一起上甑锅蒸馏。
(7) 装甑蒸馏:
装甑初装时,汽量小,酒醅装量约10cm以上时,将汽量适当放大,待装至收甑口时,要将汽量放小,即“两小一大”。整个装甑过程要求轻撒薄铺,做到“薄、匀、轻、准、松、平”,见湿上甑,不压汽,不跑汽,更不穿孔窜汽。
装甑完毕要迅速盖上甑盖,并与冷却器接通,打开冷水阀。
蒸馏开始每甑接取0.5~1kg酒头,单独贮存,接完酒头后,即接大楂酒,蒸馏过程中,要做到缓汽蒸馏,大汽追尾。接酒温度一般控制在20~30℃之间,入库酒度保证在64%vol以上,入库贮存。
(8)摊凉、加水、加曲:
将酒甑活底甑锅用行车提升运送至摊凉机的喂料斗上方,打开酒甑活底甑锅插销,使大楂蒸完酒的醅子散入喂料斗,开启摊凉机设备总控箱各启动按钮,醅子在输送带上摊凉扬冷。根据醅子的干湿情况调节摊凉机加水泵按钮,加入15~60kg冷水。调节摊凉机设备总控箱各按钮来控制醅子温度、上曲温度、加曲速度,保证醅子上曲均匀。加曲量为99kg。
上曲温度一般冬季比入缸温度高3~5℃,春、秋两季比入缸温度高1~3℃。
此基础酒有粮香、果香的复合香气,酒体协调净爽,具有本品的风格。
3、二楂基础酒的生产:
(1)二楂入缸再发酵:
入缸前,应将地缸先用清水清洗,再用0.4%花椒水擦洗一遍。地缸内应清洁无积水。
用行车将装有拌匀后醅料的提料斗运至地缸发酵区,打开提料斗插销,使醅料散入地缸。大楂入缸后用食品级塑料薄膜将缸封严,确保不漏气,用棉垫、厚重木盖加以保温。入缸后应对地缸进行管理,发酵情况进行检测,二楂发酵情况应符合“前紧、中挺、后缓落”的规律,顶火适温春、秋、冬季为21℃~28℃,夏季为25~30℃。
二楂入缸温度随着季节不同而定,一般控制在春、秋季节18~26℃,冬季19~27℃,夏季吹凉至最低,入缸醅子化验水为58~66wt%,淀粉为13~21 wt %,酸度为1.0~2.3。(入缸酸度、水份因在夏季、春节发酵期延长等特殊情况除外)。
(2) 二楂出缸:
出缸前测品温一般为16~23℃(作为参考),同时取样化验酒醅酸度、水份、糖份、淀粉、酒精份(抽测),一般水为63~72wt%,酸度为1.2~2.7(出缸酸度、水份因在夏季、春节发酵期延长等特殊情况除外)。
将二次浸泡分离后的药材(枸杞、红枣、甘草)按10 wt %的比例配入二楂出缸的酒醅中,一起上甑锅蒸馏。
(3)装甑、蒸馏:
装甑蒸馏操作同大楂酒。
蒸馏开始要每甑接取0.5~1kg酒头,单独存放,接完酒头后,即接二楂酒,接酒温度一般控制在20~30℃之间,入库酒度保证在64%vol以上,入库贮存。
流酒结束后,将二楂蒸完后的糟醅作为丢糟运送至糟子场。
此基础酒甘草香、枸杞香、枣香、酒体醇厚绵甜,尾净味长,风格明显。
4、勾调:
以陈酿后的不同种类大、二楂酒组合成为基础酒,按比例分别加入甘草蒸馏液、红枣蒸馏液、枸杞蒸馏液进行勾调。
5、感官品评:
无色透明,复合甘草香优雅、舒适,有陈香,入口绵甜,酒体醇和、谐调,余味爽净,风格突出。
理化指标:
(1)45%vol甘草酒,参照附图2,其理化指标见下表:
7、符合Q/NEJY 0002S-2021标准规定:
污染物限量:污染物限量中“铅(以Pb计)≤0.4mg/kg”,其他污染物限量按GB 2762中规定的方法检验,符合GB 2762中及其项下蒸馏酒的规定。
真菌毒素限量:按GB 2761中规定的方法检验,符合GB 2761中酒类的规定。
该甘草酒既具有补脾益气、缓急止痛、止咳祛痰、益气复脉、祛风散寒的保健功效,又可随意饮用,是一款新型、养生白酒。
Claims (5)
1.一种甘草酒的生产工艺方法,其特征是:采用三步法生产:第一步:浸提蒸馏工艺,选用优质高度陈酿清香大曲酒分别浸泡甘草、枸杞、红枣,过滤后得到三种一次浸提液,再以三种一次浸提后药材的40wt%~60 wt %分别用优质高度陈酿清香大曲酒分别浸泡,过滤后得到三种二次浸提液,将两次浸提液分别混合后复蒸馏得到三种蒸馏液;第二步:混蒸续楂工艺,以一次浸提后剩余的60 wt %~40wt%药材按投粮量的10 wt %分别配入清香大曲大楂酒醅共同进行蒸馏得三种大楂基础酒,分别贮存陈酿;第三步:混蒸混烧工艺,以40wt%~60 wt %的二次浸提后的药材按投粮量的10 wt %分别配入经蒸馏后的糟醅拌入大曲再入缸进行二楂发酵得二楂酒醅,进行蒸馏生产二楂基础酒,分别贮存陈酿;最后由药材蒸馏液与两次陈酿的基础酒经过勾调成为酒精度39~53%vol的成品甘草酒。
2.根据权利要求1所述的甘草酒的生产工艺方法,其特征是:所述优质高度陈酿清香大曲酒是酒精度不低于60%vol、陈酿时间不低于10年的清香型大曲酒。
3.根据权利要求1所述的甘草酒的生产工艺方法,其特征是:所述浸提蒸馏工艺中一次浸提和二次浸提,各药材与高度陈酿清香大曲酒的重量比均为1:5。
4.根据权利要求1所述的甘草酒的生产工艺方法,其特征是:所述浸提蒸馏工艺中一次浸提和二次浸提的药材浸泡时间均为20天。
5.根据权利要求1所述的甘草酒的生产工艺方法,其特征是:所述发酵周期:不低于28天。
