随着高原地区旅游业的不断发展,抗氧化、耐疲劳系列产品的需求也不断升高。牦牛乳作为特色稀有资源,其抗氧化耐疲劳的功能越来越受到广大消费者的关注,为进一步迎合市场,挖掘牦牛乳潜在价值,本发明公开了一款适用于高原人群的牦牛乳多肽配方奶粉。

本发明的目的在于提供一种适用于高原人群的牦牛乳多肽配方奶粉及制备方法,以解决现有功能性乳制品品种单一的问题。
本发明的另一目的在于提供一种适用于高原人群的牦牛乳多肽配方奶粉的制备方法,能够有效的增加产品出品率,解决产品冲调不佳,溶解性差,粉质流动性差等问题。
本发明所采用的技术方案如下:
一种适用于高原人群的牦牛乳多肽配方奶粉,由如下各组份及其重量份制成:全脂奶粉40-60份、脱盐乳清粉15-25份、麦芽糊精9-15份、葡萄糖粉4-6份、低聚果糖4-6份、全脂牦牛奶粉3-5份、菊粉2-4份、大豆多肽粉1-5份、玉米低聚肽粉1-3份、沙棘粉1-5份、复配维生素0.1-0.3份,复配矿物质0.1-0.4份,牛磺酸0.1-0.4份、L-肉碱0.1-0.2份、复配益生菌0.1-0.4份。

所述复配矿物质是由碳酸钙、硫酸亚铁、硫酸锌、亚硒酸钠按照GB 14880标准混配而成。
一种适用于高原人群的牦牛乳多肽配方奶粉的制备方法,具体步骤如下:
A、计量投料
将全脂奶粉、脱盐乳清粉、麦芽糊精、葡萄糖粉、全脂牦牛奶粉、低聚果糖、菊粉通过密相输送到指定的计量粉仓后,通过密相输送投料进高速剪切罐,进行剪切循环混料;
B、营养素添加
将各营养素按照顺序依次加入罐中,并按顺序打入剪切罐进行混料,具体如下:
罐1:复配维生素;罐2:牛磺酸、L-肉碱;罐3:复配矿物质;
营养素投料溶解次序:罐3→罐1→罐2;
混料进料次序:罐1→罐2→罐3;
溶解水温:35~45°C;
搅拌时间:复配维生素5~10min,牛磺酸、L-肉碱5~10min,复配矿物质25~30min;
C、高速剪切混料
混料时先将热水在高速剪切罐与混料罐之间进行循环,再将各原辅料加入到高速剪切罐进行溶解;混料温度:50℃~60℃;混料时间:35~60min;
D、均质:定容后的物料进行均质,均质压力:20~25MPa;均质温度:55~65℃,均质后物料冷却至15℃以下;
E、杀菌浓缩
料液通过预热器和闪蒸进行预热,预热器预热温度20~35℃,闪蒸出口1温度50~68℃,出口2温度60~75℃,预热后的料液经洁净蒸汽直接喷射杀菌,杀菌温度95~115℃,杀菌保温时间15秒;
F、喷雾干燥
料液通过双联过滤器后进入高压泵,再经高压泵输送至干燥塔顶部进行雾化;
外界风经中、高效过滤器过滤后,经过翅片式加热器加热至 140~200°C ,通过空气分布器进入干燥塔,对料液雾滴进行干燥。
进风温度140~200℃,排风温度70~90℃;
G、振动流化床冷却:外界风经初、中、高效过滤器过滤除湿后,进入振动流化床对乳粉进行冷却;乳粉冷却后通过振动筛,再通过振动输粉器到粉仓暂存备用;
H、干混:将复配益生菌、大豆多肽粉、玉米低聚肽粉、沙棘粉和步骤G中所得粉料进行干混,混料送气压力0.2-0.5MPa,混合时间为120-300秒。
本发明依据高原地区人群的营养特点,以高碳水、低脂肪以及适量优质蛋白为配方设计导向,依据文献资料和国家标准法律法规选取适宜的原辅料,设计配方。添加的各原料依据高原地区特色农产品的营养特点,与营养强化剂及益生菌相结合,更加地适应高原人群,增强其抗氧化、抗疲劳能力,同时有效的带动了高原地区特色农产品经济的发展。
本发明配方中单糖占总糖的25-35%,双糖占总糖的65-75%,多糖占总糖的2.5-3.5%,功能性低聚糖占总糖的1-2.5%。能够及时补充葡萄糖,使糖类物质梯度吸收,防止出现乳糖不耐症以及缺氧所产生的的头痛头晕等症状。配方中蛋白质为优质蛋白,蛋白主要组成为酪蛋白和乳清蛋白,其中酪蛋白占总蛋白35-45%,乳清蛋白占总蛋白55-65%,乳清蛋白比例高,更利于人体对蛋白质的消化和吸收。
本发明的优点具体如下:
(1)本发明添加的大豆多肽和玉米低聚肽,含有多种氨基酸,能够提高身体免疫力、增强机体抗氧化、抗疲劳能力。
(2)本发明添加的全脂牦牛乳粉、沙棘粉,具有活性蛋白、共轭亚油酸、沙棘黄酮等多种功能性物质,能够在为人体补充充足蛋白质的同时,还能够提升人体自身抗氧化能力。
(3)本发明添加的复配维生素与复配矿物质相互配伍,能够清除机体自由基,减少肌肉收缩导致的氧化损伤,有效地减少高原反应发生率,提高高原劳动能力。
(4)本发明添加的牛磺酸与L-肉碱相互配伍,能够有效的促进机体运动后肌肉的恢复。
(5)本发明添加的牦牛乳配方奶粉基粉与益生菌相结合,增强产品的免疫力功效,且多肽类物质提供的矿物质与复配维生素能有效的促进肠道益生菌的生长,二者协同作用,相互促进。
(6)本发明采用七种菌种,互利共生,能够促进人体矿物质、维生素等营养素的吸收,并能有效地防止与缓解乳糖不耐症,减轻高原反应应激症。

实施例1-3中所述复配益生菌由植物乳杆菌 N13,乳酸片球菌 CCFM7902,鼠李糖乳杆菌,嗜酸乳杆菌,瑞士乳杆菌,长双歧杆菌 BL21、两歧双歧杆菌,乳双歧杆菌组成,采用江苏微康生物科技有限公司提供的市售产品。
本发明中所添加的维生素和矿物质相互协同,安全配伍,能够明显改善机体对低氧环境的适应能力,增强呼吸功能调节能量代谢,修复受损细胞,提高机体运动耐受力。添加的大豆多肽粉和玉米低聚肽粉相互搭配,大豆多肽中含有的色氨酸、苯丙氨酸、苏氨酸、亮氨酸、酪氨酸和玉米低聚肽中含有的缬氨酸、丙氨酸等,脯氨酸、谷氨酰胺科学配伍,协同增效,可以使人体血液中酮体的含量增加,促进机体对酮体的利用,对机体糖代谢起到了调节作用,延缓了运动过程中疲劳的产生。所添加的大豆多肽、玉米低聚肽与牛磺酸、L-肉碱相结合,能够通过增加蛋白质合成的速度和降低蛋白质在静息状态下的降解速度,清除自由基,减少乳酸堆积,增加糖原储备,有助于加速运动后肌肉的恢复。
一种适用于高原人群的牦牛乳多肽配方奶粉的制备方法,具体步骤如下:
A、计量投料
将全脂牦牛奶粉、全脂奶粉、脱盐乳清粉、葡萄糖粉、低聚果糖、沙棘粉、菊粉通过密相输送到指定的计量粉仓后,通过密相输送投料进高速剪切罐,进行剪切循环混料;
B、营养素添加
将各营养素按照顺序依次加入罐中,并按顺序打入剪切罐进行混料,具体如下:
罐1:复配维生素;罐2:牛磺酸、L-肉碱;罐3:复配矿物质。
营养素投料溶解次序:罐3→罐1→罐2;
混料进料次序:罐1→罐2→罐3;
溶解水温:35~45°C;
搅拌时间:复配维生素5~10min,牛磺酸、L-肉碱5~10min,复配矿物质25~30min。
C、高速剪切混料
混料时先将热水在高速剪切罐与混料罐之间进行循环,再将各原辅料加入到高速剪切罐进行溶解;混料温度:50℃~60℃;混料时间:35~60min;
D、均质:定容后的物料进行均质,均质压力:20~25MPa;均质温度:55~65℃,均质后物料冷却至15℃以下。
E、杀菌浓缩
料液通过预热器和闪蒸进行预热,预热器预热温度20~35℃,闪蒸出口1温度50~68℃,出口2温度60~75℃,预热后的料液经洁净蒸汽直接喷射杀菌,杀菌温度95~115℃,杀菌保温时间15秒。
F、喷雾干燥
料液通过双联过滤器后进入高压泵,再经高压泵输送至干燥塔顶部进行雾化。
外界风经中、高效过滤器过滤后,经过翅片式加热器加热至 140~200°C ,通过空气分布器进入干燥塔,对料液雾滴进行干燥。
进风温度140~200℃,排风温度70~90℃。
G、振动流化床冷却:外界风经初、中、高效过滤器过滤除湿后,进入振动流化床对乳粉进行冷却;乳粉冷却后通过振动筛,再通过振动输粉器到粉仓暂存备用;
H、干混:将复配益生菌、大豆多肽粉、玉米低聚肽粉、沙棘粉和步骤G所得粉料混合,混料送气压力0.2-0.5MPa,混合时间为120-300秒。
I、金检:将配方粉通过金检仪进行金属异物去除,防止金属异物进入产品。
J、自动定量包装:物料通过自动定量包装设备进行充氮包装(听装),罐装产品包装要求:残氧量≤3.0%,真空度-0.01~0MPa,净含量满足要求,密封性测试合格。
本发明动物性试验:
40只健康雄性小鼠,随机分为两组,每组20只,空白对照组灌胃5ml生理盐水,另一组每天灌胃5ml配方奶粉奶液1次,连续灌胃30d,灌胃期间各组小鼠喂食与饮水量一致。最后一次灌胃结束1h后,各组随机选取10只小鼠,开展负重游泳试验,记录小鼠自入水开始游泳至沉没超过10s的时间,即为动物负重游泳时间。
运动耐力可反映机体抗运动性疲劳的程度,而负重游泳是常见评估身体抗疲劳能力的运动实验模型,因此考察配方奶粉对小鼠的负重游泳时间长短的影响,结果如下表。
配方奶粉对小鼠运动时间的影响
从上表可知,与空白对照组相比,阳性对照组小鼠的力竭游泳时间延长率为15.2%,由此可知抗氧化抗疲劳牦牛乳多肽配方奶粉有助于延长运动时间,具有抗疲劳的功效。
Claims (5)
1.一种适用于高原人群的牦牛乳多肽配方奶粉,其特征在于,由如下各组分及其重量份制成:全脂奶粉40-60份、脱盐乳清粉15-25份、麦芽糊精9-15份、葡萄糖粉4-6份、低聚果糖4-6份、全脂牦牛奶粉3-5份、菊粉2-4份、大豆多肽粉1-5份、玉米低聚肽粉1-3份、沙棘粉1-5份、复配维生素0.1-0.3份,复配矿物质0.1-0.4份,牛磺酸0.1-0.4份、L-肉碱0.1-0.2份、复配益生菌0.1-0.4份。
2.根据权利要求1所述的一种适用于高原人群的牦牛乳多肽配方奶粉,其特征在于,由如下各组分及其重量份制成:全脂奶粉50份、脱盐乳清粉20份、麦芽糊精12份、葡萄糖粉5份、低聚果糖5份、全脂牦牛奶粉4份、菊粉3份、大豆多肽粉5份、玉米低聚肽粉3份、沙棘粉5份、复配维生素0.3份,复配矿物质0.2份,牛磺酸0.3份、L-肉碱0.2份、复配益生菌0.1份。
3.根据权利要求1或2所述的一种适用于高原人群的牦牛乳多肽配方奶粉,其特征在于,所述复配维生素是由维生素A、维生素D、维生素E、维生素B6、维生素C和叶酸按照GB14880标准混配而成。
4.根据权利要求1或2所述的一种适用于高原人群的牦牛乳多肽配方奶粉,其特征在于,所述复配矿物质是由碳酸钙、硫酸亚铁、硫酸锌、亚硒酸钠按照GB 14880标准混配而成。
5.如权利要求1或2所述的一种适用于高原人群的牦牛乳多肽配方奶粉的制备方法,其特征在于,具体步骤如下:
A、计量投料
将全脂奶粉、脱盐乳清粉、麦芽糊精、葡萄糖粉、全脂牦牛奶粉、低聚果糖、菊粉通过密相输送到指定的计量粉仓后,通过密相输送投料进高速剪切罐,进行剪切循环混料;
B、营养素添加
将各营养素按照顺序依次加入罐中,并按顺序打入剪切罐进行混料,具体如下:
罐1:复配维生素;罐2:牛磺酸、L-肉碱;罐3:复配矿物质;
营养素投料溶解次序:罐3→罐1→罐2;

溶解水温:35~45°C;
搅拌时间:复配维生素5~10min,牛磺酸、L-肉碱5~10min,复配矿物质25~30min;
