Abstract
The invention belongs to the technical field of bone gelatin production, and particularly discloses a method for detecting the maturity of bone gelatin in an pickling process in bone gelatin production. The detection method comprises the steps of firstly extracting a bone element sample from an pickling process, and washing the bone element sample; then carrying out water gel extraction treatment on the bone element sample after water washing, and detecting the gel content of the gel-containing liquid obtained by the water gel extraction treatment; judging the maturity of the ossein according to the gel content detection result. The detection method provided by the invention can accurately judge the maturity of the ossein in the pickling process, and provides a reliable basis for obtaining the qualified ossein with uniform maturity.
Description
Technical Field
The invention belongs to the technical field of bone gelatin production, and particularly relates to a method for detecting the maturity of bone gelatin in an pickling process in bone gelatin production.
Background
The existing treatment method for the bone raw material for gelatin mainly comprises the procedures of crushing bones, degreasing, sorting, pickling, liming, neutralizing, washing and the like. Wherein the pickling process is a process of converting bone particles into desired ossein. The maturity of ossein during pickling is directly related to the yield and quality of gelatin.
At present, the end point of the maturation of the bone grains is judged by using traditional manual experience detection, namely eye observation and hand grasping, and is judged by hand feeling. The existing detection method is greatly influenced by environment and personal experience, often causes that bone mineral is ripe differently in the pickling stage, and leads to different periods of the ash dipping working procedure of the produced bone gelatin and great fluctuation of product quality. Therefore, detection of bone mineral maturity is critical to enterprise sales and market competition.
Based on the method, a scientific method for detecting the maturity of the ossein is developed, and the method has important significance for improving the yield and quality of gelatin.

Therefore, the ossein in the new acid tank is mature first, and can be detected only in general, and if the detection is qualified, the pickling ossein can flow into the next process, namely the liming process.

The detection method provided by the invention can accurately judge the maturity of the ossein in the pickling process, provides a reliable basis for obtaining the ossein with uniform maturity and qualified ossein, and the ossein which is detected to be qualified enters the liming process again. The method provided by the invention can be used for detecting the bone gelatin, so that the stability of the production period of the bone gelatin, the stability of the product quality and the stability of the yield can be ensured, and a powerful guarantee is provided for the stable production of enterprises.

extracting a bone element sample from an pickling process, and performing water washing treatment on the bone element sample;
carrying out water extraction treatment on the bone element sample after water washing, and detecting the gel content of the gel-containing liquid obtained by the water extraction treatment;
judging the maturity of the ossein according to the gel content detection result.

(1) Taking 1kg of representative ossein samples from a new acid tank in pickling production at multiple points;
(2) Putting 1kg of bone mineral sample into a plastic barrel, feeding tap water at 20-25 ℃ from the bottom of the plastic barrel by a water inlet hose, overflowing from the upper end of the barrel, controlling the water flow speed to be 0.5L/min, continuously rinsing for 4 hours, enabling the pH value of rinsing liquid in the barrel to be equivalent to that of tap water, enabling the difference value to be not more than 0.2, and prolonging the rinsing time until the pH value meets the pH requirement if the difference value is not more than 0.2; then standing for 1h;
(3) 200g of a representative bone mineral sample is taken from the bone mineral sample after water washing, the bone mineral sample is put into a beaker, 200ml of purified water with the temperature of 55 ℃ is then measured and put into the beaker, and then the purified water and the beaker are put into a water bath with the temperature of 55 ℃ together for heating treatment, so that gelatin in the bone mineral sample is extracted;
detecting the gelatin content of the liquid in the beaker by using a detector every 0.5h, wherein the total detection time is 4h, and marking the gelatin content of the liquid in the beaker as a in percentage by mass when the last point is detected.
If a is less than 2.0%, the ossein sample is a defective ossein, and pickling is also required.
If a is between 2.0 and 2.2 percent, the ossein sample is mature ossein, and the process can enter a liming process.
If a is greater than 2.2%, this indicates that the maturation of the ossein sample is too old, which can affect the yield and quality of gelatin.
Bone gelatin production was performed using samples of ossein with a less than 2.0%, a between 2.0-2.2% and a greater than 2.2%, respectively, with performance indices shown in table 1 below.

From the above, the detection method provided by the invention can accurately judge the maturity of the ossein in the pickling process, provides a reliable basis for obtaining the ossein with uniform maturity and qualified ossein, and can effectively reduce bone consumption, improve the quality of products, and provide powerful guarantee for the stability of production cycle, the stability of product quality and the stability of yield after the qualified ossein is detected to enter the ash dipping process.

judging the maturity of the ossein according to the gel content detection result.
