Disclosure of Invention
In view of the above, the present invention aims to provide a meal replacement food and a preparation method thereof, wherein the meal replacement food provided by the present invention can stimulate intestinal peristalsis, promote intestinal emptying, and improve the definition of endoscopy.
The invention provides a meal replacement food which comprises the following components in parts by weight:
1-80 parts of edible glucose;
1-80 parts of maltodextrin;
1-50 parts of fruit powder;
0.1-5 parts of edible citric acid;
0.1-2 parts of DL malic acid;
0.05-3 parts of glucomannan;
0.1-2 parts of sodium alginate;
0.01-1.5 parts of edible salt;
0.01-0.75 parts of potassium chloride;
0.01-0.5 parts of stevioside;
0.5-20 parts of water.
Preferably, the fruit powder is selected from one or more of lemon powder, sweet orange powder, pineapple powder and strawberry powder.
Preferably, the water is purified water.
The invention provides a preparation method of the meal replacement food in the technical scheme, which comprises the following steps:
mixing and granulating edible glucose, maltodextrin, fruit powder, edible citric acid, DL malic acid, glucomannan, sodium alginate, edible salt, potassium chloride, stevioside and water to obtain the meal replacement food.
Preferably, the granulation method is boiling granulation.
Preferably, the preparation method of the meal replacement food specifically comprises the following steps:
mixing and sieving edible citric acid, glucomannan, DL malic acid, edible salt, potassium chloride, stevioside and part of maltodextrin to obtain a sieved material;
mixing the sieved material with the rest maltodextrin, edible glucose and fruit powder at a high speed to obtain a mixture;
spraying the mixture into a binding agent under a heating state for boiling granulation to obtain a meal replacement food;
the adhesive comprises: sodium alginate and water.
Preferably, the method of mixing and screening is an equivalent incremental method.
Preferably, the rotation speed of the high-speed mixing is 1800-2200 rpm.
Preferably, the air inlet temperature of the boiling granulation is 75-85 ℃; the exhaust temperature is 45-55 ℃.
Preferably, the water content in the meal replacement food is less than or equal to 2.5 wt%.
The invention provides a meal replacement food for endoscopy, intestinal tract operation and other visceral organ operation in abdominal cavity, wherein before the endoscopy, an examiner eats the preparation one day before eating liquid diet, the preparation can stimulate intestinal peristalsis, promote intestinal evacuation, reduce the use amount of polyethylene glycol by the examiner by at least half, effectively increase the probability of one-time passing examination of the examiner, reduce the pain degree of the examiner, greatly improve the definition of endoscopy, and significantly improve the safety of the intestinal tract operation and other visceral organ operation in abdominal cavity. Meanwhile, the intestinal tract cleaning meal replacement preparation in the prior art is liquid, has a complex preparation process, is not easy to carry and has a short shelf life; the meal replacement food provided by the invention is a granular preparation, has the advantages of simple preparation process, quick dissolution, convenience for storage, long shelf life, convenience for carrying and better effect.

In the invention, the weight part of the edible glucose is preferably 1-60 parts, more preferably 20-50 parts, more preferably 30-40 parts, and most preferably 35 parts.
In the present invention, the maltodextrin is preferably 1 to 50 parts by weight, more preferably 10 to 40 parts by weight, more preferably 20 to 30 parts by weight, and most preferably 25 parts by weight.
In the invention, the fruit powder is preferably selected from one or more of lemon powder, sweet orange powder, pineapple powder and strawberry powder.
In the invention, the weight part of the fruit powder is preferably 1-30 parts, more preferably 10-20 parts, and most preferably 15 parts.
In the invention, the weight part of the edible citric acid is preferably 0.1-3 parts, more preferably 0.1-0.5 part, more preferably 0.2-0.4 part, and most preferably 0.3 part.
In the invention, the weight part of the DL malic acid is preferably 0.1-1 part, and more preferably 0.1-0.2 part.
In the present invention, the weight part of the glucomannan is preferably 0.05 to 1.5 parts, more preferably 0.05 to 0.3 parts, and most preferably 0.1 to 0.2 parts.
In the invention, the weight part of the sodium alginate is preferably 0.1-1 part, more preferably 0.1-0.6 part, more preferably 0.2-0.5 part, and most preferably 0.3-0.4 part.
In the invention, the weight part of the edible salt is preferably 0.01-1 part, more preferably 0.03-0.2 part, more preferably 0.05-0.15 part, more preferably 0.08-0.12 part, and most preferably 0.1 part.
In the present invention, the weight part of the potassium chloride is preferably 0.01 to 0.5 part, more preferably 0.02 to 0.1 part, more preferably 0.03 to 0.08 part, more preferably 0.04 to 0.06 part, and most preferably 0.05 part.
In the invention, the weight part of the stevioside is preferably 0.01-0.1 part, more preferably 0.02-0.08 part, more preferably 0.03-0.06 part, and most preferably 0.04-0.05 part.
In the present invention, the water is preferably purified water.

mixing the sieved material with the rest maltodextrin, edible glucose and fruit powder at a high speed to obtain a mixture;
spraying the mixture into a binding agent under a heating state for boiling granulation to obtain a meal replacement food;
the adhesive comprises: sodium alginate and water.
In the present invention, the mass of the part of maltodextrin is the same as the total mass of edible citric acid, glucomannan, DL-malic acid, edible salt, potassium chloride and stevioside.
In the present invention, the mixing and screening method is preferably an equivalent incremental method.
According to the invention, edible citric acid, glucomannan, edible salt, potassium chloride and stevioside are mixed and sieved by an equivalent incremental method, so that small-dose materials are fully and uniformly mixed, and edible glucose, maltodextrin and fruit powder are mixed with the fully and uniformly mixed small-dose materials by using a high-speed mixer, so that the uniformity of the materials is ensured. The invention adopts a low-residue diet formula, provides a certain amount of energy for inspectors before endoscopy or patients with intestinal tract and viscera operators and enhances the cleanness of the intestinal tract, and after the inspectors eat liquid diet one day before endoscopy or the next day after operation, the preparation can stimulate the intestinal peristalsis, promote the emptying of the intestinal tract, reduce the usage amount of polyethylene glycol used by the inspectors by at least half, effectively increase the one-time passing probability of the inspectors, reduce the pain degree of the inspectors, greatly improve the definition of endoscopy, and significantly improve the safety of intestinal tract operation and other visceral organ operations in the abdominal cavity.
In the invention, the mixing and sieving preferably adopts a stainless steel sieve; the mesh number of the mixing and sieving is preferably 55-65 meshes, more preferably 58-62 meshes, and most preferably 60 meshes; the number of passes of the mixing and sieving is preferably 2 to 4, and more preferably 3.
In the present invention, the high-speed mixing is preferably carried out in a high-speed mixer; the high-speed mixing rotation speed is preferably 1800-2200 rpm, more preferably 1900-2100 rpm, and most preferably 2000 rpm; the time for the high speed mixing is preferably 2 to 4 minutes, more preferably 2.5 to 3.5 minutes, and most preferably 3 minutes.
In the invention, the adhesive is preferably an aqueous sodium alginate solution, and the mass concentration of the aqueous sodium alginate solution is preferably 6-7%, more preferably 6.1-6.5%, more preferably 6.2-6.4%, and most preferably 6.25%.
In the invention, the air inlet temperature in the boiling granulation process is preferably 75-85 ℃, more preferably 78-82 ℃, and most preferably 78 ℃; the air exhaust temperature is preferably 45-55 ℃, more preferably 48-52 ℃ and most preferably 50 ℃.
In the invention, the slurry spraying (binder) time in the boiling granulation process is preferably 13-17 minutes, more preferably 14-16 minutes, and most preferably 15 minutes.
In the invention, the drying time in the boiling granulation process is preferably 55-65 minutes, more preferably 58-62 minutes, and most preferably 60 minutes.
In the invention, the moisture after drying in the boiling granulation process, namely the moisture in the prepared meal replacement food, is preferably less than or equal to 2.5 wt%.
The meal replacement food for endoscopy, intestinal tract operation and other visceral organ operation provided by the invention is prepared by four procedures of mixing, boiling granulation, drying and packaging (the process flow is shown in figure 1), and the defects that the intestinal tract cleaning meal replacement preparation in the prior art is liquid, the process is complex, the carrying is not convenient and the quality guarantee period is short are overcome. The product provided by the invention is a granular preparation, has simple preparation process, quick dissolution and fruity flavor, can provide energy and reduce slag, effectively reduces the using amount of a cathartic during diarrhea and the pain degree of a user, is convenient to store, has long shelf life, is convenient to carry and has better effect.
The starting materials used in the following examples of the present invention are all commercially available products.
Example 1
0.28kg of edible citric acid, 0.65kg of edible salt and 0.25kg of potassium chloride are ground into fine powder with the particle size of below 60 meshes, then the fine powder, 0.19kg of glucomannan and 0.05kg of stevioside are fully and uniformly mixed, 1.42kg of maltodextrin with the same amount is added and uniformly mixed, then the mixture is sieved for three times through a 60-mesh stainless steel sieve, and the sieved material, 41.58kg of the remaining maltodextrin, 40kg of edible glucose and 17kg of pineapple powder are mixed in a high-speed mixer for three minutes at the rotating speed of 2000 rpm, so that the uniformly mixed material is obtained.
0.5kg of sodium alginate is mixed with 8kg of water to swell, and the adhesive for guniting is prepared.
And adding the uniformly mixed materials into a boiling granulator for boiling granulation, setting the air inlet temperature to be 78 ℃, the air outlet temperature to be 50 ℃, the slurry (adhesive) spraying time to be 15 minutes, drying for 60 minutes after slurry spraying, and discharging, wherein the water content is controlled to be less than or equal to 2.5%, so as to obtain the granules.
And filling the dried particles into a package of 26 g/bag by using a particle packaging machine to obtain the meal replacement food.
Example 2

Comparative example 1
The method of the prior art is adopted: before the endoscopy examination, liquid diet is adopted three times a day, 2L of compound polyethylene glycol electrolyte powder (III) is adopted for catharsis once at 8 o' clock, and water is not fed after catharsis; in the next morning, 2L compound polyethylene glycol electrolyte powder (III) is used for catharsis once (each bag contains 400064.000 g polyethylene glycol, 5.700g anhydrous sodium sulfate, 1.460g sodium chloride, 0.750g potassium chloride, and 1.680g sodium bicarbonate, and is dissolved in warm boiled water); endoscopy was performed in the afternoon.
Comparative example 2
Adopting a food replacement can for intestinal endoscopy (comprising 79.3 parts of water, 1 part of xanthan gum, 3 parts of konjac powder, 3 parts of whey protein, 0.1 part of citric acid, a proper amount of edible essence, 0.7 part of sodium chloride, 0.1 part of magnesium sulfate, 12.5 parts of glucose and 0.3 part of potassium chloride in parts by weight) with a commercial product number of 2156735 as a food replacement on the day before endoscopy; the preparation is administered in four times (200 ml each time) and 800ml each time; 2L of compound polyethylene glycol electrolyte powder (III) is used for drainage once at 8 o' clock, and water is not taken after drainage; in the morning, 1L of compound polyethylene glycol electrolyte powder (III) is used for catharsis once (each bag contains 400064.000 g of polyethylene glycol, 5.700g of anhydrous sodium sulfate, 1.460g of sodium chloride, 0.750g of potassium chloride and 1.680g of sodium bicarbonate, and is dissolved in 1L of warm boiled water); endoscopy was performed in the afternoon.
Comparative example 3
Adopting a commercial food substitute (comprising 84 parts of maltodextrin, 5 parts of collagen, 10 parts of soybean protein and 1 part of premix (vitamin B1, vitamin B2, vitamin B6, vitamin B12, vitamin C, folic acid, nicotinic acid, calcium pantothenate, taurine, zinc sulfate, calcium gluconate, tricalcium phosphate and ethylenediaminetetraacetic acid sodium iron oxide) with a commercial product number of 3854177 for intestinal endoscopy as a meal substitute on the day before endoscopy; 200g per day, and 50g for four times; 2L of compound polyethylene glycol electrolyte powder (III) is used for drainage once at 8 o' clock, and water is not taken after drainage; in the morning, 1L of compound polyethylene glycol electrolyte powder (III) is used for catharsis once (each bag contains 400064.000 g of polyethylene glycol, 5.700g of anhydrous sodium sulfate, 1.460g of sodium chloride, 0.750g of potassium chloride and 1.680g of sodium bicarbonate, and is dissolved in 1L of warm boiled water); endoscopy was performed in the afternoon.
Performance detection
After the meal replacement food prepared in the embodiment of the invention and the meal replacement food in the comparative example are eaten, the intestinal endoscopy clear degree and the endoscopy sufferings of inspectors are detected, and the specific method comprises the following steps:
756 cases of outpatients, inpatients and health examiners such as abdominal pain, diarrhea, constipation, hematochezia, abdominal mass and the like which are subjected to clinic visit are selected to be randomly divided into six groups according to time, sex and age, and the six groups are divided into three groups of a control group and three groups of an implementation group; implementation group 126 persons/group, control group 126 persons/group; the implementation group adopts the food substitute prepared by the embodiment of the invention as the food substitute before the intestinal endoscopy, and the control group adopts the traditional method and the commercial food substitute method. Each person in the group uses the meal replacement food prepared by the embodiment of the invention every day to replace meal every day before endoscopy, 8 bags are taken every day, 2 bags are taken every time, each bag is boiled by warm boiled water with the temperature of 70 ℃, then the meal replacement food is eaten after being warmed, and the meal replacement food is eaten up before 6 o' clock at night; the first cathartic compound polyethylene glycol electrolyte powder (III) is used for 1L catharsis once at 8 o' clock; no water is taken after catharsis; in the morning, 1L of compound polyethylene glycol electrolyte powder (III) is used for catharsis once (each bag contains 400064.000 g of polyethylene glycol, 5.700g of anhydrous sodium sulfate, 1.460g of sodium chloride, 0.750g of potassium chloride and 1.680g of sodium bicarbonate, and is dissolved in 1L of warm boiled water); endoscopy was performed in the afternoon. The control group was prepared by the method of comparative examples 1 to 3.
After the second catharsis, scoring the stool condition according to a Boston evaluation system and scoring a Boston intestinal tract preparation scoring table to score the intestinal tract examination definition, and counting abdominal distension, nausea, vomiting, dizziness and hypoglycemia conditions of the examiner in the endoscopic examination process; the scoring criteria for visual assessment of fecal traits during bowel preparation are shown in figure 2; evaluation of visual acuity scoring criteria for bowel preparation colonoscopy is shown in fig. 3; the results of the measurements are shown in tables 1 to 3.
