Abstract
本发明提供一种改善营养代谢的速溶代餐粉配方及其制作方法。所述速溶代餐粉配方通过选用华健1号微胚乳玉米品种的胚芽玉米及福紫糯3号品种的黑米为主要原料,配合大米小分子蛋白肽及精选其他营养价值独特的杂粮、蔬菜水果及大豆坚果与动物来源的营养原料三个主要方面的营养原料比例为2:1:1,三大物质供能比例:碳水化合物为50%‑65%,脂肪供能为25%‑35%%,蛋白质供能为15%‑20%,并选择低聚异麦芽糖、赤藓糖醇及甜叶菊醇组成的复合甜味剂,能够有效改善代餐粉的营养价值及口感,全配方符合现代营养学要求,达到科学配方、营养全面均衡,且能够辅助调节血压、降低胆固醇、改善糖脂代谢。

本发明涉及食品技术领域,尤其涉及一种改善营养代谢的速溶代餐粉配方及其制作方法。
背景技术
目前代餐粉虽然品种多,但大多数是由各种普通食材直接混合,既未按照科学方法对食材的品种进行优化选择,也没有按现代营养学原理科学配方;工艺粗糙简单,直接将原材料打粉,溶解度差,口感差;或使用蔗糖或单糖作为甜味剂,不符合现代营养要求,且功能化效能不突出。
发明内容
本发明的目的在于提供一种改善营养代谢的速溶代餐粉配方及其制作方法,所述代餐粉具有营养价值高、口感好、食用方便的优点,且能够辅助调节血压、降低胆固醇及改善糖脂代谢。
为实现上述目的,本发明提供一种改善营养代谢的速溶代餐粉配方,按重量百分比计,包括:胚芽玉米10%~50%、黑米1%~10%、黑色小麦1%~5%、乳制品10%~20%、大米小分子蛋白肽5%~20%、低聚异麦芽糖0.1%~0.5%、赤藓糖醇0.01%~0.05%及甜叶菊醇0.05%~0.1%;
其中,胚芽玉米的品种为:华健1号微胚乳玉米;
可选地,所述黑米的品种为:福紫糯3号;所述黑色小麦的品种为:兰黑粒92.1。

本发明还提供一种改善营养代谢的速溶代餐粉,包括如下步骤:
步骤S1、原料质检:检查代餐粉原料的安全情况,并留取样品保存以备溯源;
步骤S2、干燥:获取代餐粉的各个植物原料,将各植物原料分别烘干,所述植物原料包括:胚芽玉米、黑米及黑色小麦,其中,胚芽玉米的品种为:华健1号微胚乳玉米;
步骤S3、磨粉:将烘干后的各个植物原料混合,使用超微粉碎机磨粉,粉体过200~500目筛,得到植物原料的原始粉;
步骤S4、制浆提取:将原始粉与蒸馏纯净水按照溶积比1:5~10的比例混合,采用封闭式多功能提取罐提取制浆;
步骤S5、制粉:使得干燥喷雾机对制浆得到的产物进行干燥,得到植物原料的目标粉;
步骤S6、添加营养素:获取乳制品、大米小分子多肽蛋白及复合甜味剂,所述乳制品、大米小分子蛋白肽及复合甜味剂均为粉状,将所述乳制品、大米小分子蛋白肽及复合甜味剂与目标粉于气动混匀机充分混合,所述复合甜味剂包括低聚异麦芽糖、赤藓糖醇及甜叶菊醇;
步骤S7、产品质检:对步骤S6得到的产品进行质检,保证产品外观色泽均一,完全溶于水,无杂质,营养成分检测符合预设要求,且符合国家食品标准;
步骤S8、成品包装:按预设重量对步骤S6得到的产品进行真空包装,得到袋装的速溶代餐粉;
所述速溶代餐粉按重量百分比计,包括:胚芽玉米10%~50%、黑米1%~10%、黑色小麦1%~5%、乳制品10%~20%、大米小分子蛋白肽5%~20%、低聚异麦芽糖0.1%~0.5%、赤藓糖醇0.01%~0.05%及甜叶菊醇0.05%~0.1%。

本发明提供一种改善营养代谢的速溶代餐粉配方,按重量百分比计,包括:胚芽玉米10%~50%、黑米1%~10%、黑色小麦1%~5%、乳制品10%~20%、大米小分子蛋白肽5%~20%、低聚异麦芽糖0.1%~0.5%、赤藓糖醇0.01%~0.05%及甜叶菊醇0.05%~0.1%;

具体地,本发明的选用的胚芽玉米的品种为:华健1号微胚乳玉米,该胚芽玉米是在袁隆平院士主持下,由袁氏种业培育的一款新的胚芽玉米,在新疆有机农场种植,该胚芽玉米相比于传统的胚芽玉米,具有高蛋白(33.9%)、高脂肪(27.2%)、高膳食纤维(27.8%)、低碳水化合物(20.3%)及酚类物质含量高(864mg/100g)的特点,是一款营养价值高的新型胚芽玉米。
经过实验发现,本发明的选用的胚芽玉米具有较强的抗氧化、调血脂、降血糖、改善营养代谢等功能,且对2型实验糖尿病模型有较强的调血糖作用,实验过程如下:
如图1所示,首先,将昆明雄性小鼠分为两组,一组为正常组,以AIN93饲料正常饲养,另一组为造模组,以D12492高脂高糖饲料饲养,正常组和造模组分别饲养6周,且造模组连续3天注射链脲佐菌素(Streptozocin,STX);饲养六周后,造模组中的昆明雄性小鼠出现血糖值大于11.1mmol/L的糖尿病小鼠;接着,将糖尿病小鼠分为三组,一组为模型组,以AIN93饲料正常饲养,另一组为低剂量组,以含有25%的本发明选用的胚芽玉米饲养,还有一组为高剂量组,以含有50%的本发明选用的胚芽玉米饲养,而正常组中小鼠继续以以AIN93饲料正常饲养;饲养7周以后,观察小鼠的一般生理状况变化、血糖和相关激素变化以及血脂和相关激素变化,通过分析上述变化,确定本发明选用的胚芽玉米的改善糖脂代谢作用;
经过上述实验,如图2至图7所示的小鼠体重、饮水量、血糖及血脂的相关数据变化可以发现,本发明选用的胚芽玉米可逆转2型糖尿病小鼠的体重下降,减轻小鼠多饮、多尿、精神欠佳等症状,且50%饲料替代组效果更好,从第4周开始,本发明选用的胚芽玉米替代组空腹血糖值以及7周后的餐后血糖和血清糖化蛋白GSP水显著低于模型组,表明增加本发明选用的胚芽玉米的摄入能够改善糖尿病小鼠血糖水平,且随着摄入量的增加改善效果进一步增强,本发明选用的胚芽玉米可降低糖尿病小鼠血清总胆固醇(TG)、总胆汁酸(TBA)、低密度脂蛋白胆固醇(LDL-c)水平,提高高密度脂蛋白胆固醇(HDL-c)水平,具有改善血脂水平作用,从而确认本发明选用的胚芽玉米具有改善糖脂代谢的作用。
进一步地,本发明选用的袁氏黑米的品种为:福紫糯3号品种(国家支撑计划成果(2013BAD01B05)是在袁隆平院士主持下,由袁氏种业培育的新型黑米,在福建武夷山区种植。福紫糯3号不但营养丰富,具有降脂调节糖脂代谢、抗氧化等多重功效。根据李时珍在《本草纲目》中记载:黑米能健胃、提精神、止肝火、增益人体的各种功能、滋阴补肾、明目活血、健脾暖肝、防老抗衰。
本发明选用的黑色小麦的品种为:“兰黑粒92.1”:在东北有机农场种植。蛋白质含量17.58%,钙、铁、锌、硒、碘等矿物质元素普遍高出普通小麦,8种必需氨基酸组成中苏氨酸(0.46mg/l00g小麦)、苯丙氨酸(0.73mg/l00g小麦)、赖氨酸(0.43mg/1009小麦)、谷氨酸(6.04mg/l00g小麦)、亮氨酸(1.23mg/l00g小麦)等含量丰富,适合人体需要,而营养价值高,营养结构合理,保健作用大。
此外,本发明中还选用黑豆、黑芝麻、粳米、紫米、燕麦、薏米、山药、芡实、莲肉、赤小豆、茯苓、枸杞、桑葚、松子、甜杏仁及松茸作为代餐粉中营养成分的补充,该些原料分别具有以下作用及特点:
黑豆:在我国有悠久的药食同源史,历代中医古籍对黑豆多记载黑豆补肾填髓、壮骨明目、解毒等诸多功效具有抗氧化、降血压、抗肿瘤、预防癌症、抗肥胖作用拇、降低血脂、降低代谢紊乱、减少心血管并发症、抗炎症等功效。
黑芝麻:是我国广泛种植的油料作物、调味品,同时也是一味具有补益精血、润肠通便作用的中药,主要用于精血不足引起的须发早白、头晕眼花,血虚津亏引起的肠燥便秘。根据《神农本草经》记载黑芝麻具有“主伤中虚羸,补五内,益气力,长肌肉,填脑髓”的作用,根据《别录》记载黑芝麻具有“坚筋骨,疗金创,止痛及伤寒温疟,大吐后虚热羸困,明耳目”的作用,而现代研究表明,黑芝麻具有强抗氧化性能、调节脂质代谢、降低胆固醇、保护肝脏、降低血压、抗癌等功能。除了药用,黑芝麻也是营养丰富的食物、油料作物、调味品,可根据不同需要,对黑芝麻中的油、木脂素、芝黑素、芝麻蛋白等进行综合利用。
粳米:根据《名医别录》的记载:粳米,甘、平、无毒、归脾、胃经,主益气,止烦,止泄”,《备急千金要方·食治》的记载:“粳米,主心烦,断下利,平胃气,长肌肉,温中”,孟诜在《食疗本草》的记载:“粳米,平,主益气,止烦泄”,《滇南本草》的记载:其治一切诸虚百损,补中益气,强筋壮骨,生津,明目,长智,可知粳米的作用众多,主要归纳为:补中益气、止烦渴、止下利。
紫米:根据《本草纲目》记载:紫米有滋阴补肾、健脾暖肝、明目活血等作用。紫米中含有丰富蛋白质、脂肪、赖氨酸、核黄素、硫安素、叶酸等多种维生素,以及铁、锌、钙、磷等人体所需微量元素,膳食纤维含量十分丰富。是煮食、加工副食品、食疗的佳品。
燕麦:又被称为莜麦、雀麦.它不是一种普普通通的谷物.燕麦的营养价值优于小麦和大麦.它不仅含有碳水化台物.还富台蛋白质和脂肪.蛋白质中氧基酸含量均衡.吸收率高.脂肪中多为亚油酸等不饱和脂肪酸.值得提的还有可溶性膳食纤维.能有效降低胆固醇,改善机体代谢。燕麦是一种低糖、高蛋白、高脂肪、高能量的食品,人体必需脂肪酸的含量是所有粮食中最多的。中国裸燕麦含粗蛋白质达15.6%,脂肪8.5%,还有淀粉释放热量以及磷、铁、钙等元素,与其他粮食相比,均名列前茅。燕麦中水溶性膳食纤维分别是小麦和玉米的4.7倍和7.7倍。燕麦中的B族维生素、尼克酸、叶酸都比较丰富,特别是维生素E,每100g燕麦粉中高达15mg。
薏米:又称薏苡仁,是草本植物薏苡的种仁。祖国医学认为,薏米味甘、淡,性微寒,归脾、胃、肺经,虽寒而不伤胃,健脾而不滋腻,具有利水渗湿、健脾止泻、除痹排脓等功效,常用于治疗脾虚泄泻、尿少浮肿、脚气病、青春痘、扁平疣、皮肤痈疮等症。被誉为“世界禾本科植物之王”.有“天下第一米”的美誉。每100g薏米约含的蛋门质9.4g、脂肪2.7g、碳水化合物66.5g、维生素B1 0.33mg、维生素B2 0.13mg、烟酸7.9g、维生素E 0.22mg、膳食纤维4.9g,还有磷、铁、钙、锌、钾等矿物质。薏米的主要化学活性成分薏米仁酯、薏米仁油等。
山药:山药为薯蓣科植物的块茎,是我国传统的药食同源食物之一,又称为淮山、大薯等,作为一味重要的中药,其性甘温,归脾胃、肺经,具有补中益气、健脾止泄、聪耳明目、滋阴润燥的功效,具有多种生物活性,主要含脂肪酸、多糖、蛋白质、氨基酸、微量元素等化学成分。其中山药多糖为主要活性成分,主要由甘露糖、木糖、阿拉伯糖、葡萄糖和半乳糖组成,现代研究表明具有调节免疫、抗衰老、抗肿瘤、降血糖等多种药理作用
芡实:始载于《神农本草经》,列为上品,又名鸡头子,历版《中国药典》均有记载,为睡莲科1年生水生草本植物芡的干燥成熟种仁,具有益肾固精、补脾止泻、祛湿止带的功效,主治梦遗、滑精,遗尿、尿频,脾虚久泻,白浊、带下。素有“水中人参”和“水中桂圆”的美誉,是传统的中药材和珍贵的天然补品。芡实种仁和种皮中含有黄酮、脑苷脂、多酚类等物质。这些化合物通常被认为具有抗氧化活性。芡实作为一种药食两用植物,其营养丰富,含有多种氨基酸、脂肪酸和微量元素,植物中所含的多酚、倍半新木脂素、生育酚、脑苷脂和环二肽被认为是主要的药用成分。芡实富含多种氨基酸,其配比合理、种类齐全,以谷氨酸和亮氨酸为主要氨基酸,8种人体必需氨基酸含量远高于大豆和牛奶等优质营养品。芡实药理作用的研究主要围绕其抗氧化活性,还包括降血糖、降低尿蛋白、抗心肌缺血、抑菌和保护胃黏膜。
莲肉:甘、涩,平。归脾、肾、心经。历代本草均有收载,具有安神祛火、益肾同精、健脾补胃之功效。补脾止泻,益肾涩精,养心安神。每100g,能量:89千卡,蛋白质4.1g,脂肪0.5g(饱和脂肪酸0.1g,多不饱和脂肪酸0.1g,单不饱和脂肪酸0.3g,碳水化合物17.3g等。得天地清芳之气,禀土中冲和之味,故味甘、气平、无毒。入足太阴、阳明、手少阴经。土为万物之母,后天之元气藉此以生化者也。母气即和则血气主,神得所养疾病无由来矣。正禀稼穑之化。乃脾家之果,故主补中养神益气力,盖十二经脉血气,五脏不足,伤中去热安心止渴,止痢治腰痛泄精,多食令人喜,除百疾,功专补脾益心,久服清心耐老,延年不饥也。
赤小豆:赤小豆性平,味甘酸,无毒,入心、小肠经,含有蛋白质、脂肪、碳水化合物、粗纤维、植物甾醇、三萜皂苷、维生素A、B1、B2及钙、磷、铁等成分,具有利湿消肿、清热退黄、解毒排脓的功效,用于治疗水肿、脚气、黄疸、泻痢、便血、痈肿等症。赤小豆每100克中含有蛋白质20.7克,脂肪0.5克,碳水化合物58克,粗纤维4.9克,此外,还含有钙67毫克、磷305毫克、铁5.2毫克和维生素B1、B2等,营养相当丰富。现代药理研究表明,赤小豆所含的皂苷具有通便、利尿和消肿作用,能解酒、解毒,对于肾脏病和心脏病,均有一定疗效;所含的叶酸有催乳的功效;具有降血压、降血脂、调节血糖、预防结石、健美减肥的作用。
茯苓:多孔菌目茯苓属菌类,又称玉灵、茯灵、万灵桂、茯菟。具有渗湿利水,益脾和胃,宁心安神的功效。《本草纲目》:茯苓气味淡而渗,其性上行,生津液,开腠理,滋水源而下降,利小便。《本草正》:能利窍去湿,利窍则开心益智,导浊生津;去湿则逐水燥脾,补中健胃;袪惊痫,厚肠脏,治痰之本,助药之降。以其味有微甘,故曰补阳。但补少利多。茯苓菌核含β-茯苓聚糖约占干重93%和三萜类化合物乙酰茯苓酸、茯苓酸、3β-羟基羊毛甾三烯酸。此外,尚含树胶、甲壳质、蛋白质、脂肪、甾醇、卵磷脂、葡萄糖、腺嘌呤、组氨酸、胆碱、β-茯苓聚糖分解酶、脂肪酶、蛋白酶等。
枸杞:气微,味甜,归肝、肾经,滋补肝肾,益精明目。主要含甜菜碱、枸杞多糖、胡萝卜素、抗坏血酸等生物碱、多糖、维生素类成分。现代药理学研究表明,枸杞子具有抗氧化、抗衰老、神经保护、抗阿尔茨海默病和保肝明目等药理活性。有研究表明枸杞子在降糖、降脂、抗肿瘤、抗动脉粥样硬化、增强免疫力方面均有效果。现代研究分析表明,枸杞所含营养成份非常丰富,每百克枸杞果中含粗蛋自4.49克,粗脂肪2.33克,碳水化合物9.12克,类胡萝卜素96毫克,硫胺素0.053毫克,核黄索0.137毫克,抗坏血酸19.8毫克,甜菜碱0.26毫克,还含有丰富的钾、钠、钙、镁、铁、铜、锰、锌等元素,以及22种氨基酸和多种维生素。
桑葚:桑葚为我国常用药食同源类中药,具有滋阴补血,生津润燥的功效,常用于治疗肝肾阴虚,眩晕耳鸣,心悸失眠,须发早白,津伤口渴,内热消渴,肠燥便秘等症。桑葚主要化学成分有黄酮类、花色苷类、酚酸类和多糖类及白藜芦醇和白藜芦醇苷、叶黄素等,桑葚含有19种氨基酸,氨基酸含量比核果类高4.0~6.5倍,含有丰富的矿物质,其中钙含量为橙、草莓的1.5~3.0倍,为葡萄、杏的4~5倍。现代药理研究表明,其具有保肝、抗氧化、抗炎、抗癌、降血压等作用。

低聚异麦芽糖:低甜度,为蔗糖甜度45%-50%。甜味柔和,味质美好,无异味,口服不被吸收、利用,全部进入肠道。因此,若长期食用,既不会增加血糖,也不改变血中胰岛素水平,糖尿病患者可放心食用。低聚异麦芽糖能促进肠道内双歧杆菌增殖(又称为双歧杆菌增殖因子),抑制肠道有害菌及腐败物质形成,增加维生素含量,提高机体免疫力。低聚异麦芽糖不会被胃和小肠吸收,而是直接进入大肠,被双歧杆菌优先利用,助其大量繁殖,系为双歧杆菌增殖因子;而肠内其它有害菌则不能利用,从而能抑制有害菌生长,促使肠道内微生态向良性循环调整。

本发明提供一种改善营养代谢的速溶代餐粉的制作方法,包括如下步骤:
步骤S1、原料质检:检查代餐粉原料的安全情况,并留取样品保存以备溯源;
步骤S2、干燥:获取代餐粉的各个植物原料,将各植物原料分别烘干,所述植物原料包括:胚芽玉米、黑米及黑色小麦,其中,胚芽玉米的品种为:华健1号微胚乳玉米;
步骤S3、磨粉:将烘干后的各个植物原料混合,使用超微粉碎机磨粉,粉体过200~500目筛,得到植物原料的原始粉;
步骤S4、制浆提取:将原始粉与蒸馏纯净水按照溶积比1:5~10的比例混合,采用封闭式多功能提取罐提取制浆;
步骤S5、制粉:使得干燥喷雾机对制浆得到的产物进行干燥,得到植物原料的目标粉;
步骤S6、添加营养素:获取乳制品、大米小分子多肽蛋白及复合甜味剂,所述乳制品、大米小分子蛋白肽及复合甜味剂均为粉状,将所述乳制品、大米小分子蛋白肽及复合甜味剂与目标粉于气动混匀机充分混合,所述复合甜味剂包括低聚异麦芽糖、赤藓糖醇及甜叶菊醇;
步骤S7、产品质检:对步骤S6得到的产品进行质检,保证产品外观色泽均一,完全溶于水,无杂质,营养成分检测符合预设要求,且符合国家食品标准;
步骤S8、成品包装:按预设重量对步骤S6得到的产品进行真空包装,得到袋装的速溶代餐粉;

其中,胚芽玉米的品种为:华健1号微胚乳玉米。
2.如权利要求1所述的改善营养代谢的速溶代餐粉配方,其特征在于,所述黑米的品种为:福紫糯3号;所述黑色小麦的品种为:兰黑粒92.1。
3.如权利要求1所述的速溶代餐粉,其特征在于,按重量百分比计,还包括:黑豆1%~5%、黑芝麻1%~5%、粳米1%~5%、米1%~5%、燕麦1%~5%、薏米1%~5%、山药0.1%~1%、芡实0.1%~1%、莲肉0.1%~1%及赤小豆1%~5%、茯苓0.1%~1%、枸杞0.1%~1%、桑葚0,1%~1%、松子0.1%~1%、甜杏仁0.1%~1%及松茸0.1%~1%。
4.如权利要求1所述的改善营养代谢的速溶代餐粉配方,其特征在于,所述大米小分子蛋白肽的分子量小于1000道尔顿。
5.如权利要求1所述的改善营养代谢的速溶代餐粉配方,其特征在于,所述乳制品为添加乳清蛋白与乳铁蛋白的牛乳制品或羊乳制片。
6.一种改善营养代谢的速溶代餐粉的制作方法,其特征在于,包括如下步骤:
步骤S1、原料质检:检查代餐粉原料的安全情况,并留取样品保存以备溯源;
步骤S2、干燥:获取代餐粉的各个植物原料,将各植物原料分别烘干,所述植物原料包括:胚芽玉米、黑米及黑色小麦,其中,胚芽玉米的品种为:华健1号微胚乳玉米;
步骤S3、磨粉:将烘干后的各个植物原料混合,使用超微粉碎机磨粉,粉体过200~500目筛,得到植物原料的原始粉;
步骤S4、制浆提取:将原始粉与蒸馏纯净水按照溶积比1:5~10的比例混合,采用封闭式多功能提取罐提取制浆;
步骤S5、制粉:使得干燥喷雾机对制浆得到的产物进行干燥,得到植物原料的目标粉;
步骤S6、添加营养素:获取乳制品、大米小分子多肽蛋白及复合甜味剂,所述乳制品、大米小分子蛋白肽及复合甜味剂均为粉状,将所述乳制品、大米小分子蛋白肽及复合甜味剂与目标粉于气动混匀机充分混合,所述复合甜味剂包括低聚异麦芽糖、赤藓糖醇及甜叶菊醇;
步骤S7、产品质检:对步骤S6得到的产品进行质检,保证产品外观色泽均一,完全溶于水,无杂质,营养成分检测符合预设要求,且符合国家食品标准;
步骤S8、成品包装:按预设重量对步骤S6得到的产品进行真空包装,得到袋装的速溶代餐粉;
所述速溶代餐粉按重量百分比计,包括:胚芽玉米10%~50%、黑米1%~10%、黑色小麦1%~5%、乳制品10%~20%、大米小分子蛋白肽5%~20%、低聚异麦芽糖0.1%~0.5%、赤藓糖醇0.01%~0.05%及甜叶菊醇0.05%~0.1%。
7.如权利要求6所述的改善营养代谢的速溶代餐粉的制作方法,其特征在于,所述黑米的品种为:福紫糯3号;所述黑色小麦的品种为:兰黑粒92.1。
8.如权利要求6所述的改善营养代谢的速溶代餐粉的制作方法,其特征在于,所述植物原料还包括:黑豆、黑芝麻、粳米、米、燕麦、薏米、山药、芡实、莲肉、赤小豆、茯苓、枸杞、桑葚、松子、甜杏仁及松茸;
制得的速溶代餐粉中,按重量百分比计,还包括黑豆1%~5%、黑芝麻1%~5%、粳米1%~5%、米1%~5%、燕麦1%~5%、薏米1%~5%、山药0.1%~1%、芡实0.1%~1%、莲肉0.1%~1%、赤小豆1%~5%、茯苓0.1%~1%、枸杞0.1%~1%、桑葚0,1%~1%、松子0.1%~1%、甜杏仁0.1%~1%及松茸0.1%~1%。
9.如权利要求6所述的改善营养代谢的速溶代餐粉的制作方法,其特征在于,所述大米小分子蛋白肽的分子量小于1000道尔顿。
10.如权利要求6所述的改善营养代谢的速溶代餐粉的制作方法,其特征在于,所述乳制品为添加乳清蛋白与乳铁蛋白的牛乳制品或羊乳制片。
