技术领域
本发明涉及一种营养食品,具体来说是一种果蔬型营养餐及其制备方法,适合于旅游、野营、行军、远航等人群的健康全营养食品。
背景技术
食物是为人类生存、生长提供能量以及人体代谢需要的基础物质。人体所需的营养素不下百种,其中一些由自身合成、制造,其余无法自身合成、制造的必须从外界摄取,这就是食物的作用。目前已知必须从外界摄取的约有40种,除了水外,可分为蛋白质、脂肪、糖类、矿物质、维生素和膳食纤维。而食物原料来自于自然界的植物或动物,比如谷类、蔬菜、水果、家禽或家畜、鱼、虾等。但每种原料所含营养素都不完整,缺少大部分营养素或者营养素含量较低,因此健康的饮食必须实现谷物与肉、蔬菜、水果的合理搭配。
但实际上,由于人们不是营养学家,对人体所需营养元素的日摄入量以及食物中营养元素的含量没有基本概念,加之人的口味与食物味道的匹配造成的偏食偏好,多数人的营养摄入并不是均衡的。某种营养成分摄入过多或过少,都会带来健康问题,比如喜欢吃肉、甜食的人容易肥胖,摄入维生素A的人容易夜盲,长期不吃蔬菜水果的远航人员容易牙龈粘膜下出血。而由于营养元素分离、纯化所需要的成本等因素,无法做到根据人体需要的营养元素由单一的营养元素混配成食品。因此,目前仅仅是采用简单的几种原料混配成初级食品,例如面包、奶粉,人们就餐时仍然需要面食或米饭搭配蔬菜、水果、肉的方式。
这种传统的饮食方式,对于旅游、野营、行军、远航等人群,带来了不便,因为不仅要携带大量不同种类的食物,还存在保鲜保质问题。且,目前人们的饮食习惯过多的强调口感口味,所以主食是以精粮为主,多以淀粉、蛋白、糖、脂肪、油脂和碳水化合物为主要营养成份。膳食纤维、矿物质和维生素含量不足。
比如:有研究证明,要保障健康,每天需要摄入25--30克膳食纤维,它能帮助肠胃蠕动,促进消化吸收,有效发挥营养,清除多余营养和体内毒素。膳食纤维摄入量不足,容易引发多种疾病,据中国营养学会调查,我国膳食纤维摄入量严重不足,人均每天仅14克左右。特别随着生活水平的提高,人们饮食越来越精细化,粗纤维含量越来越少,导致现代“文明病”如肥胖症、冠心病、糖尿病、癌症等上升,严重影响人们身体健康。对于这些患文明病的人群,人们往往只注重控制脂肪、糖类摄入量,而不知道通过摄入膳食纤维来改善健康状况。
膳食纤维分为水溶性膳食纤维和不溶性膳食纤维,水溶性膳食纤维可在水中溶解,吸水会膨胀,并且可以被大肠中微生物酵解的一类纤维,易形成溶胶或凝胶,具有很强的离子吸附性,能吸附胆酸、胆固醇及有害物质,并可以清除自由基,还有益生元的作用,能降血糖、血脂。这种纤维素在一些常见的食物比如大麦、豆类、胡萝卜、柑橘、亚麻、燕麦和燕麦糠等食物中含量丰富。可溶性膳食纤维生理作用比不溶性膳食纤维更广泛。
不溶性膳食纤维不能溶于水,主要对食物在肠胃运行和停留的时间、排便过程等有很大的影响。纤维素、半纤维素和木质素是3种常见的非水溶性纤维,主要存在于植物表皮质和未加工的麸质、全麦、谷物、豆类、根茎类、果皮等食物中。然而,其粗糙的口感,使得很多人厌恶把其纳入食谱中。
维生素在水果中含量高于谷类,但水果的高含糖量,又成为糖尿病患者、肥胖人群,甚至过敏性皮肤病患者的禁忌。
因此,提供一种口感好、易消化和全营养型的食品,将具有很大的社会需求和价值。
发明内容
本发明的目的在于提供一种全营养型食品——果蔬型营养餐,以谷类主为,并添加有果蔬、食药两用原料等,以提供人体所需的营养元素,且口感好,易于被人接受。
本发明的果蔬型营养餐,其组份及重量配比为:
玉米粉9-11%、南瓜粉9-11%、荞麦粉7-9%、藜麦粉6-8%、黑米粉5-7%、黑麦粉5-7%、鹰嘴豆粉5-7%、胡萝卜粉4-6%、金钱柳4-6%、花生蛋白粉4-6%、燕麦粉3.5-4.5%、核桃粉3.5-4.5%、番茄粉3.5-4.5%、巴旦木粉3.5-4.5%、芡实粉2.5-3.5%、茯苓粉2.5-3.5%、枸杞粉1.8-2.2%、沙棘粉1.1-1.5%、苜蓿粉0.8-1.2%、百合粉1.3-1.7%、菠菜粉0.8-1.2%、大蒜粉0.3-0.7%、南瓜子粉0.3-0.7%、脱脂奶粉1.9-2.5%。
优选地,其组份及重量配比为:
玉米粉10%、南瓜粉10%、荞麦粉8%、藜麦粉7%、黑米粉6%、黑麦粉6%、鹰嘴豆粉6%、胡萝卜粉5%、金钱柳5%、花生蛋白粉5%、燕麦粉4%、核桃粉4%、番茄粉4%、巴旦木粉4%、芡实粉3%、茯苓粉3%、枸杞粉2%、沙棘粉1.3%、苜蓿粉1%、百合粉1.5%、菠菜粉1%、大蒜粉0.5%、南瓜子粉0.5%、脱脂奶粉2.2%。
所述果蔬型营养餐,可以为粉末或者块、片、条、卷或其它形状的固态产品。
本发明还提供了一种上述果蔬型营养餐的制备方法,该方法包括:
(1)混配:将各原料按比例混配;
(2)膨化:采用双螺杆挤压式膨化机,膨化机末端温度设定为150-170℃,进行挤压并膨化,膨化物水分含量为8-15%;
(3)微波干燥:微波炉出口温度70—80℃,经微波炉后膨化谷物干燥蔬松、水分含量5—10%并且达到了灭菌效果。
进一步地,还可以包括步骤(4)超微粉碎:锤式超微粉碎机,达到在不改变细粉物质结构的基础上,使细粉进一步达到细胞级超微粉。
进一步地,还可以包括步骤:(5)三维混合。
进一步地,还可以包括步骤:(6)紫外灯灭菌和包装。
进一步地,在所述步骤(2)中,通过改变切刀切速和模头孔形状,形成的膨化物可以为条状、片状、块状、卷(筒)状。当然,在三维混合后还可以按现有的食品加工工艺加工成压缩饼干等。
本发明中,各原料的主要营养成份如下:
玉米粉,其脂肪、磷元素、维生素B2的含量居谷类食物之首,玉米面中含有亚油酸和维生素E,丰富的膳食纤维。
南瓜粉,含有多种氨基酸、胡萝卜素、D族维生素、维生素E抗坏血酸、葫芦巴碱、腺嘌呤、脂肪、葡萄糖、戊聚糖及甘露醇等成分。
荞麦粉,含有丰富的赖氨酸成分,铁、锰、锌等微量元素比一般谷物丰富,而且含有丰富膳食纤维,是一般精制大米的10倍。
藜麦粉,其蛋白质含量与牛肉相当且为全蛋白,藜麦所含氨基酸种类丰富,除了人类必须的9种必须氨基酸,还含有许多非必须氨基酸,特别是富集多数作物没有的赖氨酸,高膳食纤维。
黑米粉,含蛋白质、碳水化合物、B族维生素、维生素E、钙、磷、钾、镁、铁、锌等营养成份。
黑麦粉,含淀粉、脂肪和蛋白质、维生素B和磷、钾等。
鹰嘴豆粉,纯蛋白质含量高达28%以上,脂肪5%,碳水化合物61%,纤维4一6%,鹰嘴豆含有10多种氨基酸,其中人体必需的8种氨基酸全部具备,而且含量比燕麦还要高出2倍以上,享有很高的声誉和广泛的药用价值,在维吾尔语的医学中已沿用了2500多年。
胡萝卜粉,富含胡萝卜素,还富含维生素B1、维生素B2、钙、铁、磷等维生素和矿物质)。
金钱柳,金钱柳叶更是含有较高的不溶性纤维,还含有丰富的皂苷、黄酮、三萜、多糖、微量元素碘、锌、铁、钙,甜味主要成分为三萜皂甙,它的甜度约为蔗糖的250倍,能有效降低甘油三脂和胆固醇,使金钱柳具有降血压、降血脂的功能,在本申请中可调口感。
花生蛋白粉,蛋白含量高、脂肪含量低、胆固醇含量少,作为蛋白添加成份和提供果香。
燕麦粉,富含可溶性纤维,磷、铁、钙、镁等元素含量高,B族维生素、尼克酸、叶酸、泛酸都比较丰富,特别是维生素E,人体必需的8种氨基酸含量的均居首位。
核桃粉,86%的脂肪是不饱和脂肪酸,富含铜、镁、钾、维生素B6、叶酸和维生素B1,也含有纤维、磷、烟酸、铁、维生素B2和泛酸。
番茄粉,富含维生素A、维生素C、钾、镁、钠。
巴旦木粉,含有蛋白质、膳食纤维、维生素E,且不含胆固醇。
芡实粉,主要含淀粉,蛋白质,钙,磷,铁,脂肪,碳水化合物,维生素B1,B2,C,粗纤维,胡萝卜素等。
茯苓粉,含有三萜类、多聚糖类及胆碱、脂肪、卵磷脂、钾、镁等多种元素。
枸杞粉,维生素C含量比橙子高,β-胡萝卜素含量比胡萝卜高,铁含量比牛排还高。
沙棘粉,含有多种维生素,其中维生素C含量极高,含糖和粗纤维。
苜蓿粉,含蛋白质、脂肪、粗纤维、糖类、胡萝卜素、维生素、较高的钙、磷含量。
百合粉,含蛋白质,脂肪,淀粉,还原糖,粗纤维,维生素C,秋水仙碱。
菠菜粉,富含类胡萝卜素、维生素C、维生素K、钙质、铁质、辅酶Q10。
大蒜粉,含大蒜素,有杀毒消炎作用,可防止变质。
南瓜子粉,含南瓜子氨酸、脂肪油、蛋白质、维生素B1、C;
脱脂奶粉,蛋白质丰富。
本发明的果蔬型营养餐,由谷类、蔬菜类、水果类以及食药两用类等原料搭配,富含丰富的蛋白、氨基酸、脂肪、维生素、矿物质、膳食纤维,为全营养食品,能够满足人体对生命元素的需要。且脂肪均为植物脂肪,植物脂肪的不饱和脂肪酸与动物脂肪相比减少了饱和脂肪酸和胆固醇对人体危害,且保质期更长。除了用燕麦粉、鹰嘴豆粉提供全氨基酸外,还采用了藜麦和脱脂奶粉含有的全蛋白以弥补植物蛋白氨基酸种类不全。可溶性膳食纤维、不溶性膳食纤维(含粗纤维)的搭配,其饱腹感可以控制体重增加,促进排便,降低血糖和胆固醇,使血压降低,和提高肌体免疫力。谷物含量达到40%,经过膨化和微波干燥,具有谷类的清香,和核桃、南瓜子等植物脂肪油的浓香,膨胀后易消化吸收,口感好、香甜的风味独特,是一种适合于旅游、野营、行军、远航等人群的健康全营养食品。
具体实施方式
下面结合具体实施例对本发明做进一步说明,以助于理解本发明的内容。
实施例1
原料重量组成:玉米粉10%、南瓜粉10%、荞麦粉8%、藜麦粉7%、黑米粉6%、黑麦粉6%、鹰嘴豆粉6%、胡萝卜粉5%、金钱柳5%、花生蛋白粉5%、燕麦粉4%、核桃粉4%、番茄粉4%、巴旦木粉4%、芡实粉3%、茯苓粉3%、枸杞粉2%、沙棘粉1.3%、苜蓿粉1%、百合粉1.5%、菠菜粉1%、大蒜粉0.5%、南瓜子粉0.5%、脱脂奶粉2.2%。
所述各种谷类、果蔬等原料,除肥脂奶粉、大蒜粉等可外购外,所述的原料中的各种谷类、果蔬,必需分别经挑选、清洗、干燥、粉碎、过筛(60--80目)待用。
各种粉状原料备齐后,具体果蔬营养餐的制备方法为:
(1)混配:将各原料按比例混配并搅拌均匀;
(2)膨化:采用双螺杆挤压式膨化机,初段、中段和末端温度设定为50℃—130℃—160℃,进行挤压并膨化,随着加温、加压的进行,谷物粉中的水分呈过热状态,谷物粉本身变得柔软,当到达一定高温高压状态进入常压大气中,这时谷物内呈过热状态的水分便一下子在瞬间汽化而发生膨化作用,形成约10x10mm大颗粒状,膨化物水分含量为8-15%;该过程中原料经过130℃—160℃加热,同时熟化。
(3)微波干燥:是将膨化物大颗粒均匀按铺在功率40kw隧道式微波炉进口处输送带上,随着湿原料进入微波炉,湿原料将在微波炉内进行脱水烘焙、膨化、干燥。微波炉输送带行进速度为2—4m/min、进口温度60—75℃,出口温度70—80℃,经微波炉后膨化谷物干燥疏松、水分含量5—10%并且达到了灭菌效果,同时香气可以更浓。
(4)超微粉碎:是将干燥后谷物粒物料由料斗进入高速锤式超微粉碎机,达到在不改变细粉物质结构的基础上,使细粉进一步达到细胞级超微粉,在原料上超微粉碎外力的分布上相对较均匀,分级系统既严格限制了大颗粒,又避免了物料过碎,可以得到粒径分布均匀的超微粉,同时增加了微粉的比表面积,进而使产品的吸附性、溶解性等增大。
(5)三维混合:将超微粉碎后物料,进入三维混合机内进入3—5min自动混合,再次进行均质处理。
(6)紫外灯灭菌和包装。
实施例2
原料重量配比为:
玉米粉9%、南瓜粉11%、荞麦粉7%、藜麦粉8%、黑米粉5%、黑麦粉7%、鹰嘴豆粉5%、胡萝卜粉6%、金钱柳4%、花生蛋白粉6%、燕麦粉3.5%、核桃粉4.5%、番茄粉3.5%、巴旦木粉4.5%、芡实粉2.5%、茯苓粉3.5%、枸杞粉1.8%、沙棘粉1.5%、苜蓿粉0.8%、百合粉1.7%、菠菜粉0.8%、大蒜粉0.3%、南瓜子粉0.7%、脱脂奶粉余量。
制备方法(1)-(5)同实施例1,在三维混合后加入水搅拌和面,然后将面团辊印成型,经过烘烤,形成饼干。
实施例3
原料重量配比为:
玉米粉11%、南瓜粉9%、荞麦粉9%、藜麦粉6%、黑米粉7%、黑麦粉5%、鹰嘴豆粉7%、胡萝卜粉4%、金钱柳6%、花生蛋白粉4%、燕麦粉4.5%、核桃粉3.5%、番茄粉4.5%、巴旦木粉3.5%、芡实粉3.5%、茯苓粉2.5%、枸杞粉2.2%、沙棘粉1.1%、苜蓿粉1.2%、百合粉1.3%、菠菜粉1.2%、大蒜粉0.3%、南瓜子粉0.7%、脱脂奶粉余量。
制备方法为:
(1)混配:将各原料按比例混配并搅拌均匀;
(2)膨化:采用双螺杆挤压式膨化机,初段、中段和末端温度设定为50℃—130℃—160℃,进行挤压并膨化,随着加温、加压的进行,谷物粉中的水分呈过热状态,谷物粉本身变得柔软,当到达一定高温高压状态进入常压大气中,这时谷物内呈过热状态的水分便一下子在瞬间汽化而发生膨化作用,形成约50x10mm膨化条,膨化物水分含量为8-15%;该过程中原料经过130℃—160℃加热,同时熟化。
(3)微波干燥:是将膨化条均匀按铺在功率40kw隧道式微波炉进口处输送带上,随着湿原料进入微波炉,湿原料将在微波炉内进行脱水烘焙、膨化、干燥。微波炉输送带行进速度为2—4m/min、进口温度60—75℃,出口温度70—80℃,经微波炉后膨化条干燥疏松、水分含量5—10%并且达到了灭菌效果,制得疏松、酥脆的、香甜的条状食品。

1.一种果蔬型营养餐,其组份及重量配比为:
玉米粉9-11%、南瓜粉9-11%、荞麦粉7-9%、藜麦粉6-8%、黑米粉5-7%、黑麦粉5-7%、鹰嘴豆粉5-7%、胡萝卜粉4-6%、金钱柳4-6%、花生蛋白粉4-6%、燕麦粉3.5-4.5%、核桃粉3.5-4.5%、番茄粉3.5-4.5%、巴旦木粉3.5-4.5%、芡实粉2.5-3.5%、茯苓粉2.5-3.5%、枸杞粉1.8-2.2%、沙棘粉1.1-1.5%、苜蓿粉0.8-1.2%、百合粉1.3-1.7%、菠菜粉0.8-1.2%、大蒜粉0.3-0.7%、南瓜子粉0.3-0.7%和脱脂奶粉1.9-2.5%。
2.如权利要求1所述的果蔬型营养餐,其特征在于其组份及重量配比为:玉米粉10%、南瓜粉10%、荞麦粉8%、藜麦粉7%、黑米粉6%、黑麦粉6%、鹰嘴豆粉6%、胡萝卜粉5%、金钱柳5%、花生蛋白粉5%、燕麦粉4%、核桃粉4%、番茄粉4%、巴旦木粉4%、芡实粉3%、茯苓粉3%、枸杞粉2%、沙棘粉1.3%、苜蓿粉1%、百合粉1.5%、菠菜粉1%、大蒜粉0.5%、南瓜子粉0.5%和脱脂奶粉2.2%。
3.如权利要求1所述的果蔬型营养餐,其特征在于:所述果蔬型营养餐为熟化膨化的粉末、块、片、条或卷。
4.一种权利要求1至3中之一所述果蔬型营养餐的制备方法,包括如下步骤:
(1)混配:将各原料按比例混配;
(2)膨化:采用双螺杆挤压式膨化机,末端温度设定为150-170℃,进行挤压并膨化,膨化物水分含量为8-15%;
(3)微波干燥:微波炉出口温度70—80℃,经微波炉后膨化物干燥蔬松、水分含量5—10%,并且达到了灭菌效果。
5.如权利要求4所述的果蔬型营养餐的制备方法,其特征在于还包括步骤(4)超微粉碎:采用锤式超微粉碎机进行超微粉碎,达到在不改变细粉物质结构的基础上,使细粉进一步达到细胞级超微粉。
6.如权利要求4或5所述的果蔬型营养餐的制备方法,其特征在于:还包括步骤(5)三维混合。
7.如权利要求6所述的果蔬型营养餐的制备方法,其特征在于:还包括步骤(6)紫外灯灭菌和包装。
8.如权利要求4所述的果蔬型营养餐的制备方法,其特征在于:所述步骤(2)形成的膨化物为条状、片状、块状或卷状。
9.如权利要求4所述的果蔬型营养餐的制备方法,其特征在于:所述步骤(2)中膨化机初段—中段—末端温度为50℃—130℃—160℃。
