Abstract

A commercially packaged flavored pet food product of the present invention has: an edible substrate comprising at least one surface adapted to receive a suspension of flavoursome materials in a paste, gum or gel; and a flavoursome material adhered to said surface, the material substantially contributing to the flavour profile of said flavoured pet food upon consumption.

Flavored pet food
Technical Field
The present invention relates to the field of commercial flavored pet food manufacture. In particular, the present invention relates to a method of efficiently modifying the flavor profile (flavanrprofile) of commercially mass-produced flavored pet foods with minimal disruption to the manufacturing process.
Background
In the field of commercial flavored pet food manufacture, it is desirable and a practical advantage to provide a variety of flavor profiles within the specifications of the food sold under any given brand. This may change the diet of the animal and may encourage the pet owner to purchase a large number of products within the brand, rather than purchasing a variety of different brands in order to diversify the pet's diet.
However, the main cost of this method in terms of material waste and plant down time is derived from the process of stopping the production line after the first tasting food product is manufactured, cleaning and restarting the production line for the second tasting food product. This process is necessary in order to differentiate the tastes of different types of food and to avoid cross-contamination of the materials.
This is particularly true in forming flavored pet foods for products involving any form of extrusion process, as these processes are known to be particularly difficult to start and stop, resulting in a large amount of waste of "off-grade" product during the start and stop of these procedures.
Accordingly, it is an object of the present invention to provide a product specification and manufacturing method for a commercial flavored pet food that minimizes potential downtime when changing the flavor formulation of the flavored pet food.
Disclosure of Invention
According to one aspect of the present invention there is provided a commercially packaged flavoured pet food product having:
an edible substrate comprising at least one surface adapted to receive a suspension of a flavoured (flavoursome) material in a paste, gum or gel; and
a flavoursome material adhered to said surface, the material substantially contributing to the flavour profile of said flavoured pet food upon consumption.
This product has the advantage over the prior art of facilitating the change of flavour composition to different categories by attaching the primary flavoursome materials to the surface of the edible substrate, while using the same production line, since it is only necessary to change the type of flavoursome materials suspended in the paste, gum or gel. This means that it is not necessary, for example, to stop the production of the substrate and to clean the substrate production line, which is often the main cause of production downtime when changing species.
One possible embodiment of the substrate is a relatively flat strip of jerky-like material, wherein the surface is the upper surface of the strip. If this form of substrate is desired, it is preferred that the upper surface includes a ridge extending at least along the edge of the strip, thereby forming a barrier to the escape of paste, gel or gel from the upper surface. More preferably, a series of corrugations adapted to prevent the paste, gum or gel from escaping from the surface.
Preferably, the substrate is in the form of an elongate strip and wherein the upper surface includes a ridge extending at least along an edge of the strip, thereby forming a barrier to the egress of gel from the upper surface. More preferably, the substrate is in the form of an elongate strip, wherein the upper surface comprises a series of corrugations adapted to prevent the gel from escaping from the surface.
An advantage of these specifications for the substrate is that it prevents the escape of gel from the top surface of the substrate with the concomitant loss of flavor material. In particular, the corrugations of the upper surface of the substrate form a barrier to spillage and a larger surface area to which material can adhere.
Another embodiment is a substrate for providing a tube of jerky-like material and wherein said surface is an inner surface of said tube.
Preferred formulations of the paste, gum or gel are a combination of modified starch, glycerin, glucose syrup or dextrose hydrate, food grade oil and emulsifier. This combination can form a formulation in which the gel or gel is fluid at low temperatures and forms a thermally irreversible gel or gel above 75 ℃.
Preferred flavoursome materials include, but are not limited to, natural and identical liquid and powder flavourings and artificial liquid and powder flavourings, encompassing such diverse categories as beef, liver, chicken, potato, cheese, rice, cereal and cranberry.
According to another aspect of the present invention there is provided a method of altering the flavour profile of a commercial packeted flavoured pet food product of the form described above, wherein the flavoursome materials alone are replaced by a different set of flavoursome materials.
According to another aspect of the invention, there is provided a method of manufacturing a commercial packeted flavoured pet food product, the method comprising the steps of:
preparing an edible substrate in the form of an extruded elongated strip or tube according to the above, having a surface suitable for containing a flavouring material;
preparing one or more flavouring materials comprising flavoursome materials suspended in a paste, gum or gel;
applying the one or more flavoring materials to a surface of the edible substrate, the surface of the edible substrate adapted to receive the flavoring materials to form a relatively uniform coating;
heat treating the substrate and the one or more flavoring materials to adhere the flavored materials to the substrate such that a substantial portion of the flavored materials remain attached throughout packaging and distribution of the flavored pet food product.
Preferably, the heat treatment comprises drying the paste, gum or gel.
Detailed Description
The present invention effectively separates various flavor components from the main block of flavored pet food into separate components, so that the flavor of the flavored pet food can be changed by relatively simply changing the flavor component formula, and the main part of the block of the flavored pet food can be continuously produced without reduction.
In these examples, the commercial package of flavored pet food is a meat-based jerky product having a gel applied to a surface adapted to receive the gel, the gel comprising a flavored material. This configuration allows for a variety of flavors to be achieved without stopping the production of the jerky substrate by changing the flavor composition by replacing a different set of flavor materials in a gel-make system.

Claims (7)

1. A commercial packeted flavored pet food product having:
an edible substrate comprising at least one surface adapted to receive a suspension of flavoursome materials in a paste, gum or gel; and a flavoursome material adhered to said surface, the material substantially contributing to the flavour profile of said flavoured pet food upon consumption.
2. The flavored pet food product of claim 1, wherein the substrate is a relatively flat strip of jerky-like material and the surface is an upper surface of the strip.
3. The flavored pet food product of claim 2, wherein the upper surface includes a protuberance extending at least along an edge of the strip, thereby forming a barrier to escape of the paste, gum or gel from the upper surface.
4. The flavored pet food product of claim 2, wherein the substrate is in the shape of an elongated strip, and wherein the upper surface comprises a series of undulations adapted to prevent the cream, gum or gel from spilling off the surface.
5. The flavored pet food product of claim 1, wherein the substrate is a tube of jerky-like material and the surface is an inner surface of the tube.
6. The flavored pet food product according to any of the preceding claims, wherein the paste, gum or gel consists essentially of a mixture of: modified starch; glucose syrup, or a combination of dextrose hydrate and glycerol; food grade oils and emulsifiers.
7. The flavored pet food product according to any of the preceding claims, wherein the flavored material is selected from the group consisting of: artificial, natural and same-quality beef, liver, chicken, potato, cheese, rice, cereal, cranberry liquid and powder flavors.
