Abstract
本发明公开一种葛根保健酒及其制备方法,包括其按重量份计由葛根基酒20~60份;中药组合物3~10份;木糖醇1~7份;β‑环糊精0.01~0.02份组成;本发明还包括葛根酒的制备方法,由葛根基酒的制备、葛根原酒的制备及后处理三步骤组成;本葛根保健酒具补肝肾、益精血、养心脾之功,运用本方法制备的葛根保健酒澄明度佳,有效成分含量高,且操作简单,适于工业生产。

技术领域
本发明涉及保健酒领域,特别涉及一种葛根保健酒及其制备方法。
背景技术
葛根又叫粉葛、葛藤,生长于地面上的为藤状植物,地下部分为根块状,葛根生于山坡草丛、路旁、树林中较阴湿处,在我国分布广泛,盛产广西、广东、湖南等地。葛根发源于我国,现在世界各地都有种植,被加工成食品、保健品等,其突出的保健功效为广大女性所喜爱。经历代医药家不断总结和试验,得出葛根具有:性凉、气平、味甘,具清热、降火、排毒诸功效。用现代医学方法进一步分析表明,葛根中富含多达13种异黄酮类物质,包括葛根素、葛雌素、葛根素木糖甙、大豆黄酮等,葛根素对高血压、高血脂、高血糖和心脑血管疾病有疗效。
葛根制酒是民间食用葛根的一种常规方式,其能保证葛根中的有效成分较好溶解并便于服用,但民间葛根酒的制备方法通常选用简单的泡制葛根。申请号为00124888.X的中国专利公开了葛根酒,其技术方案为:以天然鲜葛根为原料,经去皮、破碎、蒸煮后与大米饭、糯米饭、酒曲混合后糖化发酵,再经抽酒、榨酒、粗过滤、勾兑、陈酿而成。但该配方制备的葛根酒功能成分单一,疗效一般。申请号为200910226003.6的中国专利申请公开了一种黄精葛根酒的加工方法,采用黄精和葛根加工成桔黄色、呈酱香型或曲香型,酒精度为35-45度的白酒。以葛根直接制备的酒,并加以多味中药以实现补肝肾、益精血、养心脾之功的保健酒少有人研究,并且,用传统方法难以实现多味中药同时使用兼具的口感和色泽问题。
发明内容
本发明的目的在于提供一种葛根保健酒及其制备方法,以解决上述背景技术中提出的问题。
为实现上述目的,本发明提供如下技术方案:
一种葛根保健酒,按重量份计由以下组分组成:
葛根基酒20~60份;中药组合物3~10份;木糖醇1~7份;β-环糊精0.01~0.02份;
其中,所述中药组合物按重量份计由以下组分组成:黑豆10~40份;枸杞5~20份;桑葚5~20份;葛根5~25份;酸枣仁2~20份;茯苓5~15份;大枣5~20份。
作为本发明进一步的方案:所述的葛根保健酒的制备方法,具体包括以下步骤:
a、葛根基酒的制备:将鲜葛根清洗、去皮并粉碎后,按常规方法经蒸煮糊化、摊晾拌曲、培菌糖化、入池发酵、蒸馏、陈酿、勾调及灌装后用活性炭处理至少6天,过滤或静置后取上清液,其上清液为葛根基酒;
b、葛根原酒的制备:将配方量的黑豆、桑葚、葛根、酸枣仁、茯苓、山药粉碎并混合均匀得中药粉;将配方量的枸杞、大枣及所得中药粉用步骤a所得述葛根基酒密封渗漉及去渣得渗漉液,将配方量的木糖醇、β-环糊精加入所得渗漉液中,调整酒度,得葛根原酒;
c:后处理:将步骤b所得葛根原酒中加入澄清剂,静置4天以上并过滤1~4次,得葛根保健酒。
作为本发明再进一步的方案:所述的葛根保健酒的制备方法,步骤b具体为:将配方量的黑豆、桑葚、葛根、酸枣仁、茯苓、山楂、山药粉碎至10~20目并混合均匀得中药粉,用步骤a所得葛根基酒浸润所述中药粉15~35分钟杀虫消毒,将配方量的枸杞、大枣及所得中药粉放入渗漉筒并用所述葛根基酒密封浸泡12~24小时后,进行渗漉并离心去渣得渗漉液,其中渗漉流速按原料量计为1~3mL/分钟/每公斤,渗漉时间为45~65小时。
与现有技术相比,本发明的有益效果是:本发明中,黑豆补益肝肾、活血利尿、祛风解毒,是补益肝肾和补血的要药;枸杞子滋补肝肾、益精明目、润肺生津,安神,其药性平和,不寒不热,血虚、阴虚、阳虚均可用;二者共为主药以补肝肾。桑葚补血滋阴、生津润燥;葛根解肌退热、生津止泻;酸枣仁补肝宁心,敛汗生津。几者合用滋补心脾、生津润燥、养血安神,和主药以治其本。山药补脾养胃、生津益肺、补肾涩精;茯苓利水渗湿、健脾止泻、宁心安神;共用补中益气、健脾止泻、宁心安神;大枣补中益气、养血安神而调和诸药。诸药合用,共奏补肝肾、益精血、养心脾之功。运用本方法制备的葛根保健酒澄明度佳,有效成分含量高,且操作简单,适于工业生产。
具体实施方式
下面将结合本发明实施例,对本发明实施例中的技术方案进行清楚、完整地描述,显然,所描述的实施例仅仅是本发明一部分实施例,而不是全部的实施例。基于本发明中的实施例,本领域普通技术人员在没有做出创造性劳动前提下所获得的所有其他实施例,都属于本发明保护的范围。
实施例1
一种葛根保健酒的制备
1、基酒处理
用活性炭去除异杂味,处理方法为按葛根基酒总重量的2‰加入汪洋牌酒用活性炭,时间为6天以上,前3天每天充分搅拌1次,6天后用硅藻土过滤机过滤或取上清液,所述上清液为葛根基酒。
2、渗漉
1)、物料装填
将消毒杀虫后的大枣2份、枸杞5份、放入渗漉筒,用棒轻压物料使其略紧;将浸润好的所述配方1中药粉小心加入渗漉筒(不要冲坏底部的枸杞等形成的垫层),每加入一部分均用木棒将其压紧。药物加入完后,在药物表面放上一层纱布,用石块或不锈钢网压上。先慢慢加入配制好48%葛根白酒,打开下部阀门放走气泡,关闭阀门,倒入基酒至中药层上面10cm左右,密封浸泡。
2)、渗滤速度
密封浸泡24小时后,进行渗漉。渗漉流速按每分钟每公斤药物原料量3ml左右计算。在渗漉的同时加入已经配制好的酒液,最低液面应保持在药物残渣面10cm,直至酒液全部滴干。从开始放出液体到最后滴完控制在55小时左右。
3、粗滤
采用三足式离心机离心(接触物料部分应为不锈钢,离心机转速为1200转/分),使残渣中含的酒液最少。
4、配料
按照药物投料量计算总的成品量,配料前用蒸馏法测定酒度,再根据成品量及酒度计算各种配料的添加量。加入配料时应先用少量酒液将各种粉末状物料溶解或分散均匀后,再慢慢加入,并充分搅拌。注意,要为下胶除杂留出足够的水量。
5、澄清除杂
采用澄清剂按传统方式进行葛根配制酒的澄清。
6、陈化
从调味之日算起,储藏5个月。
7、品质检验
经检验,本品微黄,清亮透明,无悬浮物,无沉淀;纯正,具有葛根自然的植物香;酒体柔和谐调,绵甜爽净,有余味;具有本品的独特风格。本品酒精度(V/V)为28%,总酸(以乙酸计)为2.2g/L,总糖(以葡萄糖计)为20g/L。
8、精滤
用硅藻土过滤机过滤3次(0.3Mpa)。过滤前先用沸水或酒精浸泡处理硅藻土,过滤后再用与酒液浓度相当的酒精清洗后用。每次次过滤后,静置24小时以上,再用硅藻土过滤机过滤。在灌装时用不锈钢精密过滤机(4μm)过滤后进行灌装,灌装前加入配方1的调香液。
9、灌装
采用的容器和管道均为不锈钢,灌装时酒瓶必须沥干,同时应注意避免操作时带入异物。
实施例2
一种葛根保健酒的制备
1、基酒处理
用活性炭去除异杂味,处理方法为按葛根基酒总重量的2‰加入汪洋牌酒用活性炭,时间为7天以上,前3天每天充分搅拌1次,6天后用硅藻土过滤机过滤或取上清液,所述上清液为葛根基酒。
2、渗漉
1)、物料装填
将消毒杀虫后的大枣25份、枸杞25份、放入渗漉筒,用棒轻压物料使其略紧;将浸润好的所述配方1中药粉小心加入渗漉筒(不要冲坏底部的枸杞等形成的垫层),每加入一部分均用木棒将其压紧。药物加入完后,在药物表面放上一层纱布,用石块或不锈钢网压上。先慢慢加入配制好48%葛根白酒,打开下部阀门放走气泡,关闭阀门,倒入基酒至中药层上面10cm左右,密封浸泡。
2)、渗滤速度
密封浸泡24小时后,进行渗漉。渗漉流速按每分钟每公斤药物原料量3ml左右计算。在渗漉的同时加入已经配制好的酒液,最低液面应保持在药物残渣面上10cm,直至酒液全部滴干。从开始放出液体到最后滴完控制在45小时左右。
3、粗滤

Claims (3)
1.一种葛根保健酒,其特征在于:按重量份计由以下组分组成:
葛根基酒20~60份;中药组合物3~10份;木糖醇1~7份;β-环糊精0.01~0.02份;
其中,所述中药组合物按重量份计由以下组分组成:黑豆10~40份;枸杞5~20份;桑葚5~20份;葛根5~25份;酸枣仁2~20份;茯苓5~15份;大枣5~20份。
2.根据权利要求1所述的一种葛根保健酒的制备方法,其特征在于:具体包括以下步骤:
a、葛根基酒的制备:将鲜葛根清洗、去皮并粉碎后,按常规方法经蒸煮糊化、摊晾拌曲、培菌糖化、入池发酵、蒸馏、陈酿、勾调及灌装后用活性炭处理至少6天,过滤或静置后取上清液,其上清液为葛根基酒;
b、葛根原酒的制备:将配方量的黑豆、桑葚、葛根、酸枣仁、茯苓、山药粉碎并混合均匀得中药粉;将配方量的枸杞、大枣及所得中药粉用步骤a所得述葛根基酒密封渗漉及去渣得渗漉液,将配方量的木糖醇、β-环糊精加入所得渗漉液中,调整酒度,得葛根原酒;
c、后处理:将步骤b所得葛根原酒中加入澄清剂,静置4天以上并过滤1~4次,得葛根保健酒。
3.根据权利要求2所述的葛根保健酒的制备方法,其特征在于,步骤b具体为:将配方量的黑豆、桑葚、葛根、酸枣仁、茯苓、山楂、山药粉碎至10~20目并混合均匀得中药粉,用步骤a所得葛根基酒浸润所述中药粉15~35分钟杀虫消毒,将配方量的枸杞、大枣及所得中药粉放入渗漉筒并用所述葛根基酒密封浸泡12~24小时后,进行渗漉并离心去渣得渗漉液,其中渗漉流速按原料量计为1~3mL/分钟/每公斤,渗漉时间为45~65小时。
