本发明公开了一种番木瓜保鲜剂和番木瓜贮藏保鲜方法。本发明通过实验发现,番木瓜果实经过二氯异氰尿酸钠处理后,贮藏12天后,对照组和处理组的好果率分别为44%和87%,呼吸强度分别为23.78±1.95CO2mg/(kg·s)和10.81±0.35CO2mg/(kg·s),乙烯释放速率分别为0.411±0.020μmol/(L·kg·s)和0.19±0.002μmol/(L·kg·s),通过抑制番木瓜果实的呼吸和乙烯释放强度,从而达到延缓衰老的目的。采用本发明的番木瓜贮藏保鲜方法,能够有效延缓番木瓜成熟4‑6天,显著提高了番木瓜的经济价值。

本发明属于水果的贮藏保鲜技术领域,具体涉及一种番木瓜保鲜剂和番木瓜贮藏保鲜方法。
背景技术:
番木瓜(Carica Papaya L.)属于番木瓜属(Carica Linn.),原产于美洲热带地区,在我国福建南部、台湾、广东、广西、云南南部等省区广泛种植。果实营养丰富,富含糖、蛋白质、钙和多种维生素,尤其是维生素A、维生素B、维生素C等,还具有助消化、治胃病的作用。作为典型的呼吸跃变型果实,采后果实的快速成熟软化成为限制其长途运输的主要因素。
番木瓜保鲜方法主要有:1)热激处理:通过采后热激处理(热空气、热水等)从而达到延长贮藏寿命,保持果实品质的保鲜方法。如CN201310497572.0中公开一种采后预冷结合热处理和乙烯抑制剂的番木瓜保鲜方法。CN201110098069.9中公开一种清洗剂清洗果柄和热水浸泡复合的番木瓜保鲜方法。2)熏蒸处理:通过熏蒸植物精油、二氧化硫、1-甲基环丙烯等物质而达到保鲜目的的保鲜方法。如CN201610753216.4中公开一种1-甲基环丙烯(1-MCP)熏蒸复合纳他霉素喷洒处理的番木瓜贮藏保鲜方法。3)化学保鲜处理:通过单一或复合化学试剂浸泡或喷洒处理果实的保鲜方法。如专利CN201410273697.X中公开的一种含有抗坏血酸、焦性没食子酸、表没食子儿茶素和没食子酸酯的番木瓜果实采后保鲜方法。又如CN201110280537.4中公开一种过氧化氢溶液浸泡的番木瓜、番木瓜果实防腐保鲜方法。4)涂膜保鲜:利用低聚糖、淀粉等材料在果实表面形成一层弹性薄膜的保鲜贮藏方法。中国专利CN201010227131.5公开一种含有羧甲基纤维素、香兰素、乳酸钙、纳他霉素和薄荷油的鲜切番木瓜涂膜保鲜方法。以上方法对番木瓜采后保鲜都具有一定效果,但大多数都存在操作复杂的问题。因此简单易行且安全有效的番木瓜保鲜技术值得进一步开发。
二氯异氰尿酸钠是一种高效、安全的氧化杀菌剂,可强力杀灭各种细菌芽孢、真菌等各种致病微生物。本品易溶于水,难溶于有机溶剂,对人体无不良影响,广泛应用于饮用水消毒、预防性消毒剂各种场所的环境消毒。
发明内容:
本发明的目的在于克服现有技术中的缺陷,提供一种延缓番木瓜成熟效果好的番木瓜保鲜剂和番木瓜贮藏保鲜方法。
本发明的第一个目的是提供二氯异氰尿酸钠在制备延缓番木瓜果实成熟制剂或番木瓜保鲜剂中的应用。
本发明的第二个目的是提供二氯异氰尿酸钠在制备延缓番木瓜果实果皮和果肉转黄、果实硬度下降、抑制呼吸速率和乙烯释放速率的制剂中的应用。
本发明的第三个目的是提供一种番木瓜保鲜剂,所述的番木瓜保鲜剂为质量分数0.001%-0.1%的二氯异氰尿酸钠水溶液。
所述的二氯异氰尿酸钠的含量优选为质量分数0.02%。
本发明的第四个目的是提供一种番木瓜贮藏保鲜方法,包括以下步骤:
(1)选择晴天采收绿熟、无机械损伤和病虫害的番木瓜果实;
(2)将番木瓜果实浸泡于所述的番木瓜保鲜剂中;
(3)再将浸泡处理后的番木瓜果实进行沥干、包装、贮藏。
所述的浸泡时间优选为3-5min。
所述的番木瓜保鲜剂优选为质量分数0.02%的二氯异氰尿酸钠水溶液。
优选,所述的沥干是将浸泡处理后的番木瓜果实置于温度为25±2℃,相对湿度为90±5%的环境中沥干番木瓜果实表面水分。
优选,所述的包装是将沥干后的番木瓜果实用厚度为0.03mm聚乙烯塑料薄膜袋进行包装。
优选,所述的贮藏是将包装好的番木瓜果实置于温度为25±2℃,相对湿度为90±5%的环境中贮藏。
本发明的番木瓜保鲜剂是按以下方法配制的:将二氯异氰尿酸钠按其浓度称量,然后再溶于水中。
二氯异氰尿酸钠是一种广谱消毒、灭菌、除藻剂,但用于本发明中能有效延缓番木瓜成熟4-6天,是一种番木瓜延缓衰老剂。番木瓜果实经过二氯异氰尿酸钠处理后,贮藏12天后,对照组和处理组的好果率分别为44%和87%,呼吸强度分别为23.78±1.95CO2mg/(kg·s)和10.81±0.35CO2mg/(kg·s),乙烯释放速率分别为0.411±0.020μmol/(L·kg·s)和0.19±0.002μmol/(L·kg·s),通过抑制番木瓜果实的呼吸和乙烯释放强度,从而达到延缓衰老的目的。采用本发明的番木瓜贮藏保鲜方法,能够有效延缓番木瓜成熟4-6天,显著提高了番木瓜的经济价值。通过体外抑菌实验发现二氯异氰尿酸钠能抑制层出镰刀菌的菌落生长,直至培养9天,对照组和二氯异氰尿酸钠处理组的菌落直径分别分7.61±0.03cm和5.67±0.07cm。因此也可以将二氯异氰尿酸钠用于抑制镰刀菌增长药物中进行应用。

实施例1:
选择晴天采收绿熟、无机械损伤和病虫害的番木瓜果实,将番木瓜随机分成两组,对照组和实验组分别放入清水、质量分数为0.02%二氯异氰尿酸钠(NaDCC)水溶液中浸泡3min,将浸泡处理后的番木瓜果实置于温度为25±2℃,相对湿度为90±5%的环境中沥干番木瓜果实表面水分,用厚度为0.03mm聚乙烯塑料薄膜袋进行包装,贮藏在25±2℃、相对湿度90±5%的条件下。采后贮藏12天时,对照组和实验组的好果率分别为44%和87%,呼吸强度分别为23.78±1.95CO2mg/(kg·s)和10.81±0.35CO2mg/(kg·s),乙烯释放速率分别为0.411±0.020μmol/(L·kg·s)和0.19±0.002μmol/(L·kg·s)。采后贮藏18天时,对照组和实验组的呼吸强度分别为27.91±6.95CO2mg/(kg·s)和11.01±1.28CO2mg/(kg·s),好果率分别为44%和61%。
番木瓜保鲜结果分析。从图1可知,NaDCC处理能延缓番木瓜果皮和果肉色度下降速率,在采后处理组第12天果皮显著转黄,采后第10天果肉显著转黄;对照组番木瓜在采后第7天果皮显著转黄,采后第5天果肉显著转黄;同时经过NaDCC处理后,番木瓜果实保持较高的硬度。与经过NaDCC处理相比,对照组具有较高的呼吸速率和乙烯释放速率。由此可见,经过NaDCC处理能显著延缓番木瓜果实果皮和果肉转黄、果实硬度下降、抑制呼吸速率和乙烯释放速率,从而达到延缓番木瓜果实成熟的作用。
实施例2:
选择晴天采收绿熟、无机械损伤和病虫害的番木瓜果实,将番木瓜随机分成两组,对照组和实验组分别放入清水、质量分数为0.02%二氯异氰尿酸钠水溶液中浸泡5min,将浸泡处理后的番木瓜果实置于温度为25±2℃,相对湿度为90±5%的环境中沥干番木瓜果实表面水分,用厚度为0.03mm聚乙烯塑料薄膜袋进行包装,贮藏在25±2℃、相对湿度90±5%的条件下。贮藏15天后,对照组和NaDCC处理组的呼吸强度分别为:23.08±1.45CO2mg/(kg·s)和12.88±0.75CO2mg/(kg·s),好果率分别为:47%和72%,果肉色度分别为:87.44±11.39和114.88±3.44,果实被延缓5天成熟。
实施例3:
选择晴天采收绿熟、无机械损伤和病虫害的番木瓜果实,将番木瓜果实随机分成两组,对照组和实验组分别放入清水、质量分数为0.001%二氯异氰尿酸钠水溶液中浸泡3min,将浸泡处理后的番木瓜果实置于温度为25±2℃,相对湿度为90±5%的环境中沥干番木瓜果实表面水分,用厚度为0.03mm聚乙烯塑料薄膜袋进行包装,贮藏在25±2℃、相对湿度90±5%的条件下。果实贮藏13天后,对照组和NaDCC处理组的果实好果率为45%和60%,果肉色度分别为87.56±4.22和98.11±4.53,果实延缓3天成熟。
实施例4:
选择晴天采收绿熟、无机械损伤和病虫害的番木瓜果实,将番木瓜果实随机分成两组,对照组和实验组分别放入清水、质量分数为0.1%二氯异氰尿酸钠水溶液中浸泡3min,将浸泡处理后的番木瓜果实置于温度为25±2℃,相对湿度为90±5%的环境中沥干番木瓜果实表面水分,用厚度为0.03mm聚乙烯塑料薄膜袋进行包装,贮藏在25±2℃、相对湿度90±5%的条件下。贮藏第9天时,对照组和实验组的呼吸强度分别为25.91±4.95CO2mg/(kg·s)和12.01±1.18CO2mg/(kg·s),果实硬度分别为:1.62±0.40kg和6.36±0.36kg,好果率分别为42%和71%,NaDCC处理后果实延缓4天成熟。
