Abstract
本发明涉及一种利用豌豆淀粉生产智能型可降解可食用膜的方法,包括如下步骤:S1、组分调配:100‑120kg淀粉搅拌下加入到1000L纯净水中,分散混合均匀后继续搅拌10‑15min,然后加入40‑60L增塑剂,搅拌10‑15min后加入12‑18kg增强剂、1‑1.5kg无水氯化钙、500‑800g植物提取物、500‑800g天然着色剂和3‑5kg氧化型谷胱甘肽,搅拌30‑40min;S2、均质脱气;S3、流延;S4、干燥;S5、揭膜、机械卷膜,包装,贮藏。本发明膜材料可显色标识食品品质变化,具有良好的抑菌性能、力学性能、阻油性能、阻湿性能及阻氧性能。本发明可应用于食品、保健品、药品、饲料等各种物料包装。
Description
技术领域
本发明涉及一种可降解可食用膜的制备方法,特别是涉及一种利用豌豆淀粉生产智能型可降解可食用膜的方法。
背景技术
可降解可食用膜是一种既可以像纸张一样包裹食品又可以加工成袋、盒等包装形式代替塑料等传统合成包装材料的新型包装材料,同时它还可以是食品的一个组成部分,并为食品增添色香味和营养价值。可降解可食用膜具有安全无毒、可食用、无污染、可降解的优点,是塑料包装无可比拟的,这在“白色污染”日趋严重,多数发达国家已禁止或限用塑料包装而提倡选用“绿色包装”的今天无疑是一种最好的选择。所以集这些优点于一身的可降解可食用膜制备技术正成为食品行业普遍看好的重要技术之一,具有很好的发展前景。
在现有背景技术中,美国发明专利US6162475A报道了利用PVA为基 料的活性包装的制作方法,这种包装对食品具有较好的保鲜效果,罗伯 特·R·霍尔库姆报道了改变具有薄膜物理电气整体功能稳定性的活性薄膜 上电荷分布的方法和装置,这对提高活性薄膜的性能具有重要作用。我国 在可降解可食用膜包装材料的知识产权方面产生了大量的研究论文及专 利,主要集中在膜的配方上,CN02139279.X报道了一种可食性马铃薯淀粉复合食品包装膜及其制备方法,主要通过淀粉糊化搅拌成膜,CN02151253.1 报道了复合型可食性壳聚糖膜的制备方法,它以壳聚糖及其衍生物为成膜 的主要材料,以成膜剂或增强剂、增塑剂和交联剂为辅助成分,通过控温 成膜。以上这些研究均未涉及成膜性能的控制方法如低剪切分散、分段干 燥、加压处理等工艺研究。对可降解可食用膜保鲜和品质变化指示功能的 发明和研究未见报道。
综上所述,在可降解可食用膜研究方面,国内外主要集中在成膜配方和基本应用研究上,对膜本身的机械性能(如抗拉强度)和阻隔性能(透湿、透气性)研究、加工方式以及提高膜性能方面研究较少,与现代其他包装技术相比,尚有许多不完善之处,如机械性能和阻隔性能不高,易失水变脆,生产工艺不完善等,从而限制了可降解可食用膜的应用范围。优良的可降解可食用膜都应具有高强度、良好的阻隔性和一定程度的气调性及一定的智能型。本发明提供一种以豌豆淀粉为主要原料,配合使用甘油、聚乙二醇-400、海藻酸钠、胶原蛋白、卡拉胶、黄原胶、果胶、瓜尔豆胶、聚谷氨酸钠、植物提取物、植物花青素等组分,通过低剪切分散、均质、脱气、吸风送风、分段干燥等工艺,制得的具有防腐、指示食品品质变化的智能型可降解可食用膜的新技术。
发明内容
为解决现有技术中可降解可食用膜机械性能和阻隔性能不高,易失水变脆,生产工艺不完善等缺陷,本发明提供了一种利用豌豆淀粉生产智能型可降解可食用膜的方法,以豌豆淀粉为主要原料,配合使用甘油、聚乙二醇-400、海藻酸钠、胶原蛋白、卡拉胶、黄原胶、果胶、瓜尔豆胶、聚谷氨酸钠、植物提取物、植物花青素等组分,通过低剪切分散、均质、脱气、吸风送风、分段干燥等工艺,制得的具有防腐、指示食品品质变化的智能型可降解可食用膜的新技术。
本发明采用配方无泡、低剪切分散、均质及真空脱气的方法,有利于除去膜液中的气泡,获得均一透明高性能的薄膜;采用送风吸风、分段干燥方法有利于膜干燥过程反应形成致密网状结构,提高膜性能,同时还可有效回收热能,显著降低生产能耗成本;采用304不锈钢板流延,有利于膜连续生产,降低成本,并有效避免有害金属及有害物质渗入膜材料。豌豆淀粉为本发明采用的主要原料之一,其分子结构具有优良的韧性,可以在低温、高剪切力条件下保持较高的粘度稳定性和分子的高强度能力,从而形成性能优良的膜产品。本发明产品加入的甘油、聚乙二醇-400作为膜增塑剂可有效提高膜的延展率,加入海藻酸钠、胶原蛋白、植物蛋白、卡拉胶、黄原胶、果胶、瓜尔豆胶、无水氯化钙、聚谷氨酸钠等多糖和蛋白质、氨基酸类化合物则通过与豌豆淀粉分子发生分子间交联反应和大分子胶体作用形成网状结构,其中钙离子与海藻酸钠的活性基团作用搭建钙桥,使网状结构更加紧凑,促使形成致密的膜分子结构,有效提高膜的抗拉强度等力学性能、热封性能、阻油性能、阻氧性能及阻水性能,实践中发现,添加适量的氧化型谷胱甘肽,可以提高膜的持水能力,使膜的柔韧性得到显著改善,达到延长被包装产品的货架期目的。植物提取物和植物花青素加入不仅赋予膜具有防腐保鲜和指示食品品质变化的功能,同时其分子活性基团还可以和豌豆淀粉分子和海藻酸钠、蛋白质等其他加入的大分子组分的活性基团发生交联反应强化膜分子网状结构,改善膜性能。
本发明解决其技术问题所采用的技术方案是:
一种利用豌豆淀粉生产智能型可降解可食用膜的方法,包括如下步骤:
S1、组分调配:100-120kg淀粉搅拌下加入到1000L纯净水中,分散混合均匀后继续搅拌10-15min,然后加入40-60L增塑剂,搅拌10-15min后加入12-18kg增强剂、1-1.5kg无水氯化钙、500-800g植物提取物、500-800g天然着色剂和3-5kg氧化型谷胱甘肽,搅拌30-40min;
S2、均质脱气:搅拌均匀后,放入室温25℃-30℃下,-0.1~-0.3MPa 真空下脱气 0.5h-2h,之后在80-90℃水浴条件下加热搅拌直至完全反应,得到淀粉膜溶液;
S3、流延:根据膜厚度要求设置刮刀宽度和高度,流延于能够控制膜厚度的304不锈钢板输送带上;
S4、干燥:流延后的304不锈钢板输送带先通过具有送风吸风分段干燥功能的烘干管道设备于80-130℃干燥,然后再通过相对湿度在40-60%的冷却管道设备冷却,成膜;
S5、揭膜、机械卷膜,包装,贮藏。
所述S1中淀粉选自豌豆淀粉、豌豆淀粉、红薯淀粉、藕粉、马铃薯淀粉、玉米淀粉、木薯淀粉、小麦变性淀粉、玉米变性淀粉、红薯变性淀粉、豌豆变性淀粉、藕粉变性淀粉、马铃薯变性淀粉、木薯变性淀粉和聚乳酸淀粉中的至少一种或几种的混合物。
所述S1中增塑剂选自甘油、聚乙二醇-400、聚乙二醇200-600、糊精、环氧糊精、赤藓糖醇、单双硬脂酸甘油酯、中链甘油、中链甘油酯、月桂酸、琥珀酸、吐温80、低聚果糖、低聚木糖及低聚麦芽糖和低聚异麦芽糖中的至少一种或几种的混合物。
所述S1中增强剂选自胶原蛋白、大豆蛋白、豌豆蛋白、小麦蛋白、玉米蛋白、酪蛋白、大米蛋白、聚谷氨酸钠、海藻酸及其盐类、低聚壳聚糖、壳寡糖、壳聚糖、阿拉伯胶、黄原胶、羧甲基纤维素钠、羧甲基纤维素钾、果胶、明胶、卡拉胶、瓜尔胶和刺槐豆胶中的至少一种或几种的混合物。
作为优选,所述增强剂的组成为:3kg海藻酸钠、5kg胶原蛋白、1kg卡拉胶、1kg果胶、1kg黄原胶、1kg瓜尔豆胶。
所述S1中植物提取物选自香辛料植物提取物和/或食用植物提取物。
作为优选,所述香辛料植物选自丁香、肉桂、胡椒、花椒、八角、茴香、月桂、姜、白芷和藿香中的任意一种;食用植物选自洋葱、食用菌、金银花、荷叶、苦丁茶、大蒜、芦荟和鱼腥草中的任意一种或几种。
所述S1中天然着色剂选自紫甘蓝、葡萄、樱桃、姜黄、紫薯、红辣椒、紫苏、高粱、萝卜、番茄和葡萄皮提取物中的一种或几种的混合物。
所述S1中氧化型谷胱甘肽的制备方法步骤如下:
S11、取还原型谷胱甘肽,于40-45℃溶解,获得50-100g/L的还原型谷胱甘肽溶液,测其pH值为A1;
S12、用氢氧化钡调pH至A2,7.0≤A2≤7.2;
S13、加入一定量双氧水,边加边搅拌,加完后继续搅拌反应0.2-0.5h;
S14、反应结束后,加入一定量二氧化锰,搅拌5-10min,然后充分滤去二氧化锰;
S15、用硫酸调节pH至A3,A1-0.1≤A3≤A1;
S16、充分滤去硫酸钡沉淀,喷雾干燥,获得氧化型谷胱甘肽。
本发明的有益效果是:
1、本发明所用原料均为食品原料和食品添加剂,与传统的塑料包装材料相比,安全无毒,环保可降解可食用,用于食品、药品及其他产品包装具有更好的安全性和环保效应。所制备的包装材料除具备普通包装材料的包装功能外,还可以是食品的组成部分赋予营养健康组分被食用。
2、本发明采用植物提取物和植物花青素作为膜成分,使本发明产品成为具有抑菌防腐、指示产品品质变化的智能型可降解可食用膜。植物提取物可有效抑制引起食品变质的各类细菌、酵母菌、霉菌生长,用于包装食品产品时,食品不添加防腐剂或少添加防腐剂,就可满足食品货架期的需求,同时食品不添加或减少防腐剂的使用有利于人类身体健康。植物花青素遇酸时会改变颜色,而食品变质时会变酸,因此包装食品时能根据食品变质程度变为粉红色、黄色、浅紫色及蓝色等不同颜色,提醒消费者不要食用变质食品。
3、本发明采用了价格低廉、性能优良的豌豆淀粉为主要原料,添加很少的增塑剂和增强剂,大大改善豌豆淀粉膜性能,产品生产成本低,可与塑料产品媲美,降低产品售价,有利于拓展市场,惠及更多的消费人群,具有较好的市场前景。
4、原料中加入的增塑剂和增强剂,是淀粉分子间的交联剂,用以改善淀粉类材料成膜的脆性,不仅使溶液保持较高的粘度和稳定性,还促进淀粉分子在高温下交联反应,使各分子间成键形成致密的网状结构,从而提高膜的强度和柔韧性。
5、本发明所制备的智能型膜材料是一种新型技术附加值较高的新产品,可作为包装材料包装各类产品如食品、药品及其他日用品。
6、本发明所提供的智能型膜材料生产技术,设备常规,操作简便,具有连续化生产的特点,适合工业化生产。
7、本技术生产的智能型膜具有优良的力学性能、阻油性能、阻氧性能及热封性能,抗拉强度可达50 MPa以上,延伸率小于6%,透油率为0,可热封成袋。基本满足各类食品包装需求。
具体实施方式
下面通过具体实施例,对本发明的技术方案作进一步的具体说明。
实施例1:
一种利用豌豆淀粉生产智能型可降解可食用膜的方法,包括如下步骤:
S1、组分调配:100kg豌豆淀粉搅拌下加入到1000L纯净水中,低剪切分散混合均匀后继续搅拌10min,然后加入40L甘油和10L聚乙二醇-400,搅拌10min后加入2kg海藻酸钠、5kg胶原蛋白、1kg卡拉胶、1kg果胶、1kg黄原胶、1kg瓜尔豆胶、1kg无水氯化钙、500g丁香、500g番茄和3kg氧化型谷胱甘肽,搅拌30min;
S2、均质脱气:搅拌均匀后,放入室温25℃下,-0.1MPa 真空下脱气0.5h,之后在80℃水浴条件下加热搅拌直至完全反应,得到淀粉膜溶液;
S3、流延:根据膜厚度要求设置刮刀宽度和高度,流延于能够控制膜厚度的304不锈钢板输送带上;
S4、干燥:流延后的304不锈钢板成膜输送带先通过具有送风吸风分段干燥功能的烘干管道设备80℃干燥,然后再通过相对湿度在40%的冷却管道设备冷却,成膜;
S5、揭膜、机械卷膜,包装,贮藏。

S11、取还原型谷胱甘肽,于40℃溶解,获得50g/L的还原型谷胱甘肽溶液,测其pH值为A1;
S12、用氢氧化钡调pH至A2=7.0;
S13、加入一定量双氧水,边加边搅拌,加完后继续搅拌反应0.2h;
S14、反应结束后,加入一定量二氧化锰,搅拌5min,然后充分滤去二氧化锰;
S15、用硫酸调节pH至A3=A1-0.1;
S16、充分滤去硫酸钡沉淀,喷雾干燥,获得氧化型谷胱甘肽。
实施例2:
一种利用豌豆淀粉生产智能型可降解可食用膜的方法,包括如下步骤:
S1、组分调配:80kg豌豆淀粉、10kg红薯淀粉、10kg藕粉、10kg玉米淀粉搅拌下加入到1000L纯净水中,低剪切分散混合均匀后继续搅拌12min,然后加入30L月桂酸及其衍生物及20L低聚麦芽糖,搅拌12min后加入2kg胶原蛋白、2kg豌豆蛋白、2kg聚谷氨酸钠、2kg壳聚糖、2kg黄原胶、2kg羧甲基纤维素钠、2kg果胶、1.2kg无水氯化钙、650g茴香、650g紫苏和4kg氧化型谷胱甘肽,搅拌35min;
S2、均质脱气:搅拌均匀后,放入室温27℃下,-0.2MPa 真空下脱气 1h,之后在85℃水浴条件下加热搅拌直至完全反应,得到淀粉膜溶液;
S3、流延:根据膜厚度要求设置刮刀宽度和高度,流延于能够控制膜厚度的304不锈钢板输送带上;
S4、干燥:流延后的304不锈钢板成膜输送带先通过具有送风吸风分段干燥功能的烘干管道设备于105℃干燥,然后再通过相对湿度在50%的冷却管道设备冷却,成膜;
S5、揭膜、机械卷膜,包装,贮藏。
所述S1中氧化型谷胱甘肽的制备方法步骤如下:
S11、取还原型谷胱甘肽,于42℃溶解,获得75g/L的还原型谷胱甘肽溶液,测其pH值为A1;
S12、用氢氧化钡调pH至A2=7.1;
S13、加入一定量双氧水,边加边搅拌,加完后继续搅拌反应0.35h;
S14、反应结束后,加入一定量二氧化锰,搅拌7.5min,然后充分滤去二氧化锰;
S15、用硫酸调节pH至A3=A1-0.05;
S16、充分滤去硫酸钡沉淀,喷雾干燥,获得氧化型谷胱甘肽。
实施例3:
一种利用豌豆淀粉生产智能型可降解可食用膜的方法,包括如下步骤:
S1、组分调配:80kg豌豆淀粉、10kg藕粉变性淀粉、10kg马铃薯变性淀粉、10kg木薯变性淀粉、10kg玉米淀粉搅拌下加入到1000L纯净水中,低剪切分散混合均匀后继续搅拌15min,然后加入20L单双硬脂酸甘油酯、20L中链甘油、20L中链甘油酯,搅拌15min后加入4kg羧甲基纤维素钠、3kg羧甲基纤维素钾、3kg果胶、2kg明胶、1kg卡拉胶、500g瓜尔胶、500g刺槐豆胶、1.5kg无水氯化钙、800g藿香、800g紫甘蓝和5kg氧化型谷胱甘肽,搅拌40min;
S2、均质脱气:搅拌均匀后,放入室温30℃下,-0.3MPa 真空下脱气2h,之后在90℃水浴条件下加热搅拌直至完全反应,得到淀粉膜溶液;
S3、流延:根据膜厚度要求设置刮刀宽度和高度,流延于能够控制膜厚度的304不锈钢板输送带上;
S4、干燥:流延后的304不锈钢板成膜输送带先通过具有送风吸风分段干燥功能的烘干管道设备于130℃,然后再通过相对湿度在60%的管道设备冷却,成膜;
S5、揭膜、机械卷膜,包装,贮藏。
所述S1中氧化型谷胱甘肽的制备方法步骤如下:
S11、取还原型谷胱甘肽,于45℃溶解,获得100g/L的还原型谷胱甘肽溶液,测其pH值为A1;
S12、用氢氧化钡调pH至A2=7.2;
S13、加入一定量双氧水,边加边搅拌,加完后继续搅拌反应0.5h;
S14、反应结束后,加入一定量二氧化锰,搅拌10min,然后充分滤去二氧化锰;
S15、用硫酸调节pH至A3=A1;
S16、充分滤去硫酸钡沉淀,喷雾干燥,获得氧化型谷胱甘肽。
性能检测:
采用本技术生产的膜包装康师傅方便面的油料包及普通色拉油,通过37℃、70%湿度二个月破坏性试验,油包完整无破裂,油料无异味,无腐败变质。根据GB 2716-2005 食用植物油卫生标准,油料包中油料的过氧化值POV(meq/Kg)都未超过食用油卫生安全标准值≤10(meq/Kg),都在2.0(meq/Kg)以下,说明本技术产品可完全满足食品包装要求,尤其适合高油脂含量食品及油脂含量高的各类产品包装。
以上所述的实施例只是本发明的一种较佳的方案,并非对本发明作任何形式上的限制,在不超出权利要求所记载的技术方案的前提下还有其它的变体及改型。
Claims (9)
1.一种利用豌豆淀粉生产智能型可降解可食用膜的方法,其特征在于,包括如下步骤:
S1、组分调配:100-120kg淀粉搅拌下加入到1000L纯净水中,分散混合均匀后继续搅拌10-15min,然后加入40-60L增塑剂,搅拌10-15min后加入12-18kg增强剂、1-1.5kg无水氯化钙、500-800g植物提取物、500-800g天然着色剂和3-5kg氧化型谷胱甘肽,搅拌30-40min;
S2、均质脱气:搅拌均匀后,放入室温25℃-30℃下,-0.1~-0.3MPa 真空下脱气 0.5h-2h,之后在80-90℃水浴条件下加热搅拌直至完全反应,得到淀粉膜溶液;
S3、流延:根据膜厚度要求设置刮刀宽度和高度,流延于能够控制膜厚度的304不锈钢板输送带上;
S4、干燥:流延后的304不锈钢板输送带先通过具有送风吸风分段干燥功能的烘干管道设备于80-130℃干燥,然后再通过相对湿度在40-60%的冷却管道设备冷却,成膜;
S5、揭膜、机械卷膜,包装,贮藏。
2.如权利要求1所述的一种利用豌豆淀粉生产智能型可降解可食用膜的方法,其特征在于,所述S1中淀粉选自豌豆淀粉、豌豆淀粉、红薯淀粉、藕粉、马铃薯淀粉、玉米淀粉、木薯淀粉、小麦变性淀粉、玉米变性淀粉、红薯变性淀粉、豌豆变性淀粉、藕粉变性淀粉、马铃薯变性淀粉、木薯变性淀粉和聚乳酸淀粉中的至少一种或几种的混合物。
3.如权利要求1所述的一种利用豌豆淀粉生产智能型可降解可食用膜的方法,其特征在于,所述S1中增塑剂选自甘油、聚乙二醇-400、聚乙二醇200-600、糊精、环氧糊精、赤藓糖醇、单双硬脂酸甘油酯、中链甘油、中链甘油酯、月桂酸、琥珀酸、吐温80、低聚果糖、低聚木糖及低聚麦芽糖和低聚异麦芽糖中的至少一种或几种的混合物。
4.如权利要求1所述的一种利用豌豆淀粉生产智能型可降解可食用膜的方法,其特征在于,所述S1中增强剂选自胶原蛋白、大豆蛋白、豌豆蛋白、小麦蛋白、玉米蛋白、酪蛋白、大米蛋白、聚谷氨酸钠、海藻酸及其盐类、低聚壳聚糖、壳寡糖、壳聚糖、阿拉伯胶、黄原胶、羧甲基纤维素钠、羧甲基纤维素钾、果胶、明胶、卡拉胶、瓜尔胶和刺槐豆胶中的至少一种或几种的混合物。
5.如权利要求4所述的一种利用豌豆淀粉生产智能型可降解可食用膜的方法,其特征在于,所述增强剂的组成为:3kg海藻酸钠、5kg胶原蛋白、1kg卡拉胶、1kg果胶、1kg黄原胶、1kg瓜尔豆胶。
6.如权利要求1所述的一种利用豌豆淀粉生产智能型可降解可食用膜的方法,其特征在于,所述S1中植物提取物选自香辛料植物提取物和/或食用植物提取物。
7.如权利要求6所述的一种利用豌豆淀粉生产智能型可降解可食用膜的方法,其特征在于,所述香辛料植物选自丁香、肉桂、胡椒、花椒、八角、茴香、月桂、姜、白芷和藿香中的任意一种;食用植物选自洋葱、食用菌、金银花、荷叶、苦丁茶、大蒜、芦荟和鱼腥草中的任意一种或几种。
8.如权利要求1所述的一种利用豌豆淀粉生产智能型可降解可食用膜的方法,其特征在于,所述S1中天然着色剂选自紫甘蓝、葡萄、樱桃、姜黄、紫薯、红辣椒、紫苏、高粱、萝卜、番茄和葡萄皮提取物中的一种或几种的混合物。
9.如权利要求1所述的一种利用豌豆淀粉生产智能型可降解可食用膜的方法,其特征在于,所述S1中氧化型谷胱甘肽的制备方法步骤如下:
S11、取还原型谷胱甘肽,于40-45℃溶解,获得50-100g/L的还原型谷胱甘肽溶液,测其pH值为A1;
S12、用氢氧化钡调pH至A2,7.0≤A2≤7.2;
S13、加入一定量双氧水,边加边搅拌,加完后继续搅拌反应0.2-0.5h;
S14、反应结束后,加入一定量二氧化锰,搅拌5-10min,然后充分滤去二氧化锰;
S15、用硫酸调节pH至A3,A1-0.1≤A3≤A1;
S16、充分滤去硫酸钡沉淀,喷雾干燥,获得氧化型谷胱甘肽。
