背景技术
花生调和油,是以花生油为主配合其它食用油的复合油,可作熘、炒、煎、炸或凉拌用油。花生调和油受氧、水、光、热、微生物等的作用,会逐渐水解或氧化而变质酸败,使中性脂肪分解为甘油和脂肪酸,或使脂肪酸中的不饱和链断开形成过氧化物,再依次分解为低级脂肪酸、醛类、酮类等物质,而产生异臭和异味,有的酸败产物还具有致癌作用。

本发明在于提供一种花生调和炒菜油,相比传统的花生油,储存期更长。
一种花生调和炒菜油,由以下重量百分比原料组成:巴旦木油2-5%、番茄籽油5-8%、青刺果油1-3%、玉米胚芽油10-13%、西兰花提取物0.02-0.04%、马兰头提取物0.01-0.03%、冬瓜提取物0.02-0.04%、蜂胶提取物0.03-0.04、维生素C0.05-0.07%、余量为花生油。
进一步,由以下重量百分比原料组成:巴旦木油3-4%、番茄籽油6-8%、青刺果油2-3%、玉米胚芽油10-13%、西兰花提取物0.01-0.02%、马兰头提取物0.02-0.03%、冬瓜提取物0.02-0.04%、蜂胶提取物0.03-0.04、维生素C0.06-0.07%、余量为花生油。

本发明中:
巴旦木油,含有13种脂肪酸,棕榈酸、2-羟基十六酸、硬脂酸亚油酸、亚麻酸、油酸等。亚油酸、亚麻酸是人体必需脂肪酸,对于合成磷脂,形成细胞结构,维持一切组织的正常功能都是必需的。此外,亚油酸还具有预防胆固醇过高、改善高血压、预防心肌梗死、预防胆固醇造成的胆结石和动脉硬化的作用。亚麻酸可降解血栓,使血流顺畅,可使血压降低,还可抑制癌变的发生,消除亚油酸摄取过量病症。同时还具有改善过敏性皮炎、花粉症、气管哮喘等病症的作用。可见,巴旦木仁油可以作为营养保健油的优质原料。
番茄籽油,属高亚油酸食用油,并富含番茄红素和维生素E和维生素A的前体胡萝卜素。以物理压榨方式从新鲜番茄籽中提取的番茄籽油,因含番茄红素和各类油溶性维生素,对前列腺癌、消化道癌、宫颈癌、皮肤癌等疾病有明显的预防和抑制作用;常食番茄籽油,可调节人体的生理功能和人体发育,并可防止细胞老化,增强皮肤弹性,起到润肤美容作用,在食品和医药领域有广泛应用。
青刺果油,含丰富的维生素E、A等,其组成与人体脂类非常接近,营养学家誉为“可以吃的化妆品”和“人类补充必需脂肪酸的新来源”,是不可多得的纯天然高级健康保健品。含有多种人体易于吸收的脂溶性维生素、微量元素和大量人体必需的氨基酸,以及与人体脂质比例(1:1:1)非常接近的脂肪酸结构(1:1:0.8),因此其渗透性良好,易被皮肤吸收,可保持皮肤营养、水分和弹性,改善皮肤角质层的退化,修复粗糙肌肤。
玉米胚芽油,不饱和脂肪酸含量高达80%~85%。玉米油本身不含有胆固醇,它对于血液中胆固醇的积累具有溶解作用,故能减少对血管产生硬化影响。对老年性疾病如动脉硬化、糖尿病等具有积极的防治作用。由于天然复合维生素E的功能,对心脏疾病、血栓性静脉炎、生殖机能类障碍、肌萎缩症、营养性脑软化症均有明显的疗效和预防作用。玉米胚芽油中含有丰富的维生素A、D、E,其中维生素A对改善视力、促进上皮组织及骨骼的发育和胎儿的生长发育有很好的作用;维生素D能促进人体对钙的吸收,有助于儿童骨骼发育。 而丰富的维生素E,具有“柔肤美容”和“延缓衰老”的作用。
本发明以菜籽油为主,添加了巴旦木油、番茄籽油、青刺果油、玉米胚芽油用来调和,使得人体在食用时,还可享受巴旦木油、番茄籽油、青刺果油、玉米胚芽油的还来的保健效果。
本发明中的西兰花提取物,西兰花可能最显著的功效就是可以防癌抗癌,西兰花含维生素C较多,比大白菜、番茄、芹菜都高,尤其是在防治胃癌、乳腺癌方面效果尤佳。研究表明,患胃癌时人体血清硒的水平明显下降,胃液中的维C浓度也显著低于正常人,而西兰花不但能给人补充一定量的硒和维C,同时也能供给丰富的胡萝卜素,起到阻止癌前病变细胞形成的作用,抑制癌肿生长。据美国营养学家研究,西兰花内还有多种吲哚衍生物,此化合物有降低人体内雌激素水平的作用,可预防乳腺癌的发生。西兰花提取物中由于含有丰富的萝卜硫素,所以具有抗癌防癌、清除肺部细菌、防治痛风的功效,同时因为西兰花中各种其他营养成分,西兰花提取物同时有可以清除体内自由基、预防衰老、抗氧化的作用。
本发明中的马兰头提取物按照中国专利申请号为200910232357.1,公开的提取方法提取。其含有丰富的矿质元素和维生素及β-胡萝卜素,17种以上氨基酸,其中7种为人体必需。营养元素含量由高至低依次约为:K、Ca、Na、Mg、Zn、Fe、Cu、Li、Mn、Ni、V、Se、Co。
冬瓜提取物照中国专利申请号为200910232357.1,公开的提取方法提取。其中含有丰富的的蛋白质、碳水化合物、维生素以及矿质元素等营养成分。冬瓜维生素中以抗坏血酸、硫胺素、核黄素及尼克酸含量较高,具防治癌症效果的维生素B1,在冬瓜子中含量相当丰富;矿质元素有钾、钠、钙、铁、锌、铜、磷、硒等8种,其中含钾量显著高于含钠量,属典型的高钾低钠型蔬菜,对需进食低钠盐食物的肾脏病、高血压、浮肿病患者大有益处,其中元素硒还具有抗癌等多种功能;含有除色氨酸外的8种人体必需氨基酸,谷氨酸和天门冬氨酸含量较高,还含有鸟氨酸和Y-氨基丁酸以及儿童特需的组氨酸。
蜂胶提取物,主要有黄酮类、酚类、内酯、香豆精类、醛、酮、甾类化合物,还含有维生素B1、烟酸、维生素A原和多种氨基酸、糖、多糖等,及必需元素34种:氧、碳、氢、钙、磷、氮、钾、硫、钠、氯、镁、铁、钴、铜、钼、氟、铝、锡、硅、砷、硒、钛、钒、铬、镍、钡、锆、锑、镉、银、铅、锶等。蜂胶所含有的丰富而独特的生物活性物质,使其具有抗菌、消炎、止痒、抗氧化、增强免疫、降血糖、降血脂、抗肿瘤等多种功能,对人体有着广泛的医疗、保健作用。
本发明通过马兰头提取物、冬瓜提取物、蜂胶提取物中含有的丰富维C和胡萝卜素与单独添加的维C配合,来保证调和油花生调和炒菜油的抗氧化体系,保证油品的长期可食用。
具体实施方式
实施例1
一种花生调和炒菜油,由以下重量百分比原料混合后过滤而成:巴旦木油3.8%、番茄籽油7.2%、青刺果油2.4%、玉米胚芽油11%、西兰花提取物0.015%、马兰头提取物0.027%、冬瓜提取物0.023%、蜂胶提取物0.035%、维生素C0.066%、余量为花生油。
实施例2
一种花生调和炒菜油,由以下重量百分比原料混合后过滤而成:巴旦木油3.2%、番茄籽油6.6%、青刺果油2.5%、玉米胚芽油12%、西兰花提取物0.01-0.02%、马兰头提取物0.02-0.03%、冬瓜提取物0.02-0.04%、蜂胶提取物0.03-0.04%、维生素C0.062%、余量为花生油。
实施例3
一种花生调和炒菜油,由以下重量百分比原料混合后过滤而成:巴旦木油3.5%、番茄籽油6.7%、青刺果油2.8%、玉米胚芽油12%、西兰花提取物0.018%、马兰头提取物0.024%、冬瓜提取物0.023%、蜂胶提取物0.038%、维生素C0.068%、余量为花生油。
对比例1
一种花生调和炒菜油,由以下重量百分比原料混合后过滤而成:巴旦木油3.8%、番茄籽油7.2%、青刺果油2.4%、玉米胚芽油11%、西兰花提取物0.015%、维生素C0.066%、余量为花生油。
选取取实施例1-3、对比例1制得的花生调和炒菜油50ml,在30℃条件下暴露在空气中存放,分别检测观察10天,60天,100天后的过氧化值(mmol/kg)。检测方法按照中国专利申请号为201310166213.7,专利名称:一种食用油脂过氧化值测定组合试剂及检测方法,公开的方法测定。我国食用油分级管理的酸价和过氧化值卫生标准中,菜籽油、大豆油、花生油、葵花籽油、棉籽油、米糠油、油茶籽油、玉米油的过氧化值均应小于7.5。

Claims (3)
1.一种花生调和炒菜油,由以下重量百分比原料组成:
巴旦木油2-5%、番茄籽油5-8%、青刺果油1-3%、玉米胚芽油10-13%、西兰花提取物0.02-0.04%、马兰头提取物0.01-0.03%、冬瓜提取物0.02-0.04%、蜂胶提取物0.03-0.04、维生素C0.05-0.07%、余量为花生油。
2.根据权利要求1所述的一种花生调和炒菜油,其特征在于,由以下重量百分比原料组成:巴旦木油3-4%、番茄籽油6-8%、青刺果油2-3%、玉米胚芽油10-13%、西兰花提取物0.01-0.02%、马兰头提取物0.02-0.03%、冬瓜提取物0.02-0.04%、蜂胶提取物0.03-0.04、维生素C0.06-0.07%、余量为花生油。
3.根据权利要求1所述的一种花生调和炒菜油,其特征在于,由以下重量百分比原料组成:巴旦木油3.8%、番茄籽油7.2%、青刺果油2.4%、玉米胚芽油11%、西兰花提取物0.015%、马兰头提取物0.027%、冬瓜提取物0.023%、蜂胶提取物0.035%、维生素C0.066%、余量为花生油。
