Abstract
本发明提供了一种高营养速溶菜奶饮料,它用多
种蔬菜、牛奶,经浸渍、热烫、破碎、高速离心过滤、真
空浓缩及高压均质,最后用喷雾干燥的方式制得速溶
菜奶。本品克服了蔬菜、牛奶各自存在的营养缺陷,
营养更全面、更丰富、便于携带、贮存及饮用。
Description
本发明系一种新型天然高营养速溶饮料。
以往的饮料,如菜汁或牛奶均存在着营养上的缺陷。在中国医学科学院卫生研究所编著的【食物成份表】中可以看出,菜汁中含有丰富的矿物质、多种维生素、植物纤维素,但蛋白质含量较低;而牛奶中含有丰富的蛋白质、矿物质,却缺少维生素。此外,菜汁与牛奶均不利于贮存、携带。且目前的菜汁,口味也有待于改进。
本发明的目的是提供一种营养更全面、丰富且便于贮存、携带的固体高营养速溶饮料。其含有丰富的蛋白质、矿物质、多种维生素、天然植物纤维、脂肪、天然叶绿素等,并具有独特的、浓郁的香气、口感香甜。
在本发明中,蔬菜处理后做成菜汁与全脂牛奶混合均匀后,低温干燥,以保护天然存在之营养素。
本发明的具体特征将通过一个实例给予详细说明。
本发明不限于该实施例,本专业技术人员所公知的替换也是允许的。
实施例如下:
处理方法分成三步。
第一步:
首先是处理蔬菜。本品的制作采用多种蔬菜,如:

为了快速将菜洗净,最好用鼓泡式清洗机用流动的清水洗去菜上附着的泥土、杂物及残余的农药。而后在分选台上将蔬菜的黄败、腐烂的部分及根部去掉。将分选好的蔬菜放入含有0.25摩尔/升的碳酸钙的水中,在常温下浸泡3-5分钟左右。因为在蔬菜中含有大量的草酸,如此处理可去掉一部分草酸。注意在浸泡过程中要充分翻动,以便使菜的各个部分都充分浸渍到。
天然的叶绿素是由叶绿酸、叶绿醇及甲醇所组成的酯,是四吡咯螯合金属镁的衍生物。所以在酸性环境中极易脱镁(被氢取代)而生成褐色的脱镁叶绿素;或是由叶绿素酶作用脱去叶醇基发生酶变;以上作用均会使制品的色泽、风味、稳定性发生变化。为了防止这些情况出现,可在常温浸渍后将菜放入80℃含有0.005摩尔氢氧化钠溶液中保温3分钟以调整蔬菜的PH值及钝化酶防止上述现象发生。热烫后的蔬菜应迅速用冷水清洗、降温至常温,稍稍沥干后即用破碎机充分破碎成菜泥。
为了不过多地破坏菜泥中的天然物质,提高菜汁的出汁率及澄清度,可将破碎好的菜泥用转速在2000转/分左右的高速离心式过滤机并控制目数为50目离心过滤。得到的翠绿的含有大量植物纤维的菜汁还需要测量一下PH值,控制在PH=6.5-7(可用碳酸钠调整)。
调好PH值的蔬菜汁应用板式杀菌器在85℃下保持10-15秒进行巴氏杀菌,以防止酶的作用及细菌的污染。杀菌后的菜汁应速冷却至室温以防止过多地破坏维生素。冷却后的菜汁可用真空浓缩锅控温40℃,真空度约为94.7KPa(710mmHg)下浓缩至50°Bx以上即可。将浓缩液存入已杀过菌并充满无菌的氮气的贮罐中低温保存待用。
第二步:
牛奶的处理。本品可用全脂奶粉加入适量的白糖,用一定的蒸馏水充分的化开,再用60目的筛子除去杂质及小块物,制成甜奶液并按如下比例与第一步得到的菜汁充分混匀。

第三步:
按配方配好的混合液用高压均质机在9.8-18.6mp。(即100-190Kg/cm2)压力下把植物纤维素、脂肪球及不溶的蛋白强制分散成均质乳化分散液,并使其它组份充分混合均匀。均质后的菜奶液应在85°下保持10-15秒进行巴氏杀菌,而后急速冷却后再加入适量的维生素C及增稠剂(如糊精)。为了保证维生素不在干燥过程中遭到破坏,应采用低温干燥。可用喷雾干燥机在50℃-55℃下喷雾干燥即可。
本发明的优点在于,它将传统的蔬菜汁与牛奶有机地结合在一起,采用新技术,充分地保护了天然之营养素,并弥补了两者各自存在的营养缺陷,从而生产出营养更全面、更丰富、便于贮存、携带的速溶饮品。它的营养成份很丰富,含有大量的蛋白质、丰富的多种维生素(如VC、VA、VB1、VB2、尼克酸)、还有丰富的矿物质(如钙、磷、铁)、脂肪、天然植物纤维、天然叶绿素等,且香气浓郁、独特,口感极佳。
Claims (2)
1、一种高营养速溶菜奶,其特征在于将多种蔬菜进行处理,去除草酸,调整蔬菜的PH值以便保绿,用高速离心式过滤机离心过滤,而后采用真空浓缩、再用惰性气体(氮气)保存制得的天然菜汁。
2、根据权利要求1所述之高营养速溶菜奶的制作方法,是将已制得的菜汁再与全脂牛奶及其它辅料调配在一起,使用高压、均质、喷雾干燥的方法最终制成固体速溶菜、奶饮料。
