本发明涉及泡菜食品加工领域,主要是一种荷叶熏香大头菜泡菜。
背景技术
泡菜是中国传统的发酵蔬菜食品,是在一定浓度的食盐液中添加香辛料等辅料进行浸泡发酵,由以乳酸菌为主的菌群发酵制成,使其酸度达到0.3%-0.8%。在此过程中,以乳酸发酵为主,同时较少的酵母菌和醋酸菌也会进行较弱的酒精发酵和醋酸发酵,形成独特的风味。
蔬菜在经过腌渍及调味之后,有种特殊的风味,很多人会当作是一种常见的配菜食用,但传统泡菜的的香味多是香辛料的口味,没有特别的果香口感或者花香味的泡菜,而有很多人是不喜欢这种香辛料味道的,这就需要有多种口味的泡菜。另外现有泡菜的原料大多只有主料,营养不全面均衡,需要在泡菜原料内添加多种原料,以便提高营养。另外泡菜是指为了利于长时间存放而经过发酵的蔬菜,长时间的发酵过程中蔬菜的脆度不好,而食用不脆则影响口感,因而需要特别注意泡菜在发酵腌渍过程中的保脆工艺,来使泡菜最终达到一定的脆度。
大头菜含有维生素A、维生素B族、维生素C和维生素D很丰富,还含有大量的抗坏血酸,是活性很强的还原物质,参与机体重要的氧化还原过程,能增加大脑中氧含量,激发大脑对氧的利用,有提神醒脑,解除疲劳的作用。其次还有开胃消食的作用,最后还能明目利膈、宽肠通便,是因其组织较粗硬、含有胡萝卜素和大量食用纤维素。

大头菜350-360、根用甜菜40-50、荷叶10-12、米汤55-60、南瓜30-35、白糖5-6、麸醋2-2.4、米酒10-12、玉米须2-2.5、车前子2.2-2.7、蜜柑草2-2.5、红辣酱7-8、朝天椒10-11、瓜蒌仁1-1.2、味精4-4.5、盐27-29和水适量。

(1)将玉米须、车前子、蜜柑草混在一起,用3-4倍的水水提,过滤取中药水提液;
(2)将大头菜洗净后剔除不可食的部分,再将它们切成块状,然后再将切成的块状大头菜在83℃-86℃水中漂烫1分钟,而后再用少许盐腌渍;
(3)将根用甜菜剁碎后加水磨浆,过滤取浆液,再将南瓜剁碎混合浆液、米汤一起隔水蒸煮,蒸熟后搅拌捣烂,过滤取滤液;
(4)在无油的锅里加入适量的水(视泡菜坛大小),大火加热,水沸之后倒入步骤1的中药水提液,再煮3-5分钟后倒入米酒、麸醋、盐、味精、白糖及步骤3的滤液,搅匀后继续倒入红辣酱、朝天椒及瓜蒌仁,再次煮沸之后计算时间继续加热15-20分钟,之后关火,放到彻底冷却后调匀形成浸泡液;
(5)将荷叶洗净后风干,之后置于熏烤架上方用炭火烟熏8-10分钟待用;
(6)将步骤4的浸泡液先倒入泡菜坛内,再将步骤2最后腌渍的块状大头菜洗干净盐分,滤干水后层层放入到泡菜坛内压紧,每铺设有一层,则用步骤5烟熏的荷叶分层隔开,最后在距坛口2寸时为止,并用较大块的鹅暖石将装置的大头菜压紧,盖紧盖子密封封口后将泡菜坛置于阴凉处发酵一个星期左右即可得。
