背景技术
膳食纤维被称为第七大营养素,能鳌合消化道中的胆固醇、重金属等有害杂质,减少致癌物的产生,促进肠蠕动,预防结肠癌和便秘,同时在预防和改善冠状动脉硬化造成的心脏病,调节糖尿病的血糖水平,以及预防肥胖病和胆结石等方面,具有独特的保健作用。膳食纤维包括普通膳食纤维和高品质膳食纤维。普通膳食纤维只是一种无能量添充剂,其食品加工学特性不理想且生理活性较低,食入过多还会引起胃肠不适 。高品质膳食纤维可溶性纤维含量高,持油力、膨胀性、持水力等物性指标均高于普通膳食纤维,具有理想的加工工艺性能及较高的生理活性,在维持人体健康方面具有独特的作用。玉米皮作为玉米非淀粉组分,其主要成分是玉米膳食纤维(corn dietary fiber , CDF) ,未经处理的玉米膳食纤维是一种普通膳食纤维。目前将普通膳食纤维改进为高品质膳食纤维的生产方法有酸碱法、酶法、高压蒸煮法、超细粉碎等。酸碱法处理时由于反应强烈几乎损失了全部的水溶性纤维,产品品质及生理活性均较低,而且环境污染严重;酶法作用条件温和,有利于最大限度地保留功效成分,但耗时长,设备投资大;普通膳食纤维超细粉碎虽然物料粒度极大降低,但其刚性未减弱,溶胀能力无明显增加。挤出处理不但明显提高可溶性纤维含量,增加膨胀力与持水力,而且不会引起膳食纤维过度降解或破坏。玉米纤维粒度对其吸脂力、膨胀性等功能特性具有重要影响,挤出功能化处理条件不同,粒度对纤维物性影响趋势相似。当粒度为0.125mm (120目)时,所有测试样的吸脂力、膨胀性、持水力、结合水力均处于最高值。按玉米纤维加水量110% 、挤出温度180℃、喂料速度10kg/h条件1次挤出处理后粉碎粒度为120目时,产品吸脂力最大,综合物性最佳,可溶性粗多糖提取率约高于对照样50倍,可用于减肥调脂功能食品的生产基料。
发明内容
本发明目的是为了提供一种醋制玉米膳食纤维粉,以此为处于肥胖或想保持良好身材的广大受众提供更多饮食上的选择。
本发明是通过以下技术方案实现的:
一种醋制玉米膳食纤维粉,其特征在于它是由下述重量份原料制成:
玉米500~550、咖啡豆30~35、生姜20~25、胡萝卜100~120、白醋30~35、玫瑰花10~15、木瓜100~120。
一种醋制玉米膳食纤维粉的制备方法,包括以下步骤:
1)、将湿玉米皮用流动水充分漂洗,除去残余淀粉、小颗粒胚乳等非纤维成分及不可食杂质,所得湿玉米皮在转速为3000r/min 的条件下离心脱水5min ,使其含水量低于26%,然后60℃以下热风烘干,使其含水量低于12%,粉碎至 120目;
2)、将采用超临界CO2流体萃取技术对步骤1进行脱脂、脱色及脱异味处理,萃取压力25MPa ,萃取温度45℃,萃取时间90min ,CO2流量22L/h ,超临界CO2 流体萃取后其脂肪含量低于0.1% ,色泽乳白,无异杂味;

玉米皮是玉米加工企业的主要副产物之一,其主要的成分是玉米膳食纤维。膳食纤维是指不能被人体消化道分泌的消化酶所消化的多糖之总称。包括木质素、纤维素、半纤维素和果胶等。具有较强的持油持水能力,增容作用和诱导微生物的作用,能螯合消化道中的胆固醇、重金属等有害物质,减少致癌物质的产生并促进肠蠕动,预防结肠癌和便秘,同时在预防和改善冠动脉硬化造成的心脏病,调节糖尿病的血糖水平,以及预防肥胖病和胆结石等方面,具有独特的保健作用。
玫瑰花含丰富的维生素A、C、B、E、K,以及单宁酸,能改善内分泌失调,对消除疲劳和伤口愈合也有帮助。玫瑰花是一种珍贵的药材,美容养颜,通经活络,软化血管,对于心脑血管,高血压,心脏病及妇科有显著疗效。
木瓜含有番木瓜碱、木瓜蛋白酶、木瓜凝乳酶、番茄烃、维生素B、C、E、糖分、蛋白质、脂肪、胡萝卜素、隐黄素、蝴蝶梅黄素、隐黄素环氨化物等。助消化之余还能消暑解渴、润肺止咳。它特有的木瓜酵素能清心润肺还可以帮助消化、治胃病,它独有的木瓜碱具有抗肿瘤功效,对淋巴性白血病细胞具有强烈抗癌活性。
本发明的优点是:
1、本发明所采用的原料其有效成分具有减肥调脂、润肺止咳、美容养颜、软化血管、预防疾病等保健功能。
2、本发明将玉米皮通过超临界CO2流体萃取技术粉碎至120目,使其吸脂力、膨胀性、持水力、结合水力均处于最高值,将膳食纤维的功能性发挥到最佳水平,极有利于减肥调脂。
3、本发明的一种醋制玉米膳食纤维粉具有提神解乏、冲泡即饮、口味独特等特点。
具体实施方式
下面通过具体实施例进一步说明本发明。
实施例一
一种醋制玉米膳食纤维粉,其特征在于它是由下述重量份原料制成:
玉米500~550、咖啡豆30~35、生姜20~25、胡萝卜100~120、白醋30~35、玫瑰花10~15、木瓜100~120。
一种醋制玉米膳食纤维粉的制备方法,包括以下步骤:
1)、将湿玉米皮用流动水充分漂洗,除去残余淀粉、小颗粒胚乳等非纤维成分及不可食杂质,所得湿玉米皮在转速为3000r/min 的条件下离心脱水5min ,使其含水量低于26%,然后60℃以下热风烘干,使其含水量低于12%,粉碎至 120目;
2)、将采用超临界CO2流体萃取技术对步骤1进行脱脂、脱色及脱异味处理,萃取压力25MPa ,萃取温度45℃,萃取时间90min ,CO2流量22L/h ,超临界CO2 流体萃取后其脂肪含量低于0.1% ,色泽乳白,无异杂味;
3)、将咖啡豆与生姜、白醋、玫瑰花等混合,加入等倍量水,浸泡3~5小时,再打磨成浆状,并与压榨成汁状的胡萝卜、木瓜等混合;
4)、将步骤2、步骤3混合,加入3~5倍量水,煮至20~30分钟,然后进行喷雾干燥,封装干燥保存。
Claims (2)
1.一种醋制玉米膳食纤维粉,其特征在于它是由下述重量份原料制成:
玉米500~550、咖啡豆30~35、生姜20~25、胡萝卜100~120、白醋30~35、玫瑰花10~15、木瓜100~120。
2.根据权利要求1所述的一种醋制玉米膳食纤维粉,其特征在于是由下列步骤制成的:
