本发明属于食品加工领域,具体涉及一种保健鱼油果冻及其制备方法。包括:鱼油2‑5份,有机酸0.01‑0.1份,木糖醇3‑10份,蜂蜜0.5‑2份,山梨酸钾0.01‑0.03份,乳化剂0.01‑0.12份,稳定剂0.0008‑0.0011份,100%浓缩果汁3‑10份,食品级甘油0.05‑0.2份,食用胶2‑8份,所述比例为质量比。本发明克服了鱼油易氧化不易保藏的缺陷,将鱼油很好的分散在胶体系中,做成果冻,掩饰鱼油腥味,提高消费者可接受性,营养美味又易于人体消化吸收。
Description
技术领域
本发明属于食品加工领域,具体涉及一种保健鱼油果冻及其制备方法。
背景技术
鱼油中富含人体所必须的二十二碳六烯酸(DHA)和二十碳五烯酸(EPA)等多不饱和脂肪酸,它们具有多种生理功能,如预防心脑血管疾病,降低人体内血清胆固醇含量、抑制炎症、抗凝血和增强人体免疫以及抗癌等,尤其是能促进婴幼儿智力发育,提高视力并为孕期妇女补充DHA,促进钙的吸收,帮助老年人延缓大脑萎缩防止大脑功能衰退,具有很好的保健作用。
鱼油在常温呈液态,有鱼腥味不易被消费者接受,并且由于EPA和DHA具有高度不饱和性,对氧、光和热都极为敏感,使得鱼油非常容易氧化而丧失其生理功能和营养价值,不易保存,大大限制了鱼油在食品工业领域中的应用。现在市面上销售的鱼油产品较少,大都是鱼油软胶囊,需用水吞咽,鱼腥味较大。
果冻以其爽滑的口感和宜人的口味备受广大消费者特别是少年儿童的青睐,成为当今一种流行的休闲食品。市售的果冻大都以食用胶、水、甜味剂、酸味剂、香精和果汁等配制而成,亦称啫喱。外观晶莹透亮,色泽鲜艳,口感软滑。果冻种类繁多,如水果果肉果冻、果汁果冻、奶味果冻、什锦果冻等。传统果冻能满足人们口感上的享受,但其营养价值不高,无保健功效。
发明内容
为解决上述现有技术中存在的不足,本发明提供一种具有保健功能的鱼油果冻及其制备方法,所用的鱼油为深海鱼油,DHA含量为26%,EPA含量为30%,克服了鱼油易氧化不易保藏的缺陷,将鱼油很好的分散在胶体系中,做成果冻,掩饰鱼油腥味,提高消费者可接受性,营养美味又易于人体消化吸收。
为解决上述技术问题,本发明提供了一种保健鱼油果冻,包括:鱼油2-5份,有机酸0.01-0.1份,木糖醇3-10份,蜂蜜0.5-2份,山梨酸钾0.01-0.03份,乳化剂0.01-0.12份,稳定剂0.0008-0.0011份,100%浓缩果汁3-10份,食品级甘油0.05-0.2份,食用胶2-8份,所述比例为质量比。
进一步地,所述的鱼油为深海鱼油,DHA含量为20%-26%,EPA含量为25%-30%;进一步优选为DHA含量为26%,EPA含量为30%。
进一步地,所述食用胶体系为食用级魔芋胶、琼脂、卡拉胶、果胶、明胶、黄原胶的一种或数种混合物。
进一步地,所述稳定剂为羟甲基纤维素钠(CMC)。
进一步地,所述有机酸为柠檬酸、苹果酸、酒石酸、异柠檬酸中的一种或几种的混合物;所述100%浓缩果汁为浓缩柠檬汁、浓缩西柚汁、浓缩橙汁、浓缩芒果汁、浓缩苹果汁、浓缩桃汁中的一种或几种的混合物。
一种制备本发明所述的保健鱼油果冻的方法,由以下步骤组成:(1)鱼油乳状液制备: 称取0.1-0.6kg明胶和黄原胶混合物,所述明胶和黄原胶质量比为1:1;加入20倍的去离子水,于50-60℃搅拌溶解10-20分钟,冷却至30-40℃,加入0.2-0.5kg鱼油,0.005-0.02kg食品级甘油,乳化剂于高速分散均质机均质5-10分钟,均质压力为25MPa-40MPa,形成均匀的明胶黄原胶—鱼油乳化液;(2)食用胶体系的制备:称取0.1-0.2kg食用胶,加入100倍去离子水,先在10-20℃冷水中溶胀30分钟,然后于100℃煮胶10-20分钟,冷却至35-40℃备用;(3)按照权利要求1所述比例将步骤(1)制备得到的明胶黄原胶—鱼油乳化液、木糖醇、100%浓缩柠檬汁、蜂蜜、有机酸,羟甲基纤维素钠、山梨酸钾缓慢加入步骤(2)制备的食用胶体系中,搅拌均匀,冷却至室温即可。所述鱼油乳状液中明胶和黄原胶占乳状液质量的3%-5%。
步骤(1)进一步优化为取:为称取0.4kg明胶和黄原胶,明胶和黄原分别为0.2kg,加入20倍的去离子水,于60℃搅拌溶解20分钟,冷却至30℃,加入0.4kg鱼油,0.01kg食品级甘油,乳化剂于高速分散均质机均质10分钟,均质压力为30MPa-35MPa,形成均匀的明胶黄原胶—鱼油乳化液。
步骤(2)进一步优化为:称取0.15kg食用胶体系,0.5kg木糖醇混合均匀并加入100倍去离子水,先在15℃冷水中充分溶胀30分钟,然后于100℃下煮胶20分钟,冷却至40℃备用,所述食用胶体系为食用级魔芋胶、琼脂、卡拉胶、果胶、明胶、黄原胶的一种或数种混合物。
步骤(3)进一步优化为:将步骤(1)制备得到的明胶黄原胶—鱼油乳化液、0.1kg蜂蜜、0.003kg有机酸、0.05kg100%浓缩果汁,0.0006kg羟甲基纤维素钠,0.002kg山梨酸钾缓慢加入步骤(2)制备的食用胶体系中,搅拌均匀,冷却至室温即可。
食用胶体系组成:
魔芋胶:魔芋胶是从各种魔芋属植物的块茎里提取出的水凝胶状多糖,是一种高分子量、非离子型葡甘露聚糖。魔芋胶具有良好的水溶性、持水性、成膜性、胶黏性等特性,可防止食品脱水,抑制粗大冰晶生成,改善雪糕、冰激凌的口感。魔芋胶还有一定的保健功能即对糖尿病、肥胖症、高血压、结肠癌及心脑血管疾病具有一定的治疗预防作用。
琼脂:学名琼胶,又名洋菜、冻粉、洋粉、寒天。琼脂是一种存在于红藻族中某些红紫色海藻细胞壁中的碳水化合物,是从石花菜属、江蓠藻属和鸡毛菜属等品种的红藻中提取的多糖。琼脂在工业上具有独特的重要性,含量低至1%仍能行成相当稳定的凝胶。
卡拉胶:卡拉胶是从红藻的角叉菜属、麒麟菜属、杉菜属及沙菜属等品种海藻中提取的海藻多糖的统称。卡拉胶具有亲水胶体、凝胶、增稠、乳化、成膜、稳定分散等诸多物理化学特性,所以可用作胶凝剂、乳化剂、增稠剂或悬浮剂等广泛应用在食品工业、日化工业及生化、医学研究等领域中。在果冻中可用作胶凝剂。
果胶:果胶是植物中的一种酸性多糖物质,它通常为白色至淡黄色粉末,稍带酸味,具有水溶性。果胶的胶凝性给果冻增加弹性和韧性的组织,并可补充天然果胶不足,减少胶体的脱水收缩,增添香味,使口感润滑爽口,用量为0.3%-0.8%
明胶:明胶广泛存在于动物皮、筋、骨骼中的胶原蛋白质,是一种从动物的结缔或表皮组织中的胶原部分水解出来的蛋白质,含有甘氨酸、脯氨酸及羟脯氨酸等人体所需的18种氨基酸。明胶不溶于有机溶剂,不溶于冷水,在冷水中吸水膨胀至自身的5-10倍,易溶于温水,冷却形成凝胶,所以通常利用它制作果冻和甜点。
黄原胶:又称黄胶、汉生胶,是以玉米淀粉、蔗糖等为主要原料,经生物工程方法得到的一种高分子微生物阴离子多糖,可以溶于冷水和热水中,由于它的高黏度、高耐酸、碱、盐特性和高耐热稳定性,经常用于食品、医药、化妆品等中作为增稠剂和稳定剂。
效果分析:本产品不含蔗糖和人工合成的香精色素,适合不同人群食用,果冻晶莹剔透、味道清新、酸甜适中、凝胶强度佳,入口细腻有弹性、有嚼劲并且持水性强,贮藏7天后未见明显析水。在为人体补充鱼油中的营养成分同时又克服了鱼油易氧化不易保藏的缺陷。鱼油稳定性较好,在常温下存放14天后,鱼油POV值由70.12(meq/Kg)变为72.27(meq/Kg),EPA和DHA保留率均在95%以上,鱼油被很好的分散在胶体系中,较好的掩盖了鱼腥味,提高消费者的可接受性,营养美味又易于人体消化吸收健脑益智,有辅助降血压降血脂,辅助孕期妇女钙吸收。
具体实施方式
为使本发明的目的、技术方案及效果更加清楚、明确,以下对本发明进一步详细说明。应当理解,此处所描述的具体实施例子仅用以解释本发明,并不用于限定本发明。
实施例1:
一种保健鱼油果冻,包括:鱼油乳状液4.82kg(明胶1kg、黄原胶1kg、鱼油2.5kg、甘油0.2kg、乳化剂0.12kg), 稳定剂0.8g,食用胶体系2kg(卡拉胶:琼脂:果胶=5:3:2), 木糖醇10kg,100%浓缩柠檬汁4kg,柠檬酸0.04kg,蜂蜜2kg,山梨酸钾0.02kg。
由以下步骤制备而成:(1)称取2kg明胶和黄原胶混合物,明胶和黄原胶分别为1kg,加入20倍的去离子水,于60℃搅拌溶解20分钟,冷却至30℃,加入2.5kg鱼油,0.2kg食品级甘油,0.12kg乳化剂于高速分散均质机均质10分钟,均质压力为32MPa,形成均匀的明胶黄原胶—鱼油乳化液。
(2)称取2kg食用胶体系,10kg木糖醇混合均匀并加入100倍去离子水,先在15℃冷水中充分溶胀30分钟,然后于100℃下煮胶20分钟,冷却至40℃备用,所述食用胶体系为卡拉胶:琼脂:果胶质量比为5:3:2的混合物。
(3)将步骤(1)制备得到的明胶黄原胶—鱼油乳化液、2kg蜂蜜、0.04kg有机酸、4kg100%浓缩柠檬汁,0.8g羟甲基纤维素钠,0.02kg山梨酸钾缓慢加入步骤(2)制备的食用胶体系中,搅拌均匀,冷却至室温即可。
实施2:
一种保健鱼油果冻,包括:鱼油乳状液4.82kg(明胶1kg、黄原胶1kg、鱼油2.5kg、甘油0.2kg、乳化剂0.12kg), 稳定剂0.9g,食用胶体系1.8kg(卡拉胶:琼脂:魔芋胶=4:3:3),木糖醇10kg,100%浓缩果汁4kg(柠檬汁:芒果汁:西柚汁=2:1:1),有机酸0.04kg(柠檬酸:苹果酸=1:1),蜂蜜2kg,山梨酸钾0.02kg。
由以下步骤制备而成:(1)称取2kg明胶和黄原胶混合物,明胶和黄原胶分别为1kg,加入20倍的去离子水,于60℃搅拌溶解20分钟,冷却至30℃,加入2.5kg鱼油,0.2kg食品级甘油,0.12kg乳化剂于高速分散均质机均质10分钟,均质压力为32MPa,形成均匀的明胶黄原胶—鱼油乳化液。
(2)称取1.8kg食用胶体系,10kg木糖醇混合均匀并加入100倍去离子水,先在15℃冷水中充分溶胀30分钟,然后于100℃下煮胶20分钟,冷却至40℃备用,所述食用胶体系为卡拉胶:琼脂:魔芋胶质量比为4:3:3的混合物。
(3)将步骤(1)制备得到的明胶黄原胶—鱼油乳化液、2kg蜂蜜、0.04kg有机酸、4kg100%浓缩果汁,0.9g羟甲基纤维素钠,0.02kg山梨酸钾缓慢加入步骤(2)制备的食用胶体系中,搅拌均匀,冷却至室温即可。

Claims (9)
1.一种保健鱼油果冻,其特征在于包括:鱼油2-5份,有机酸0.01-0.1份,木糖醇3-10份,蜂蜜0.5-2份,山梨酸钾0.01-0.03份,乳化剂0.01-0.12份,稳定剂0.0008-0.0011份,100%浓缩果汁3-10份,食品级甘油0.05-0.2份,食用胶2-8份,所述比例为质量比;
所述的鱼油为深海鱼油,DHA含量为20%-26%,EPA含量为25%-30%;
所述鱼油果冻在常温下存放14天后,EPA和DHA保留率均在95%以上。
2.如权利要求1所述的保健鱼油果冻,其特征在于:所述食用胶为食用级魔芋胶、琼脂、卡拉胶、果胶、明胶、黄原胶的一种或数种混合物。
3.如权利要求1所述的保健鱼油果冻,其特征在于:所述稳定剂为羟甲基纤维素钠。
4.如权利要求1所述的保健鱼油果冻,其特征在于:所述有机酸为柠檬酸、苹果酸、酒石酸、异柠檬酸中的一种或几种的混合物;所述100%浓缩果汁为浓缩柠檬汁、浓缩西柚汁、浓缩橙汁、浓缩芒果汁、浓缩苹果汁、浓缩桃汁中的一种或几种的混合物。
5.一种制备如权利要求1所述的保健鱼油果冻的方法,其特征在于由以下步骤组成:(1)鱼油乳状液制备: 称取0.1-0.6kg明胶和黄原胶混合物,所述明胶和黄原胶质量比为1:1;加入20倍的去离子水,于50-60℃搅拌溶解10-20分钟,冷却至30-40℃,加入0.2-0.5kg鱼油,0.005-0.02kg食品级甘油,乳化剂于高速分散均质机均质5-10分钟,均质压力为25MPa-40MPa,形成均匀的明胶黄原胶—鱼油乳化液;(2)食用胶体系的制备:称取0.1-0.2kg食用胶,加入100倍去离子水,先在10-20℃冷水中溶胀30分钟,然后于100℃煮胶10-20分钟,冷却至35-40℃备用;(3)按照权利要求1所述比例将步骤(1)制备得到的明胶黄原胶—鱼油乳化液、木糖醇、100%浓缩果汁、蜂蜜、有机酸,羟甲基纤维素钠、山梨酸钾缓慢加入步骤(2)制备的食用胶体系中,搅拌均匀,冷却至室温即可。
6.如权利要求5所述的保健鱼油果冻的制备方法,其特征在于:所述鱼油乳状液中明胶黄原胶占乳状液质量的3%-5%。
7.如权利要求5所述的保健鱼油果冻的制备方法,其特征在于:所述步骤(1)为称取0.4kg明胶和黄原胶,明胶和黄原胶分别为0.2kg,加入20倍的去离子水,于60℃搅拌溶解20分钟,冷却至30℃,加入0.4kg鱼油,0.01kg食品级甘油,乳化剂于高速分散均质机均质10分钟,均质压力为30MPa-35MPa,形成均匀的明胶黄原胶—鱼油乳化液。
8.如权利要求5所述的保健鱼油果冻的制备方法,其特征在于:所述步骤(2)为称取0.15kg食用胶体系,0.5kg木糖醇混合均匀并加入100倍去离子水,先在15℃冷水中充分溶胀30分钟,然后于100℃下煮胶20分钟,冷却至40℃备用,所述食用胶体系为食用级魔芋胶、琼脂、卡拉胶、果胶、明胶、黄原胶的一种或数种混合物。
9.如权利要求5所述的保健鱼油果冻的制备方法,其特征在于:所述步骤(3)为将步骤(1)制备得到的明胶黄原胶—鱼油乳化液、0.1kg蜂蜜、0.003kg有机酸、0.05kg100%浓缩果汁,0.0006kg羟甲基纤维素钠,0.002kg山梨酸钾缓慢加入步骤(2)制备的食用胶体系中,搅拌均匀,冷却至室温即可。
