Abstract

Description
技术领域
本发明涉及一种保健露酒,尤其是增强机体免疫力的保健露酒,还涉及该保健露酒的制作方法。
背景技术
随着生活节奏的加快,工作日趋繁忙,人们的免疫力逐渐下降,抵抗疾病能力差。目前虽然有很多增强机体免疫力的露酒,但现有技术是常采用枸杞、红枣、黄精、龙眼等食用材料,和甘草、菊花、茶多酚精华等药用食物。该种露酒用上述辅料制成虽是用食用或入药的品种,但均不具有理想的滋补五脏和补脾益气等功能。因为以食用酒精为酒基,加入药食同源辅料和添加剂。添加剂均为酸味剂,如冰乙酸等;甜味剂如三氯蔗糖等,含不同程度的毒性人工色素,人服用后有毒副作用,效果不能令人满意。用上述方法制作的露酒有:竹叶青酒,参茸酒、三鞭酒、虫草酒和灵芝酒等多种品种。这些露酒用食用酒精为基酒,酒精度60~70度浸泡,不利于辅料有效成分浸出,采用全发酵和蒸馏的方法制作,容易蒸发辅料中的活性成分。而采用辅料和添加剂再调配混合等方法制作的露酒,不易将辅料内的活性成份大量提出,严重影响服用后的活性成份的吸收。露酒质量相对低,且味感也很不理想。
中国专利公开号101984035A的名称为“保健酒与其制备方法”,采用30度大曲酒作为酒基,而采用牛肾、羊肾、蛇鞭、肉桂、黄精、覆覆盆子、甘草、丁香、虫草菌、山药、牡蛎、木瓜、大枣、枸杞子、龙眼肉、蜂蜜和冰糖为辅料,并通过浸提的方法将辅料内的活性成份提出后与酒基混合,再加上与炼蜜混合的步骤,该种保健酒虽然采用黄精、枸杞子、甘草、山药,但对于中草药材而言,多种药物组合后存在相生、相须、相畏或相杀等相互作用关系。
制作保健酒的辅料中,包含诸多国家规定的药用原料不能作为食品级产品生产。而作为保健食品生产,需经国家相关部门诸多安全性检验审批,未知因素太多,较难进入工业化生产和推广。且食物和药物也存在相克关系,即便该保健酒中的食物如牛肾、羊肾,蛇鞭、牡蛎、木瓜、大枣和龙眼肉等食物,与甘草、丁香、肉桂和虫草菌等药物没有非常明确的相克的技术启示,但因黄精本身就具有补肝肾和补益脾气的作用,所以在枸杞子这种原料的基础上再添加一些牛肾、羊肾,蛇鞭等补肾食物和木瓜、大枣、龙眼肉等食物,也不会再增强补肾功能。该浸提方法用30度大曲浸泡提出,制备保健辅料最好的溶剂是酒,但酱香型和浓香型大曲白酒不太适宜,缺点是不能更好更全面提出有效成分,溶解有效成分率非常低,而无效成分率高,加上牛肾,羊肾、蛇鞭更加不易溶解出有效成分,使有效成分变性。从而造成制作成本的提高和资源浪费,口感也不很理想。
发明内容
本发明的任务是,提供一种增强机体免疫力的保健露酒,在这一任务中解决以往辅料有效成分提取率低、而无效成分提取率高的问题,同时安全有效不用添加剂,减少资源浪费并降低生产成本,产品要具有滋补五脏和健脾益气的功效。
本发明的第二个任务是提供该保健露酒的制作方法。
完成本发明任务所采用的技术方案是:增强机体免疫力的保健露酒,由酒基和辅料制备而成,酒基为酒精度30~38度白酒,白酒用量是辅料重量的10~12倍,辅料由下述重量份的原料组成:
枸杞苗10~30份,枸杞子10~30份,山药10~30份,玉竹5~10份,
酒黄精5~30份,茯苓10~20份,炙甘草2~5份,山楂7~40份,
罗汉果10~30g,炒栀子5~15份。
保健露酒,辅料由下述重量份的原料组成:
枸杞苗15~25份,枸杞子15~25份,山药15~25份,玉竹10~15份,
酒黄精10~20份,茯苓10~15份,炙甘草2~3份,山楂10~30份,
罗汉果15~25份,炒栀子5~10份。
增加机体免疫力的保健露酒的制作方法,用山楂替代酸味剂,黄精、栀子和罗汉果替代着色剂,罗汉果替代甜味剂;用低度冷浸法工艺30~38度小曲酒浸提,操作步骤如下:
1)辅料炮制,原料去杂、干净,切片或粉碎;
2)将炮制后的枸杞子,枸杞苗,山药,玉竹,酒黄精,茯苓,炙甘草,山楂,按质量百分比混合后,浸泡于酒精度30~38度白粮酒中,白酒用量是辅料质量7~8倍,温度10~30℃,浸泡时间25~30天,每天搅拌一次,搅拌时间10~15分钟;提取上清液,药渣压榨再澄清,经过滤澄清后与前液混合,作为提取液备用;
3)将罗汉果、炒栀子分别浸泡在30~38度白酒中,白酒用量是药材质量3~4倍,
每天搅拌10~15分钟,浸泡25~30天,提取上清液作为着色剂,药渣再压榨、澄清,药液经过滤后进一步澄清备用;
4)将上述两次过滤的澄清酒液勾兑,配比是第2)步提取液75~85份;罗汉果液5~10份,栀子液5~15份,混合后再加入槐花蜂蜜5份,搅拌均匀,放置温度10~35℃室内,陈化2~3个月;
5)将陈化后的酒液过滤,直至酒液清亮透明,得棕色、淡香、微甜营养酒液,即成品。
本发明采用低度冷浸法工艺产生的积极效果:
1、本产品中辅料的主要功效成分为皂苷类,多糖类等。如浸提的酒精度过高,多糖类等高级功效成分不易浸出,且一些蛋白质成分容易凝结、变性,不利于可溶性成分的浸出。本产品采用30~38度白酒(小曲)浸泡辅料,有利于浸出更多更全面的功效成分。解决了以往辅料有效成分提取率低、无效成分提取率高的问题,减少资源浪费并降低生产成本。
2、本设备结构简单,造价低,节省能源。
3、操作简单,易于掌握。
本发明保健露酒具有以下的有益效果:一是所用药材均为常见药食同源材料,安全无毒副作用;二是露酒色泽净雅,性温和,口味醇正,易为人们接受;三是不含任何化学成分的色素、香精及添加剂;具有滋补五脏、健脾益气,增强机体免疫力的功效。我厂“大力神”系列保健酒利用本发明配方配制露酒己推广上市,得到消费者的好评。
临床试验,用于说明本发明的应用效果。
1、研究对象概况:研究对象来自于2009年7月至2010年7月登记并排除部分对象余下的人员280人,其中男性152人,女性128。年龄25~58岁。实验共分为7组(实验组6组,对照组1组,每组40人)。
症状:易感冒、易感染、疲乏无力、胃口不佳、消化不良、腹泻或便秘、失眠多梦、胸中痞闷、消喝(口渴嗌干、多食易饥)等症。
2、排除标准
1)对酒精过敏,或不宜饮酒者。
2)由心血管,脑血管、精神病者,肝、肾和造血系统,肿瘤、手术等疾病引起免疫力低下者。
3)妊娠或哺乳期妇女。
4)在治疗期间同时接受其他治疗或未能完成疗程者。
3、实验方法:1~6组为饮酒组,每次30ml,每天一次。第7组为对照。
对照组口服维生素C+E软胶囊(深圳市海康源生物科技有限公司),0.5g/日一次,口服,各组均4周为一个疗程,一个疗程后观察统计疗效。
4、观察指标:
不良反应,服用过程中,患者若出现恶心、呕吐、腹痛、腹泻等胃肠反应,或出现皮肤红斑和血疹伴瘙痒等过敏反应,以及口干、咽炎、口角炎、舌炎等为药物所致的不良反应,立即停止服用。在服用药酒的4周中,各组被调查对象均未出现不良反应。
做血常规化验,白细胞、中性粒细胞、淋巴细胞化验是否正常。
5、疗效标准:
治愈:全身症状良好,症状基本消失。
显效:自觉症状明显改善。
有效:自觉症状有所改善。

具体实施方式
1、药食同源的辅料炮制,原料去杂去核、干净,初制,切片或粉碎
玉竹:洗净、切厚片。
黄精:洗净,用黄酒拌匀,置炖药罐内、密闭,隔水加热、至酒被吸尽,或置适当容器内蒸至黑色,内滋润为度,取出,晒至外表稍干,切厚片。每黄精100kg,用黄酒20kg比例。
枸杞子:去除杂质,异物,灰尘后,放入温度为60℃干燥箱24小时干燥后,粉碎为60目的粗颗粒备用。
山楂:去除杂质,异物和灰尘后,山楂须去核。
罗汉果:去除表面杂质,异物和灰尘,要成熟品。
炙甘草:除去杂质,取炼蜜用适量开水稀释,加入拌匀,用文火炒或烤至表面棕黄色,不粘手为度。每100kg甘草,用炼蜜25kg比例。
炒栀子:除去杂质,异物。碾碎用文火炒至深黄色,取出摊凉备用。
实施例1
验收30度的白粮酒与各类中药材,将各类药材时行炮制。
1)将炮制后的枸杞子30g,枸杞苗30g,山药30g,玉竹20g,酒黄精30g,茯苓20g,炙甘草5g,山楂40g,按质量百分比混合后,浸泡于酒精度38度的白粮酒中,白粮酒用量是辅料重量7倍,温度10~30℃,浸泡时间30天,每天搅拌一次,时间为10~15分钟。提取上清液,药渣压榨再澄清,上清液经过滤澄清备用。
2)将罗汉果30g,炒栀子15g分别浸泡在90g、45g酒精度38度的白粮酒中30天(白粮酒用量为药材重量的3倍),提取上清液,药渣再压榨、澄清,药液经过滤后进一步澄清备用;
3)将上述两次过滤的澄清酒液勾兑,再加入槐花蜂蜜5%搅拌均匀,放置温度10~35℃室内陈化2~3个月。
4)将陈化后的酒液进行过滤,直至酒液清亮透明,得棕色、淡香、微甜营养酒液即成品。
实施例2
制备方法与实施例1基本相同,不同之处是辅料配方:
枸杞子15g,枸杞苗15g,山药15g,玉竹10g,酒黄精15g,茯苓15g,
炙甘草2.5g,山楂25g,罗汉果15g,炒栀子7.5g。

枸杞子10g,枸杞苗10g,山药10g,玉竹3g,酒黄精5g,茯苓3g,
炙甘草0.5g,山楂10g,罗汉果10g,炒栀子1.5g。
各种药物的成分、药理作用及功效
玉竹:含甾体皂苷、黄酮及糖苷。氨基酸、VA等成分具有促进抗体生成,促进干扰素合成达到降血糖、降血脂,延长耐缺氧时间,强心、抗氧化、搞衰老等作用。《神农本草经》性味:甘、微寒、补肺胃心阴,清肺胃心阴、清肺胃心热。
黄精:含黄精多糖,吖丁啶羟酸具有提高机体免疫功能。《名医别录》性味:甘、平、补肺肾、脾阴益肾精、补脾气。
枸杞子:含甜菜碱,多糖,VC、VB1、VB2、胡萝卜素及氨基酸具有促进调节免疫功能。《神农本草经》性味:甘、平、补肝肾阴、益精、明目。
山楂:含金丝桃苷,芦丁素等黄酮类化合物和多种有机酸,具有提高免疫力。《新修本草》性味:酸、甘、微温,消食化积,活血散瘀。
山药:含薯蓣皂苷元,胆碱,等成分具有双向调节离体肠管运动,促进细胞免疫和体液免疫功能。《神农本草经》性味:甘、平、补脾肺肾气,益脾肺肾阴。
茯苓:含茯苓聚糖,三萜类化合物,蛋白、卵磷脂,胆碱钾盐,有明显增强免疫功能,对肝脏损伤具有保护作用。《神家本草经》性味:甘、淡、利水渗湿宁心安神。
罗汉果:含多糖,具有保肝,提高免疫功能。罗汉果味极清甜。比白糖糖甜度约高300倍。可作糖尿病患者的甜食使用。性味:甘、凉、止咳,注意到肠,清热。
炙甘草:含甘草甜素和多种黄酮成分,有抗酸和缓解胃肠平滑肌痉挛作用。一种健脾益气之药。《神农本草经》性味甘、微补心脾气,止咳去痰平喘缓急止痛,清热解毒。调和药性。蜜炙药性较微温,并可增强补益心脾之气和止咳作用。
栀子:含栀苷,羟异栀子苷、栀子素、藏红花素、藏花酸等色素及有机酸,胆碱挥发化合物,多糖等成分,是有利胆、保肝、解热、镇静,降血压等作用。《神农本草经>性味:苦寒、泻火除烦,、凉血止血,清热解毒,清利湿热。
枸杞苗:《本草纲目》气味,苦、寒[权日]甘、平《时珍》甘、凉主治:除烦益志、补五脏七伤、壮心志、去皮肤骨节间风、清热毒作饮代茶,清烦热、益阳事。
五脏皆属阴,益阴故利五脏,阴气不足则关节之血气不通,血生津满、阴气长盛,则不饥而血气自通矣。热退阴生,则肝心无火、故魂安而神自清宁,神清则聪明内发,甘苦寒除热解故酒中之毒,性寒而下行利水的功能,酒则通血脉,卸寒气和行药势作用。因此本发明无添加剂用药食同源辅料制作的露酒,具有增强免疫,防亚健康,糖尿病、脂肪肝、酒精肝,抗衰老的作用,因为营养丰富、口感好,安全健康无毒副作用,深受广大老百姓的欢迎。

1.增加机体免疫力保健露酒的制作方法,其特征在于:用山楂替代酸味剂,黄精、栀子和罗汉果替代着色剂,罗汉果替代甜味剂;所述保健露酒由酒基和辅料制备而成,酒基为酒精度30~38度白酒,用量是辅料重量10~12倍;辅料由下述重量份的原料组成:枸杞苗10~30份,枸杞子10~30份,酒黄精5~30份,山楂7~40份,玉竹3~20份,山药10~30份,罗汉果10~30份,茯苓2~20份,炒栀子1.5~15份,炙甘草0.5~5份;用30~38度小曲白粮酒浸提;操作步骤如下:
