Abstract
本发明公开一种玛卡葡萄酒的制备方法,属酒制品领域。其制备方法是:将玛卡、雄蜂蛹、枸杞子经挑拣、清洗、烘干、粉碎,接种酵母复合菌进行固体糖化发酵,然后将发酵后的玛卡混合固体发酵粉投入发酵罐中,加入葡萄酒进行二次发酵,发酵结束后,分离出发酵液。发酵液经冷处理沉降,硅藻土、纸板过滤,加入二氧化硫40-60mg/L调匀,制成玛卡葡萄酒。该方法制备的玛卡葡萄酒充分保留和发挥了玛卡的营养成分和营养功效,使玛卡和葡萄酒的营养成分得以充分保留和相互补充。制成的玛卡葡萄酒酒体丰满、酒香优雅、滋味醇厚、酸甜适口,具有葡萄酒浓郁的果香和玛卡独有的乳香。

背景技术
玛卡(Maca)是十字花科植物玛卡独行菜(拟)Lepidium meyenii Walp.的形似萝卜样肥大的根茎,原产于秘鲁中部基宁(Jinin)及帕斯科(Pasco)附近海拔4000米以上的安第斯山区,可在无肥料、缺氧、昼夜温差大、长期冰封的独特环境下吸收土壤之精华而正常生长。数千年来,一直作为当地居民的重要食物来源之一,因其具有丰富的营养价值和保健功效,被人们视为安第斯山神赐予的珍贵礼物。食用玛卡可使体力增强、精力充沛、消除焦虑、提高性功能,因而其在当地民间有“秘鲁人参”和“南美人参”的美誉。20世纪早期,玛卡种植面积日渐减少,在其原产地只有125公顷左右的种植面积,几乎濒临绝种,被国际上列为濒危稀有植物。直到1982年,在联合国粮农组织(FAO)和国际植物遗传资源研究所(IPGRI)等国际组织的努力下,这种珍贵的植物才得以逐步推广,嘉惠世人。此后,FAO又先后多次向各国推荐种植玛咖,并指出被世人忽视的玛咖是一种营养丰富的安全食物,可以解决多种因营养不足引起的健康问题。2011年5月18日,中华人民共和国卫生部批准玛咖为“新资源食品”。
长期以来,国际植物学和医药专家从未停止过对玛卡的研究。虽然早期的秘鲁科学研究者Chacσn G等对玛卡的营养成分和药理作用进行过初步的研究,验证了玛卡在提高哺乳动物生育力、抗疲劳、抗抑郁等方面的作用,并从其中发现了被命名为macaina的4种活性生物碱(alkaloids)和芥子油苷(glucosinolates,β-thioglucoside-N-hydroxysulfates),但玛卡得到国际植物学家和医药研究者的普遍重视是从20世纪80年代开始,特别是90年代中期,意大利人Dini A等发表了对玛卡干根的组成成分分析,结果表明玛卡富含多种营养成分,如蛋白质、氨基酸、多糖、矿物质锌、钙、铁、磷、碘等,维生素C、B,、B2、B6等,此外玛卡还含有具有特殊功效的天然植物活性成分包括生物碱、芥子油苷及其分解产物异硫氰酸苄酯类(benzyl isothiocyanates)物质、甾醇、多酚类物质、类黄酮等。在现代分析技术体系日益成熟及Dini开创性研究工作的基础上,玛卡的植物化学分析、药理研究和临床试验在90年代末有了较大发展。首先是华裔美国植物化学家Zheng BL等人从玛卡中发现了两类新植物化学成分玛卡酰胺(macamides)和玛卡烯(macaenes),并证明了这两类物质具有提高雌雄小鼠性功能的作用和提高小鼠生育力的作用,首次通过药理试验说明了植物玛卡提高性功能的物质基础。随后各国研究者对玛卡的挥发油成分、芥子油苷成分、生物碱成分等进行了细致的研究,进一步确认了玛卡的营养价值和医疗保健价值。在临床试验上,秘鲁卡耶塔诺大学的科学家们也证明了玛卡在提高人的性欲和生育力上的显著作用。至今为止,国际研究者们揭示了玛卡具有的多种独特药用保健价值:增强精力、改善性功能、提高生育力、治疗更年期综合征及其相关症状、抗抑郁、抗贫血。而且最近日本的科学研究又发现,玛卡鲜果还具有潜在的治疗白血病的功效。因此,玛卡的药用保健价值得到国际医药公司和保健品公司的广泛关注。
一、玛卡的营养成分
新鲜玛卡含水分10.4%、蛋白质10.2%、脂肪2.2%、碳水化合物59%、纤维8.5%、灰分4.9%。其蛋白质含有丰富的人体必需的氨基酸,如:精氨酸(9.94%)、天门冬氨酸(9.17%)、谷氨酸(15.6%)和赖氨酸(54.5%)等。玛卡的脂肪酸中不饱和脂肪酸的含量占52.7%(其中亚油酸18.5%、亚麻酸8.87%),还含有芥子油苷(glucosinolates)甾醇和钾、钙、铁等。玛卡的脂类部位含有玛卡烯(macaene)及玛卡酰胺(mecamide),还包括N-苄基辛酰胺、N苄基-16-羟基-9-氧化-10E,12E,14E-辛葵三烯酰胺、N苄基-16-羟基-9,16-二氧-1 0E,12E,14E-辛葵三烯酰胺以及其他17个玛卡烯和玛卡酰胺的同系物。玛卡烯和玛卡酰胺被认为是玛卡提取物中具促进性功能的有效物质之一。
二、药理作用
1、抗疲劳作用:玛卡根粉末中含有丰富的氨基酸、牛磺酸、矿物质锌等抗疲劳营养物质。如支链氨基酸 (BCAA ) (亮氨酸、缬氨酸、异亮氨酸)在消除运动性中枢疲劳和肌体疲劳中有重要作用;锌则通过激活神经内分泌激素、能量代谢所涉及的有关酶如乳酸脱氢酶等控制核酸、蛋白质、糖和脂肪的代谢过程,起到抗疲劳作用。
2、提高生育力:玛卡可显著提高哺乳动物的生育力。玛卡提高生育力的机制可能是提高动物成熟卵泡小体的数量、精子的流动性和精子的数量,这与玛卡中含有的生物碱、丰富的精氨酸和果糖等关系密切。玛卡中生物碱可以刺激动物生殖系统,使雌鼠成熟的卵泡小体成倍增加,雄鼠精子产生数增加;而精氨酸对提高生育力也有明显作用,不仅因为精氨酸是精子中氨基酸主要的组成成分,而且表现在可以提高精子的运动性上;而果糖则可以为精子提供能力。
3、增加雄性性行为及增加精子数量:玛卡无论在短期或长期喂养中,均能增强雄性大鼠的性行为。在增强性行为的作用上,已烷提取物要优于甲醇和氯仿提取物。但玛卡的各种提取物均表明不能调节糖皮质激素相关因素(GRE)的活性。给玛卡后,能增加大鼠精子的数量。玛卡的水提取物对大鼠睾丸功能及不同器官的重量呈量效关系。
4、调节内分泌功能:玛卡传统上可用于治疗女性更年期综合征,经现代研究表明,玛卡中含有的生物碱作用于视丘下部和脑垂体,调节内分泌腺如肾上腺、甲状腺、胰腺、卵巢等的功能,从而平衡荷尔蒙。而且玛卡可以作为代替外源雌激素来缓解下丘脑和脑垂体功能亢进。
5、抗应激反应:玛卡可以通过抑制应激反应来修复大鼠的体内环境稳定损伤。玛卡对小鼠也有很好的抗应激反应方面的作用。
6、预防前列腺肥大:玛卡能减少大鼠前列腺的大小。
7、抗肿瘤作用:玛卡传统上可用抗癌,与其含有芥子油苷和异硫氰酸苄酯等含硫有机化合物有关,已有不少报道表明这两种物质具有抗癌效果,如对胃癌、食道癌、肺癌、白血病等均有一定的作用。此外,玛卡中含有的多不饱和脂肪酸和Vc也有一定抗癌作用。
8、其他作用:玛卡可用于治疗慢性疲劳综合征、抑郁症,与玛卡调节内分泌作用有关;玛卡传统上还用于治疗哮喘症,这与玛卡中含有的类固醇以及促肾上腺素类物质有关;玛卡的强化肌肉的作用主要与含有的高蛋白和甾醇有关;玛卡还可以预防各种类型的贫血,这与玛卡的高营养尤其是含有的矿物质如钙、铁密不可分;抗骨质疏松,对切除卵巢的大鼠给予玛卡乙醇提取物,结果表明高剂量乙醇提取物能预防绝经后因雌激素缺乏而产生的骨丢失。
9、毒性
几个世纪来玛卡在安第斯山脉中部一直被应用(煮过后服用)但至今未发现其有任何毒性的报导。有关玛卡安全性的实验数据表明,玛卡在体内和体外均是安全的。最近的研究表明,玛卡的水提物及甲醇提取物在体外的实验中没有显示肝细胞毒性,相反,发现其具有弱的细胞保护作用。玛卡(黄、红、黑)水提物冻干粉对3T3细胞或不同人的癌细胞株没有显示细胞毒活性。玛卡水提物冻干粉(1g/kg BW )对小鼠着床前胚胎的正常发育没有影响。玛卡(黑、红、黄)剂量在高达每公斤体重17g时,对大鼠的半数致死量LD50没有呈现急性毒性。给大鼠通常剂量1~2g/ kg体重表明玛卡是安全的。人每天服用1g/kg可以认为是安全的。
三、临床研究
以冈萨雷斯教授为首的研究组对玛卡进行了一系列的临床观察。在2000 -2001年期间,他对60名20~40岁的男性进行了玛卡对性功能的作用的临床研究。他将60人分成3组,1组15人给安慰剂,1组30人给玛卡1500 mg/天,1组15人给玛卡3000 mg/天。结果给予玛卡者的性欲和精子数量等均有增加。但他的研究还发现,玛卡对血清促黄体素(LH )、卵巢刺激素( FSH)、泌乳素、睾丸酮及雌二醇等则没有影响。临床研究结果。表明玛卡还在增加性欲、抗应激、减少焦虑及抑郁以及提高活力方面有作用。
四、蜂蛹
蜂蛹又名蜂胎、蜂子,是蜜蜂幼虫在封盖房未羽化的变态虫体。蜂蛹(包括雄蜂蛹、工蜂蛹及少许蜂王幼虫)在发育中均以王浆、蜂蜜、花粉为食,其营养丰富,是一种高蛋白、低脂肪、含多种维生素和微量元素的理想保健食品。据《食品工业科技》报道,每100g雄蜂蛹,含蛋白质34.9g,核酸412mg,氨基酸20.85mg,维生素A 501 mg,维生素E 275.38 mg,维生素C 20.4 mg,铁20 mg,钙500mg。内含物质具有抗衰老、抗夜盲症、抗心血管疾病、消除自由基和保护上皮组织、促进发育等作用,是目前人们食用昆虫食品的佼佼者。
蜂蛹作為藥食兩用品的曆史非常悠久,曆代醫藥古籍都記載了蜂蛹的滋補強壯、治身體虛弱的功效。《神農本草經》將其列為營養上品。《本草綱目》曰:“蜂子氣味甘,平,微寒,無毒”。“主治風頭,除蠱毒、補虛贏傷中。久服令人光澤,好顏色,不老”,“輕身益氣,治心腹痛,面目黃,大人小兒腹中五蟲從口吐出者”。因此,長期適量飲用以蜂蛹為主要原料的蜂蛹酒,能起到增補體力,緩解疲勞的作用。
五、枸杞子
枸杞子为茄科植物宁夏枸杞Lycium barbarum L. 的干燥成熟果实。其味甘、性平具有补肝益肾之功效,《本草纲目》中说“久服坚筋骨,轻身不老,耐寒暑。”中医常用它来治疗肝肾阴亏、腰膝酸软、头晕、健忘、目眩、目昏多泪、消渴、遗精等病症。现代药理学研究证实枸杞子可调节机体免疫功能、能有效抑制肿瘤生长和细胞突变、具有延缓衰老、抗脂肪肝、调节血脂和血糖、促进造血功能等方面的作用,并应用于临床。枸杞子服用方便,可入药、嚼服、泡酒。
六、玛卡酒类加工技术的现状
玛卡是被国际上列为濒危稀有植物的珍惜和具有良好营养保健作用的新资源物种,在其原产地传统的食用方法之一就是粗加工为玛卡酒。经科学家的不断努力,玛卡葡萄酒的加工工艺有了较大进展。如:CN101538516A公布了新鲜或干燥玛卡加5倍水制成玛卡浆再与葡萄混合发酵的工艺,在葡萄酒的生产中引入了大量的外源性水分。CN101508944A、CN101654640A公布了用50-67%的蒸馏酒浸泡玛卡,再与发酵葡萄酒勾兑的工艺,高浓度的酒精长时间浸泡可能导致玛卡中蛋白质等营养成分的破坏。CN101508945A公布了鲜玛卡和葡萄分别发酵后再进行调配的工艺,不是真正意义上的葡萄酒。
以上工艺或使用水、或使用蒸馏酒、或同时使用上述条件,或使用调配工艺,无疑在某些方面偏离了传统葡萄酒的原葡萄酿造工艺,限制了高品质葡萄酒醇正、清雅、优美、和谐果香及酒香的发挥和体现。

本发明的目的在于克服上述不足,提供一种无外来饮用水和蒸馏酒,更忠实于传统葡萄酒酿造工艺、体现传统酿造工艺葡萄酒风格和风味,又最大限度地保留天然玛卡活性成分和葡萄酒营养成分的同时,使葡萄酒的基本风格风味得以体现,真正将玛卡这一来自远方的新资源食品以葡萄酒的形式走进现代人的生活,为广大消费者提供一种安全、营养的高品质葡萄酒新品种,提供一种玛卡葡萄酒的制备方法
为实现上述目的,本发明采用的技术方案如下:
本发明的玛卡葡萄酒的制备方法,将玛卡、蜂蛹、枸杞子经挑拣、清洗、低温干燥、粉碎,接种酵母复合菌进行固体糖化发酵,然后将发酵后的固体发酵粉投入发酵罐中,加入葡萄酒白葡萄酒进行控温二次发酵,发酵结束后,分离出发酵液,经冷处理沉降,硅藻土、纸板过滤,加入二氧化硫40-60mg/L调匀,按国标加香葡萄酒标准检验合格,按灌装流程装入指定规格的红酒瓶中,制成玛卡葡萄酒,制成玛卡葡萄酒。
所述固体糖化发酵料的原料质量百分比组成为玛卡10-70%、雄蜂蛹10-20%、枸杞子10-80%。
所述的固体糖化发酵工艺为:将玛卡、雄蜂蛹、枸杞子原料组合干燥后粉碎至60目,至于不锈钢容器中,用0.01~1.0%的酵母复合菌液混合均匀,在28℃~32℃糖化发酵72~96小时。
所述的酵母复合菌为酵母菌和醋酸菌、乳酸菌、双歧杆菌、红茶菌中至少一种的混合物。
所述的二次发酵工艺为:将占发酵物总质量10-30%的发酵粉投入发酵罐中,加入发酵物总质量70-90%的葡萄酒,控制温度18~20℃进行二次发酵,当发酵液酒精度达到12.0±1.0,总糖≤4.0时,终止发酵。
玛卡葡萄酒后处理工艺为,发酵结束后,分离出发酵液,0℃~5℃密闭冷藏7天,进行沉降陈化处理。
所述发酵结束是指根据目标产物的不同(如干葡萄酒、半干葡萄酒、甜葡萄酒),按目标产物的国家标准控制发酵结束点。
本发明方法中所用的葡萄酒为干红葡萄酒或干白葡萄酒,所述的玛卡葡萄酒制备方法制备的玛卡葡萄酒可以是玛卡干红葡萄酒、玛卡干白葡萄酒,可以是干型、半干型、半甜型、甜型或加香型。
本发明的有益效果为:
1. 玛卡为中华人民共和国卫生部批准的“新资源食品”,经酵母复合菌发酵后,玛卡特有的营养功效成分能和葡萄酒在二次发酵中更好的融合。该方法制备的玛卡葡萄酒充分保留和发挥了玛卡的营养成分和营养功效,使玛卡和葡萄酒的营养成分得以充分保留和相互补充。
2. 发明工艺更忠实于传统葡萄酒酿造工艺、体现传统酿造工艺葡萄酒风格和风味,在最大限度地保留天然玛卡活性成分和葡萄酒营养成分的同时,使葡萄酒的基本风格风味得以体现。制成的玛卡葡萄酒酒体丰满、酒香优雅、滋味醇厚、酸甜适口,具有葡萄酒浓郁的果香和玛卡独有的乳香。
3. 成品风味独特,口感柔和,与普通葡萄酒相比,兼具葡萄酒的果香和玛卡独有的幽香,滋味醇厚,酸涩适度,尤其兼具葡萄酒和玛卡的双重营养元素,更能适合大众需求,对亚健康状态的改善有良好的帮助。
具体实施方式
下面通过实施例对本发明作详细说明,但并不以任何方式限制本发明。
实施例1
(1)玛卡混合固体发酵粉的制备
将65Kg玛卡、5Kg蜂蛹、30Kg枸杞子经挑拣、清洗、低温干燥、粉碎至60目,至不锈钢发酵槽中,接种0.2%酵母复合菌28℃固体糖化发酵48小时,即得玛卡混合固体发酵粉。
(2)玛卡干红葡萄酒的制备
玛卡混合固体发酵粉20Kg,投入发酵罐中,加入80Kg干红葡萄酒18℃控温二次发酵30天,检验发酵液达到干红葡萄酒要求时,结束发酵。分离出发酵液,经5℃冷处理沉降,硅藻土、纸板过滤,加入二氧化硫40mg/L调匀,按国标加香葡萄酒标准检验合格,按灌装流程装入指定规格的葡萄酒瓶中,制成玛卡干红葡萄酒。
实施例2
(1)玛卡混合固体发酵粉的制备
将70Kg玛卡、10Kg蜂蛹、20Kg枸杞子经挑拣、清洗、低温干燥、粉碎至60目,至不锈钢发酵槽中,接种0.4%酵母复合菌29℃固体糖化发酵76小时,即得玛卡混合固体发酵粉。
(2)玛卡干白葡萄酒的制备
玛卡混合固体发酵粉15Kg,投入发酵罐中,加入85Kg干白葡萄酒18℃控温二次发酵30天,检验发酵液达到干白葡萄酒要求时,结束发酵。分离出发酵液,经3℃冷处理沉降,硅藻土、纸板过滤,加入二氧化硫60mg/L调匀,按国标加香葡萄酒标准检验合格,按灌装流程装入指定规格的葡萄酒瓶中,制成玛卡干白葡萄酒。
实施例3
(1)将60Kg玛卡、15Kg蜂蛹、25Kg枸杞子经挑拣、清洗、低温干燥、粉碎至60目,至不锈钢发酵槽中,接种0.6%酵母复合菌30℃固体糖化发酵96小时,即得玛卡混合固体发酵粉。
(2)玛卡半干葡萄酒的制备
玛卡混合固体发酵粉10Kg,投入发酵罐中,加入90Kg半干葡萄酒20℃控温二次发酵30天,检验发酵液达到半干葡萄酒要求时,结束发酵。分离出发酵液,经1℃冷处理沉降,硅藻土、纸板过滤,加入二氧化硫50mg/L调匀,按国标加香葡萄酒标准检验合格,按灌装流程装入指定规格的葡萄酒瓶中,制成玛卡半干葡萄酒。
实施例4
(1)玛卡混合固体发酵粉的制备
将55Kg玛卡、10Kg蜂蛹、35Kg枸杞子经挑拣、清洗、低温干燥、粉碎至60目,至不锈钢发酵槽中,接种0.8%酵母复合菌31℃固体糖化发酵96小时,即得玛卡混合固体发酵粉。
(2)玛卡甜葡萄酒的制备
玛卡混合固体发酵粉30Kg,投入发酵罐中,加入70Kg葡萄酒20℃控温二次发酵20天,检验发酵液达到甜葡萄酒要求时,结束发酵。分离出发酵液,经5℃冷处理沉降,硅藻土、纸板过滤,加入二氧化硫50mg/L调匀,按国标加香葡萄酒标准检验合格,按灌装流程装入指定规格的葡萄酒瓶中,制成玛卡甜葡萄酒。
在了解本发明所述内容后,葡萄酒、保健、营养、食品等相关领域技术人员可以对本发明作改良或改动,但这些等价形式的改变同样落于本申请所附权利要求书所限定的范围。

Claims (4)
1.一种玛卡葡萄酒的制备方法,其特征在于:将玛卡、雄蜂蛹、枸杞子经挑拣、清洗、低温干燥、粉碎,接种酵母复合菌进行固体糖化发酵,然后将发酵后的固体发酵粉投入发酵罐中,加入葡萄酒进行控温二次发酵,发酵结束后,分离出发酵液,经冷处理沉降,硅藻土、纸板过滤,加入二氧化硫40-60mg/L调匀,制成玛卡葡萄酒;固体糖化发酵料的原料质量百分比组成为玛卡10-70%、雄蜂蛹10-20%、枸杞子10-80%;所述的固体糖化发酵工艺为:将玛卡、雄蜂蛹、枸杞子原料组合干燥后粉碎至60目,至于不锈钢容器中,用0.01~1.0%的酵母复合菌液混合均匀,在28℃~32℃糖化发酵72~96小时。
2.根据权利要求1所述的玛卡葡萄酒制备方法,其特征在于:所述的酵母复合菌为酵母菌和醋酸菌、乳酸菌、双歧杆菌、红茶菌中至少一种的混合物。
3.根据权利要求1所述的玛卡葡萄酒制备方法,其特征在于:所述的二次发酵工艺为:将占发酵物总质量10-30%的发酵粉投入发酵罐中,加入发酵物总质量70-90%的葡萄酒,控制温度18~20℃进行二次发酵,当发酵液酒精度达到12.0±1.0,总糖≤4.0时,终止发酵。
4.根据权利要求1所述的玛卡葡萄酒制备方法,其特征在于:玛卡葡萄酒后处理工艺为,发酵结束后,分离出发酵液,0℃~5℃密闭冷藏7天,进行沉降陈化处理。
