本发明属于食品加工领域,涉及一种饼干,尤其涉及一种菠萝曲奇饼干预拌粉。
背景技术
曲奇饼干的名称来源于英语COOKIE,其是一类以奶油、蔗糖、鸡蛋、面粉等为主要原料,经烘烤制成的酥脆食品。其口味繁多,含热量较高,原本是一种深受人们喜爱的焙烤食品,但随着人们健康意识的增强,消费者已认识到现在的许多“文明病”都与高糖、高油脂的饮食习惯有关,因此不再愿意购买传统的曲奇饼干。
发明内容
本发明的目的在于提供一种菠萝曲奇饼干预拌粉,其配方中添加了富含膳食纤维的燕麦粉和菠萝,在保持曲奇饼干的膨松、酥脆性的前提下,有效增加了产品中的膳食纤维。由于膳食纤具有很强的吸油性及持油性,可促进体内脂肪、类固醇及氮的排泄,有效降低人体对曲奇饼干中脂肪的吸收,从而减少食用曲奇饼干给人体带来的不利影响,因此,开发富有膳食纤维的曲奇饼干具有积极的意义。同时,由于目前人们每天所摄入食物的加工精度越来越高,导致膳食纤维的摄入量却日渐减少,在主食之外多补充膳食纤维也是一种良好的选择。
一种菠萝曲奇饼干预拌粉,其重量份组成如下:白砂糖25~30,燕麦粉15~20,植脂末15~20,天然奶油粉10~15,菠萝粉5~8,全蛋粉3~5,食用盐0.3~0.5,蔗糖酯0.1~0.2。
所述的燕麦粉是燕麦片经粉碎、过100目筛制得的燕麦粉;
所述的白砂糖为经粉碎、过80目筛的白砂糖;
燕麦经过精细加工制成燕麦片,使其食用更加方便,口感也得到改善,是深受欢迎的健康食品。由燕麦片粉碎制成的燕麦粉含有丰富的膳食纤维,而膳食纤维可以促使胆固醇排泄,降低人体内的甘油三脂水平;还有润肠通便的作用,对于习惯性便秘患者有很好的帮助;燕麦片属低热食品,食后易引起饱腹感,长期食用具有减肥功效。此外,燕麦中含有丰富维的生素B1、B2、E、叶酸等,可以改善血液循环、缓解生活工作带来的压力;含有的钙、磷、铁、锰等矿物质也有预防骨质疏松促的功效。 天然奶油粉,是选用优质天然奶油为原料,经过乳化包埋后,喷雾干燥而成。
菠萝粉是菠萝经去皮、切片、烘干、粉碎、过筛制得的,菠萝含有较多的膳食纤维。
制作方法:将白砂糖、燕麦粉、植脂末、天然奶油粉、菠萝粉、全蛋粉、食用盐、蔗糖酯按配方比例称量后,混合均匀即可。
一种菠萝曲奇饼干预拌粉的使用方法:
⑶成型烘烤:将面糊装入裱花袋,在烤盘上挤出成型,可饰以各种果干、坚果仁等。以180℃±5℃烘烤至熟。

白砂糖25,燕麦粉15,植脂末15,天然奶油粉10,菠萝粉5,全蛋粉3,食用盐0.3,蔗糖酯0.1。
制作方法:将白砂糖、燕麦粉、植脂末、天然奶油粉、菠萝粉、全蛋粉、食用盐、蔗糖酯按配方比例称量后,混合均匀即可。

白砂糖30,燕麦粉20,植脂末20,天然奶油粉15,菠萝粉8,全蛋粉5,食用盐0.5,蔗糖酯0.2。
制作方法:同实施例1。

白砂糖28,燕麦粉17,植脂末18,天然奶油粉12,菠萝粉6,全蛋粉4,食用盐0.4,蔗糖酯0.1。
制作方法:同实施例1。
