本发明涉及一种蛋糕,尤其是一种配用竹荪制成的保健蛋糕。
背景技术
蛋糕是以鸡蛋、白糖、小麦粉为主要原料,以牛奶、果汁、奶粉、香粉、色拉油、水,起酥油、泡打粉为辅料,经过搅拌、调制、烘烤后制成一种像海绵的点心。蛋糕的主要成分是面粉、鸡蛋、奶油等,含有碳水化合物、蛋白质、脂肪、维生素及钙、钾、磷、钠、镁、硒等矿物质,食用方便,是人们最常食用的糕点之一。随着人们生活水平的提高,现有的口味单一的蛋糕及其营养保健功能满足不了人们的需求。
竹荪补气养阴,润肺止咳,清热利湿;具有滋补强壮、益气补脑、宁神健体的功效。竹荪营养丰富,据测定干竹荪中含蛋白质19.4%、脂肪2.6%,碳水化合物总量60.4%,其中菌糖4.2%、粗纤维8.4%,灰分9.3%。科学研究证实竹荪对高血压、肿瘤、神经衰弱、肠胃疾病等具有保健作用。
现有的保健蛋糕没有应用竹荪配制,如在中国专利信息中心公布的专利号为201110341878的发明——一种海带泥蛋糕,该发明应用海带泥配制,其口味单一,保健功能局限于海带的降血压、抗肿瘤等功效。
发明内容
为了解决现有技术问题,本发明的目的是要提供了一种竹荪保健蛋糕。
技术方案:一种竹荪保健蛋糕,包括以下重量份的原料:竹荪粉15-60、低筋面粉110-130、牛奶70-90、泡打粉2-4、蛋白160-200、蛋黄60-80、细砂糖20-50、酒石酸氢钾0.03-0.05。
优选方案为:竹荪粉25、低筋面粉120、牛奶80、泡打粉2.5、蛋白180、蛋黄70、细砂糖30、酒石酸氢钾0.04。
制备过程:1、蛋白加入适量酒石酸氢钾,将白糖分3次加入,用打蛋器中速均匀搅打至湿性发泡;2、用打蛋器中速搅打蛋黄,再将蛋黄液与竹荪粉、低筋面粉和泡打粉拌匀;3、将以上所有面糊混合均匀做成蛋糊;将蛋糊倒入模具中,除去表面上的泡沫;4、烤箱150度预热后,以烤盘盛托蛋糊,设温度150-180度,烘烤时间为30-55分钟,冷却后取出即可。
本发明的有益效果是:
1、增添了一种清醇的蛋糕新口味;
2、竹荪营养丰富,对高血压、肿瘤、神经衰弱、肠胃疾病等具有保健作用,强化了蛋糕的营养保健功能。
具体实施方式:
一种竹荪保健蛋糕,包括以下重量份的原料:竹荪粉25、低筋面粉120、牛奶80、泡打粉2.5、蛋白180、蛋黄70、细砂糖30、酒石酸氢钾0.04。
制备过程:1、蛋白加入酒石酸氢钾,将白糖分3次加入,用打蛋器中速均匀搅打至湿性发泡;2、用打蛋器中速打蛋黄,再将蛋黄液与竹荪粉、低筋面粉和泡打粉拌匀;3、将以上所有面糊混合均匀做成蛋糊;将蛋糊倒入模具中,除去表面上的泡沫;4、烤箱150度预热后,以烤盘盛托蛋糊,设置温度170度,烘烤时间为30分钟,冷却后取出即可。
