本发明涉及罐头食品加工技术领域;鱼翅药膳罐头的加工工艺是:将鱼翅整个用水泡软,下锅煮,取起,用冷水浸泡,取条缕整齐鱼翅,晒干,用清水浸泡,过两次滚水,洗净,捞出,用配料炒鱼翅数遍至香,加药液炖,加高汤,葱白,米醋少量,再炖,加炖液1%,红醋1%,罐装,抽真空。药液制取方法是取药材人参4%,阿胶5%、山核桃仁3%、白果2%、枸杞2%、银菜2%、灵芝2%,百合3%,银耳2%,甘草2%,加水进行煎煮二次;合并两次煎煮液,混合均匀,放冷置室温,加入95%乙醇,混匀,放置,过滤,上清液混匀,药液加热浓缩,浓缩后药液进行脱色。本发明具有口感好,营养价值高,滋补健体,食用方便,保健养身的特点。
Description
技术领域 本发明涉及罐头食品加工技术领域,具体地说是涉及鱼翅药膳罐头。
背景技术 鱼翅是鲨鱼鳍中的细丝状软骨,是用鲨鱼的鳍加工而成的一种海产珍品。鱼翅之所以能食用,是因为鲨鱼的鳍含有一种形如粉丝状的翅筋,其中含80%左右的蛋白质,还含有脂肪、糖类及其他矿物质。
鱼翅是取自软骨鱼类的鳍中的软骨,软骨是一种略带弹性的坚韧组织,由软骨细胞、纤维和基质所构成。有机成分主要有多种蛋白如软骨粘蛋白、胶原和软骨硬蛋白等。鱼翅软骨含胶原较多,形似筋质,故又称为翅筋,遇热后可以膨胀软化,甚至深化成物胶。鱼翅口感滋润、舒适而爽口,是饮食中的享受。
中医认为:鱼翅味甘咸性平,可以益气、开胃、补虚。能渗湿行水,开胃进食,清痰消鱼积,补五脏,长腰力,益虚痨。据《本草纲目》所载,鱼翅能补五脏、长腰力、益气清痰,对糖尿病患者更具疗效。据现代医学报道,鱼翅含降血脂、抗动脉硬化及抗凝成份,对心血管系统疾患有防治功效。
鱼翅是比较珍贵的烹调原料,然而鱼翅的炮制和烹调工艺十分复杂而专业,几乎不容业余者染指,为食用带来不便。
发明内容 鉴于现有技术存在的缺陷,本发明的目的是弥补现有技术的不足之处,提供一种口感好,营养价值高,滋补健体,食用方便,保健养身的鱼翅药膳罐头。
为实现上述目的,本发明所采用的技术解决方案是:鱼翅药膳罐头的加工工艺是:将鱼翅整个用水泡软,下锅煮至用手可撕开即可,不可太烂。取起,用冷水浸泡,撕去骨头及沙皮,取条缕整齐鱼翅,不可撕破,晒干,用清水浸泡6~8小时,过两次滚水,洗净,捞出,用配疗鸡肉丝、香油、蒜热锅,炒鱼翅数遍至香,加药液炖4~6小时后,加高汤,葱白,米醋少量,炖2~4小时,加炖液1%,红醋1%,罐装,抽真空。药液制取方法是取药材人参4%,阿胶5%、山核桃仁3%、白果2%、枸杞2%、银菜2%、灵芝2%,百合3%,银耳2%,甘草2%按比例进行配比;取配方药材除杂,粉碎,混合,加水进行煎煮,第一次煎煮时间为2h,温度为60~80℃,水量为淹没所有药材的2倍体积,过滤药材残渣,得第一次煎煮液,将药材残渣进行第二次煎煮;第二次煎煮时间为2h,温度为60~80℃,水量以淹没所有药材为准,过滤药材残渣,得第二次煎煮液,药材残渣丢弃;合并两次煎煮液,混合均匀,放冷置室温,加入95%乙醇,混合均匀,放置24~28小时后,过滤水提醇沉液,上清液混匀,用旋转蒸发仪回收乙醇,药液加热浓缩,浓缩后药液用食用活性炭进行脱色,直至药液成透明状。
鉴于本发明弥补了现有技术的不足之处;具有口感好,营养价值高,滋补健体,食用方便,保健养身的特点,可进行批量化的生产应用,是一种具有推广价值的新技术。
