背景技术
香菇是世界第二大食用菌,也是我国特产之一,在民间素有“山珍”之称。它是一种生长在木材上的真菌。味道鲜美,香气沁人,营养丰富,素有“植物皇后”美誉。味甘,性平。香菇还含有多种维生素、矿物质,对促进人体新陈代谢,提高机体适应力有很大作用。香菇还对糖尿病、肺结核、传染性肝炎、神经炎等起治疗作用,又可用于消化不良、便秘、减肥等。我国不少古籍中记载香菇“益气不饥,治风破血和益胃助食”。民间用来助痘疮、麻疹的诱发,治头痛、头晕。现代研究证明,香菇多糖可调节人体内有免疫功能的T细胞活性,可降低甲基胆蒽诱发肿瘤的能力。香菇还含有双链核糖核酸,能诱导产生干扰素,具有抗病毒能力。香菇含有水溶性鲜味物质,可用作食品调味品,其主要成分是5'-乌苷酸等核酸成分。
鸭肉性寒、味甘、咸,归脾、胃、肺、肾经。鸭肉中的脂肪酸熔点低,易于消化,其所含B族维生素和维生素E较其他肉类多,能有效抵抗脚气病,神经炎和多种炎症,还能抗衰老。鸭肉也中含有较为丰富的烟酸,它是构成人体内两种重要辅酶的成分之一,对心肌梗死等心脏疾病患者有保护作用。
香肠是一个古老的食物生产和肉食保存技术,指将动物的肉绞碎成泥状,再灌入肠衣制成的长圆柱体管状食品。目前在香肠的制作中,大多以猪肉为主料,品种和口味单一,已不适应现代人追求口味多样化的要求。

本发明的目的是提供一种香菇鸭肉复合香肠及制作方法。
为实现上述目的,本发明采用如下技术方案:一种香菇鸭肉复合香肠,各原料及其质量份为:香菇粉20~30份、鸭瘦肉50~70份、鸭皮10~20份、冰水10~15份、食盐1.5~2.5份、白糖0.2~2份、味精0.05~0.5份、卡拉胶0.6~1份、鸭血蛋白1~3份、淀粉3~6份、55°白酒1~2份、亚硝酸盐0.005~0.012份、三聚磷酸盐0.1~0.5份、白胡椒粉0.1~0.3份、花椒粉0.2~0.4份、大茴香粉0.1~0.3份、肉豆蔻油β-环糊精微胶囊0.2~0.5份和白豆蔻挥发油β-环糊精微胶囊0.2~0.5份。
所述香菇粉、白胡椒粉、花椒粉和大茴香粉需过40目筛。
制作方法是:首先将鸭瘦肉50~70份绞成肉馅、鸭皮10~20份切块,再加入10~15份冰水、食盐1.5~2.5份和亚硝酸盐0.005~0.012份搅拌均匀后在0℃~4℃条件下腌制24h~48h;其次将香菇粉20~30份、白糖0.2~2份、味精0.05~0.5份、卡拉胶0.6~1份、鸭血蛋白1~3份、淀粉3~6份、55°白酒1~2份、三聚磷酸盐0.1~0.5份、白胡椒粉0.1~0.3份、花椒粉0.2~0.4份、大茴香粉0.1~0.3份、肉豆蔻油β-环糊精微胶囊0.2~0.5份和白豆蔻挥发油β-环糊精微胶囊0.2~0.5份加入到腌制好的馅中,在0℃~4℃条件下搅拌10min~20min至均匀;再次将搅拌好的原料在真空状态下滚揉,滚揉好的原料移入灌肠机内进行灌肠;然后上架并用清水冲洗去其表面油污;随后将上架后的香肠移入温度为65℃~80℃的烤箱内,烘烤0.5h~2h,再调节温度到50℃~65℃,烘烤5h~8h;最后在室温下冷却1h~2h,再在0℃~4℃冷却15h~20h,得香菇鸭肉复合香肠。
由于采用了以上技术方案,本发明具有以下优点:
1、本发明是以香菇和鸭肉为主要原料,营养丰富、口味独特、食用方便且易于贮存;
2、香菇鸭肉复合香肠加工中添加了肉豆蔻油β-环糊精微胶囊和白豆蔻挥发油β-环糊精微胶囊,即使香肠口味独特又其到了防腐抗菌的作用。
具体实施方式
实施例1:
首先将鸭瘦肉50kg绞成肉馅、鸭皮10kg切块,再加入10kg冰水、食盐1.5kg和亚硝酸盐0.007kg搅拌均匀后在0℃条件下腌制48h;其次将香菇粉20kg、白糖0.3kg、味精0.05kg、卡拉胶0.6kg、鸭血蛋白2kg、淀粉3kg、55°白酒1kg、三聚磷酸盐0.2kg、白胡椒粉0.1kg、花椒粉0.3kg、大茴香粉0.1kg、肉豆蔻油β-环糊精微胶囊0.2kg和白豆蔻挥发油β-环糊精微胶囊0.2kg加入到腌制好的馅中,在2℃条件下搅拌15min至均匀;再次将搅拌好的原料在真空状态下滚揉,滚揉好的原料移入灌肠机内进行灌肠;然后上架并用清水冲洗去其表面油污;随后将上架后的香肠移入温度为75℃的烤箱内,烘烤1h,再调节温度到50℃,烘烤8h;最后在室温下冷却1.5h,再在4℃冷却15h,得香菇鸭肉复合香肠。
实施例2:
首先将鸭瘦肉70kg绞成肉馅、鸭皮15kg切块,再加入14kg冰水、食盐2.5kg和亚硝酸盐0.012kg搅拌均匀后在2℃条件下腌制32h;其次将香菇粉25kg、白糖1.8kg、味精0.2kg、卡拉胶0.8kg、鸭血蛋白1.5kg、淀粉6kg、55°白酒2kg、三聚磷酸盐0.5kg、白胡椒粉0.3kg、花椒粉0.2kg、大茴香粉0.2kg、肉豆蔻油β-环糊精微胶囊0.3kg和白豆蔻挥发油β-环糊精微胶囊0.4kg加入到腌制好的馅中,在2℃条件下搅拌10min至均匀;再次将搅拌好的原料在真空状态下滚揉,滚揉好的原料移入灌肠机内进行灌肠;然后上架并用清水冲洗去其表面油污;随后将上架后的香肠移入温度为70℃的烤箱内,烘烤1.5h,再调节温度到65℃,烘烤5h;最后在室温下冷却2h,再在2℃冷却18h,得香菇鸭肉复合香肠。

1.一种香菇鸭肉复合香肠,其特征在于:各原料及其质量份为:香菇粉20~30份、鸭瘦肉50~70份、鸭皮10~20份、冰水10~15份、食盐1.5~2.5份、白糖0.2~2份、味精0.05~0.5份、卡拉胶0.6~1份、鸭血蛋白1~3份、淀粉3~6份、55°白酒1~2份、亚硝酸盐0.005~0.012份、三聚磷酸盐0.1~0.5份、白胡椒粉0.1~0.3份、花椒粉0.2~0.4份、大茴香粉0.1~0.3份、肉豆蔻油β-环糊精微胶囊0.2~0.5份和白豆蔻挥发油β-环糊精微胶囊0.2~0.5份;所述香菇粉、白胡椒粉、花椒粉和大茴香粉需过40目筛;
具体方法为:首先将鸭瘦肉绞成肉馅、鸭皮切块,再加入冰水、食盐和亚硝酸盐搅拌均匀后腌制;然后将香菇粉、白糖、味精、卡拉胶、鸭血蛋白、淀粉、白酒、三聚磷酸盐、白胡椒粉、花椒粉、大茴香粉、肉豆蔻油β-环糊精微胶囊和白豆蔻挥发油β-环糊精微胶囊加入到腌制好的馅中,搅拌至均匀;最后真空灌肠,上架,烘烤,冷却,得香菇鸭肉复合香肠;所述腌制是在0℃~4℃条件下放置24h~48h;所述搅拌是在0℃~4℃条件下混合10min~20min,至均匀;所述真空灌肠是将搅拌好的原料在真空状态下滚揉,再把滚揉好的原料移入灌肠机内进行灌肠,灌装成便于烘烤和包装的一定长度的香肠;所述上架是将灌装好的香肠悬挂在烘烤架上,并用清水冲洗去表面油污;所述烘烤是将上架好的香肠移入温度为65℃~80℃的烤箱内,烘烤0.5h~2h,再调节温度到50℃~65℃,烘烤5h~8h;所述冷却是在室温下冷却1h~2h,再在0℃~4℃冷却15h~20h。
