技术领域
本发明涉及一种高能方便食品，尤其适宜在高寒高原地区食用的高能方便食品。
背景技术
寒冷地区人体总热能需要量较温带同等劳动强度者要高，具体可因寒冷程度、防寒保温情况和体力活动的强度而不同。基础代谢在寒冷条件下可升高10％-15％。体温散热加速。防寒服装增加体力负荷。低温引起的汗颤和一些不经意的的动作造成能量需要增加。寒冷刺激可使甲状腺功能提高，甲状腺素分泌增加，使体内物质氧化所释放的能量不能以ATP形式存在，而是以热量的形式散发。低温下组织内TCA循环和与呼吸链有关的酶类的活力增加，机体氧化产热能力增加等。所以在寒冷情况下，能量需求高达5500-6000千卡(一般3400千卡)，脂肪应占总能量的40-45％。由于脂肪提供的能量是碳水化合物的2.2倍，因此增加少量脂肪就能提供更多的能量，可以降低碳水化合物的分解代谢从而降低呼吸商，减轻缺氧条件下碳水化合物分解代谢不完全所产生的酸中毒。一般认为碳水物供给量占总能量的40-45％为宜，蛋白质供应量也应适当增加，占总能量的13％-15％为宜，更重要的是应保持合理的必需氨基酸构成比例，特别是蛋氨酸在代谢适应过程中起主要作用，其通过甲基转移作用提供一系列寒冷适应过程所必需的甲基。

谷物粉10-50份；大豆粉5-40份；熟化整粒谷物5-40份；植物油5-20份；糖浆2-15份；蔗糖1-5份；辛癸酸甘油酯1-5份；大豆磷脂0.5-2份；蔬菜粉0.2-5份；食盐0.1-2份；复合维生素0.1-0.5份；复合矿物质0.1-0.5份；蛋氨酸0.1-0.5份；L-肉碱0.1-0.3份；食用香精0.1-0.5份。
在上述的原料中以重量计还可以加入奶粉10-30份、大豆分离蛋白5-15份或柠檬酸0.5-2份。
其中所述的谷物粉可以是米粉、面粉、玉米粉或豆奶粉中的一种或几种。
所述的熟化整粒谷物可以是熟小麦粒、熟燕麦粒、熟大米粒、熟糯米粒、熟大麦粒、熟荞麦粒、熟高粱米或熟玉米碴中的一种或几种。
所述的植物油可以是花生油、大豆油、精炼油、棕榈油、玉米油、人造奶油或亚麻油中的一种或几种。

本发明制造的高能方便食品，不仅能量高(5千卡/克以上)，而且可以实现快速供能和长时间持续供能相结合。因为本发明中的脂肪由辛癸酸甘油酯和植物油共同构成。辛癸酸甘油酯在体内可以快速消化、吸收、代谢，因此能迅速提供能量；植物油中的脂肪酸均为长链脂肪酸，它们消化、吸收较慢，可以较长时间持续供能；本发明中的碳水化合物既有葡糖萄、果糖、蔗糖、麦芽糖等简单糖类，能够快速吸收、代谢提供能量，又有整粒的小麦、燕麦、大米、高粱米天然谷类食物，它们消化、吸收较慢，也能较长时间持续提供能量。
