技术领域
本发明涉及一种功能性甜味剂及其制备方法,具体涉及一种三氯蔗糖溶液及其制备方法。
背景技术
三氯蔗糖是目前唯一以蔗糖为原料生产的功能性甜味剂,其甜度是蔗糖的600倍,且甜味纯正,没有任何苦后味,无热量,不龋齿,是肥胖症、心血管病和糖尿病患者理想的食品添加剂。长期毒理试验证明三氯蔗糖安全性极高,环境学研究报告进一步证实了这种蔗糖素甜味剂对鱼类和水生生物均无害处,并可生物降解。三氯蔗糖目前已广泛应用于饮料、食品、医药、保健品和化妆品等行业。
三氯蔗糖稳定性好,尤其是其水溶液比固体形式更稳定,在中性和酸性条件下稳定性较佳。此外,三氯蔗糖溶液与其固体形式相比,具有更好的分散度,也具有更好的可调节性。因此三氯蔗糖溶液不仅可用于食品行业的饮料、烘烤食品、果冻、水果糖等,也可用于医药、营养品、止咳露等产品中。然而也有报道,一旦三氯蔗糖加入到一些溶剂例如水或者醇中形成浓缩液,在长时间的贮藏中就会出现一些问题,比较显著的是溶液的变色、水解以及微生物滋生。
美国专利US5,384,311提供了一种水溶液的制备方法,该发明所提及的三氯蔗糖浓缩液由以下组分组成:三氯蔗糖,防腐剂,缓冲液(缓冲体系)以及溶剂。该专利所提及的防腐剂为通用防腐剂,主要有山梨酸钾和苯甲酸钠以及其它一些较为传统的防腐剂,如苯甲酸钾,甲基没食子酸,丙基没食子酸,乙二胺四醋酸,以及尼泊金甲酯与尼泊索等;采用缓冲体系确保溶液在贮存过程中的pH值稳定。预期的pH值范围是4.0到5.5之间。这些缓冲体系可以由弱酸以及相对应的弱酸盐组成,或者可以用两种弱酸盐组成。所列的比较合适的缓冲体系包括柠檬酸与柠檬酸钠或者柠檬酸钾;磷酸与磷酸钠或者磷酸钾;氨基酸与它们对应的盐类,比如精氨酸与精氨酸HCl,赖氨酸与赖氨酸HCl;酒石酸与酒石酸钠或者酒石酸钾;脂肪酸与脂肪酸钠或者脂肪酸甲酯;苹果酸与苹果酸钠或者苹果酸钾;磷酸二氢钠与磷酸氢钠;以及其它类似物质。采用的溶剂是水、乙醇或丙二醇。
中国专利20071016244.5提供了一种三氯蔗糖水溶液及其制备方法。该水溶液组成包括三氯蔗糖、调味剂、防腐剂、食用色素、维生素、微量元素、酸度调节剂中的一种或几种。该发明所提及的调味剂包括香精香料;防腐剂包括苯甲酸及其盐类,山梨酸及其盐类;食用色素包括天然色素和人工合成色素,如柠檬黄和焦糖色素;维生素包括维生素A-E、维生素B1-B6;微量元素包括钙、铁、锌、碘、硒;酸度调节剂包括柠檬酸盐;所用水为自来水、蒸馏水、矿泉水、纯净水。该发明并未对水溶液的pH作出要求。
上述三氯蔗糖水溶液的稳定性还有待于进一步提高。此外,它们均采用传统的化学合成防腐剂,如苯甲酸及其盐、山梨酸及其钠盐、钾盐等,众所周知这些化学合成防腐剂存在致癌性、致畸性和易引起食物中毒等隐患。还有在溶液pH值调节方面,美国专利US5,384,311选择的缓冲体系价格较高,而中国专利20071016244.5只是采用柠檬酸钠或柠檬酸钾调节pH,并未采用缓冲溶液,从而影响溶液pH值稳定性,而且添加色素又限制了下游客户的应用。
发明内容
本发明的目的在于克服现有技术的上述缺点,提供一种三氯蔗糖溶液,其显示出更优异的稳定性,可以更有效地避免溶液变色和水解问题,并且本身具有非常好的防腐能力,避免有害微生物的滋生。
用于实现上述目的的技术方案如下:
一种三氯蔗糖溶液,该溶液包含三氯蔗糖、防腐剂、稳定剂和溶剂,并且pH值为3.0~8.0,优选为4.0~7.5,其中所述稳定剂选自磷酸三钠、六偏磷酸钠、三聚磷酸钠、磷酸氢二钠和磷酸二氢钠中的一种或多种。本发明发现在三氯蔗糖溶液中使用这些稳定剂具有保持水分的作用,使得溶液在贮存过程中更加稳定。
在上述溶液中,防腐剂可以选自天然防腐剂,例如茶多酚、香精油、大蒜素、蒽醌类和蜂胶;生物防腐剂,例如聚赖氨酸、纳塔霉素、乳酸菌素、壳聚糖、溶菌素、红曲、抗菌肽和曲酸中的一种或多种。与前述已有专利中提到的传统化学合成防腐剂存在致癌性、致畸性和易引起食物中毒等缺点相比,本发明选用的天然防腐剂和生物防腐剂具有广谱、高效、低毒、适用性广的优点。
在上述溶液中,溶剂可以选自水,例如饮用水、去离子水、矿泉水和纯净水;乙醇,例如食品级乙醇和药用乙醇中的一种或多种。

优选地,上述溶液还可以包含增味剂,例如甘氨酸、琥珀酸二钠、谷氨酸钠和L-丙氨酸中的一种或多种。增味剂能够保持三氯蔗糖水溶液良好的口感。
优选地,上述溶液还可以包含选自甘氨酸、赖氨酸、精氨酸和D-色氨酸中的一种或多种的补充氨基酸。补充氨基酸可以增加溶液的营养性,同时有些氨基酸又有一定的防腐和改善口感的作用。
优选地,上述溶液还可以包含维生素,例如水溶性维生素B1~B12、胆碱、肌醇和维生素C中的一种或多种。维生素可以根据情况添加。
优选地,基于所述溶液的总重量计,所述溶液可以包含3.0%(重量)~35.0%(重量)的三氯蔗糖;0.001%(重量)~3.0%(重量),优选为0.001%(重量)~0.5%(重量)的防腐剂;0.001%(重量)~3.0%(重量),优选为0.001%(重量)~0.5%(重量)的稳定剂。更优选地,基于所述溶液的总重量计,所述溶液还可以包含0.001%(重量)~3.0%(重量),优选为0.001%(重量)~0.5%(重量)的酸度调节剂;0.001%(重量)~3.0%(重量),优选为0.001%(重量)~0.5%(重量)的增味剂;0.001%(重量)~3.0%(重量),优选为0.001%(重量)~0.5%(重量)的补充氨基酸;0.001%(重量)~3.0%(重量),优选为0.001%(重量)~0.5%(重量)的维生素。
本发明还提供了上述溶液的制备方法,该制备方法包括以下步骤:
(1)将三氯蔗糖溶于溶剂中,加入活性炭脱色;
(2)除去活性炭,加入其余组分;
(3)采用0.45微米微孔过滤器过滤,滤液即为溶液。
具体来说,上述制备方法可以包括以下步骤:
(1)将溶剂加热至45℃~60℃,加入结晶状三氯蔗糖,混合搅拌;
(2)在三氯蔗糖溶液中加入活性炭搅拌脱色,过滤除去活性炭,滤液降至室温后依次加入防腐剂、酸度调节剂、稳定剂、增味剂、补充氨基酸和维生素,搅拌后用0.45微米微孔过滤器过滤,滤液经紫外灭菌后包装得到最终产品。
本发明通过以上组分的组合,制备出澄清、无气味无色、稳定的、具有防腐性的三氯蔗糖溶液,与现有的三氯蔗糖溶液产品相比,其显示出更优异的稳定性,可以更有效地避免溶液变色和水解问题,并且本身具有非常好的防腐能力,可以避免有害微生物的滋生,可广泛应用于食品、医药、保健品等工业。

制备方法:在合适的容器中加热溶剂,温度达到45℃-60℃之后,加入结晶状三氯蔗糖,混合搅拌30分钟。在三氯蔗糖溶液中,可加入少量的活性炭搅拌脱色、过滤除去活性炭。滤液降至室温后按照步骤依次加入防腐剂、酸度调节剂、稳定剂、增味剂、氨基酸、维生素,搅拌30分钟,用0.45微米微孔过滤器过滤,得到滤液,紫外灭菌后包装得到最终产品。
以下实施例中列出本发明的三氯蔗糖溶液的不同配方,制备方法均同上。
实施例1:三氯蔗糖50.00g、纯净水150.00g、聚赖氨酸0.02g、纳塔霉素0.01g、乙酸0.04g、乙酸钠0.04g、甘氨酸0.2g、磷酸三钠0.02g、维生素B50.02g。溶液pH 5.0,澄清,无色。六个月加速稳定试验后,溶液澄清、略带黄色,三氯蔗糖含量24.90%,pH 4.2,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例2:三氯蔗糖50.00g、纯净水150.00g、聚赖氨酸0.02g、乙酸0.2g、乙酸钠0.2g、甘氨酸0.2g、磷酸三钠0.22g、维生素B50.04g。溶液pH 4.9,澄清,无色。六个月加速稳定试验后,溶液澄清、无色,三氯蔗糖含量24.97%,pH 4.2,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例3:三氯蔗糖50.00g、纯净水150.00g、聚赖氨酸0.02g、纳塔霉素0.01g、乙酸0.02g、乙酸钠0.04g、甘氨酸0.2g、磷酸三钠0.02g。溶液pH 5.5,澄清,无色。六个月加速稳定试验后,溶液澄清、无色,三氯蔗糖含量25.05%,pH 4.8,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例4:三氯蔗糖50.00g、纯净水150.00g、聚赖氨酸0.02g、纳塔霉素0.01g、乙酸0.02g、琥珀酸二钠0.04g、甘氨酸0.2g、六偏磷酸钠0.01g。溶液pH 5.6,澄清,无色。六个月加速稳定试验后,溶液澄清、无色,三氯蔗糖含量25.02%,pH 4.7,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例5:三氯蔗糖50.00g、纯净水150.00g、聚赖氨酸0.02g、纳塔霉素0.01g、柠檬酸0.04g、磷酸氢二钠0.06g、甘氨酸0.2g、磷酸三钠0.06g。溶液pH 7.0,澄清,无色。六个月加速稳定试验后,溶液澄清、无色,三氯蔗糖含量24.95%,pH 6.1,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例6:三氯蔗糖50.00g、纯净水150.00g、聚赖氨酸0.02g、纳塔霉素0.01g、柠檬酸0.03g、乙酸钠0.04g、磷酸氢二钠0.07g、甘氨酸0.2g、磷酸三钠0.06g。溶液pH 6.7,澄清,无色。六个月加速稳定试验后,溶液澄清、无色,三氯蔗糖含量24.93%,pH 5.8,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例7:三氯蔗糖50.00g、纯净水150.00g、聚赖氨酸0.02g、纳塔霉素0.01g、柠檬酸0.03g、乙酸0.02g、乙酸钠0.04g、磷酸氢二钠0.07g、甘氨酸0.2g、磷酸三钠0.06g。溶液pH 5.8,澄清,无色。六个月加速稳定试验后,溶液澄清、无色,三氯蔗糖含量24.86%,pH 5.0,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例8:三氯蔗糖50.00g、纯净水150.00g、聚赖氨酸0.02g、柠檬酸0.03g、磷酸氢二钠0.07g、甘氨酸0.2g、磷酸三钠0.02g、维生素B50.04g。溶液pH 5.7,澄清,无色。六个月加速稳定试验后,溶液澄清、略微黄色,三氯蔗糖含量24.92%,pH 5.0,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例9:三氯蔗糖50.00g、纯净水150.00g、聚赖氨酸0.02g、磷酸二氢钾0.18g、磷酸氢二钠0.04g、甘氨酸0.2g、维生素B50.04g。溶液pH5.8,澄清,无色。六个月加速稳定试验后,溶液为略微黄色,三氯蔗糖含量24.90%,pH 5.0,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例10:三氯蔗糖50.00g、纯净水150.00g、聚赖氨酸0.02g、磷酸二氢钾0.18g、磷酸氢二钠0.02g、甘氨酸0.2g、磷酸三钠0.01g、维生素B50.04g。溶液pH 5.8,澄清,无色。六个月加速稳定试验后,溶液为略微黄色,三氯蔗糖含量24.91%,pH 5.0,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例11:三氯蔗糖50.00g、纯净水150.00g、聚赖氨酸0.02g、乙酸0.04g、琥珀酸二钠0.04g、甘氨酸0.2g、维生素B50.04g、磷酸三钠0.02g。溶液pH 4.8,澄清,无色。六个月加速稳定试验后,溶液为略微黄色,三氯蔗糖含量25.1%,pH 4.2,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例12:三氯蔗糖20.00g、纯净水180.00g、聚赖氨酸0.02g、乙酸0.04g、乙酸钠0.06g、甘氨酸0.2g、磷酸三钠0.02g。溶液pH 5.2,澄清,无色。六个月加速稳定试验后,溶液为无色,三氯蔗糖含量9.91%,pH 4.8,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例13:三氯蔗糖7.00g、纯净水193.00g、聚赖氨酸0.02g、乙酸0.04g、乙酸钠0.06g、甘氨酸0.2g、磷酸三钠0.02g。溶液pH 5.1,澄清,无色;六个月加速稳定试验后,溶液略带黄色,三氯蔗糖含量3.49%,pH 4.5,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
实施例14:三氯蔗糖50.00g、纯净水50.00g、食用酒精100.00g、聚赖氨酸0.02g、乙酸0.04g、乙酸钠0.06g、甘氨酸0.2g、磷酸三钠0.02g。溶液pH 5.2,澄清,无色;六个月加速稳定试验后,溶液略带黄色,三氯蔗糖含量3.49%,pH 4.6,菌落总数<10cfu/ml,霉菌、酵母菌总数<10cfu/ml,大肠菌群呈阴性。
综上所述,经在相对湿度75%,温度40℃条件下六个月的加速稳定性试验,其结果显示上述溶液的外观均为基本无色透明液体、各项理化指标基本稳定、微生物指标符合有关卫生要求,具体检测结果细菌总数:<10cfu/ml,霉菌、酵母菌:<10cfu/ml,大肠菌群呈阴性,未检出。据此结果推断,该溶液具有较好的长期稳定性。
Claims (11)
1.一种三氯蔗糖溶液,该溶液包含三氯蔗糖、防腐剂、稳定剂和溶剂,并且pH值为3.0~8.0,优选为4.0~7.5,其中所述稳定剂选自磷酸三钠、六偏磷酸钠、三聚磷酸钠、磷酸氢二钠和磷酸二氢钠中的一种或多种。
2.根据权利要求1所述的溶液,其特征在于,所述防腐剂选自天然防腐剂,例如茶多酚、香精油、大蒜素、蒽醌类和蜂胶;生物防腐剂,例如聚赖氨酸、纳塔霉素、乳酸菌素、壳聚糖、溶菌素、红曲、抗菌肽和曲酸中的一种或多种。
3.根据权利要求1或2所述的溶液,其特征在于,所述溶剂选自水,例如饮用水、去离子水、矿泉水和纯净水;乙醇,例如食品级乙醇和药用乙醇中的一种或多种。
4.根据权利要求1至3中任一项所述的溶液,其特征在于,所述溶液还包括选自以下组合中的一组或多组的酸度调节剂:酒石酸与氢氧化钙;酒石酸与乙酸钠;酒石酸与琥珀酸二钠;酒石酸与磷酸盐,例如钠、钾或钙的正磷酸盐、酸式磷酸盐或碱式磷酸盐;柠檬酸与乙酸钠;柠檬酸与氢氧化钙;柠檬酸与琥珀酸二钠;柠檬酸与乳酸钾;柠檬酸与磷酸盐,例如钠、钾或钙的正磷酸盐、酸式磷酸盐或碱式磷酸盐;乙酸与氢氧化钠;乙酸与氢氧化钾;乙酸与氢氧化钙;乙酸与乙酸钠;乙酸与琥珀酸二钠;乙酸与柠檬酸盐,例如柠檬酸钾盐、钠盐或钙盐;乙酸与乳酸钾;乙酸与磷酸盐,例如钠、钾或钙的正磷酸盐、酸式磷酸盐或碱式磷酸盐;乙酸与碳酸氢钠;乙酸与碳酸钠;乙酸与碳酸钾;富马酸与氢氧化钠;富马酸与氢氧化钾;富马酸与氢氧化钙;富马酸与乙酸钠;富马酸与琥珀酸二钠;富马酸与柠檬酸盐,例如柠檬酸钾盐、钠盐或钙盐;富马酸与乳酸钾;富马酸与磷酸盐,例如钠、钾或钙的正磷酸盐、酸式磷酸盐或碱式磷酸盐;富马酸与碳酸氢钠;富马酸与碳酸钠;富马酸与碳酸钾;乳酸与氢氧化钠;乳酸与氢氧化钾;乳酸与氢氧化钙;乳酸与乙酸钠;乳酸与琥珀酸二钠;乳酸与柠檬酸盐,例如柠檬酸钾盐、钠盐或钙盐;乳酸与乳酸钾;乳酸与磷酸盐,例如钠、钾或钙的正磷酸盐、酸式磷酸盐或碱式盐;乳酸与碳酸氢钠;乳酸与碳酸钠;乳酸与碳酸钾;磷酸与氢氧化钙;磷酸与乙酸钠;磷酸与琥珀酸二钠;磷酸与柠檬酸盐,例如柠檬酸钾盐、钠盐或钙盐;甘氨酸与盐酸;甘氨酸与硫酸;以及两种酸式磷酸盐,例如磷酸氢二钠或钾,与磷酸二氢钠或钾。
5.根据权利要求1至4中任一项所述的溶液,其特征在于,所述溶液还包括增味剂,例如甘氨酸、琥珀酸二钠、谷氨酸钠和L-丙氨酸中的一种或多种。
6.根据权利要求1至5中任一项所述的溶液,其特征在于,所述溶液还包括选自甘氨酸、赖氨酸、精氨酸和D-色氨酸中的一种或多种的补充氨基酸。
7.根据权利要求1至6中任一项所述的溶液,其特征在于,所述溶液还包括维生素,例如水溶性维生素B1~B12、胆碱、肌醇和维生素C中的一种或多种。
8.根据权利要求1至7中任一项所述的溶液,其特征在于,基于所述溶液的总重量计,所述溶液包含3.0%(重量)~35.0%(重量)的三氯蔗糖;0.001%(重量)~3.0%(重量),优选为0.001%(重量)~0.5%(重量)的防腐剂;0.001%(重量)~3.0%(重量),优选为0.001%(重量)~0.5%(重量)的稳定剂。
9.根据权利要求1至8中任一项所述的溶液,其特征在于,基于所述溶液的总重量计,所述溶液还包含0.001%(重量)~3.0%(重量),优选为0.001%(重量)~0.5%(重量)的酸度调节剂;0.001%(重量)~3.0%(重量),优选为0.001%(重量)~0.5%(重量)的增味剂;0.001%(重量)~3.0%(重量),优选为0.001%(重量)~0.5%(重量)的补充氨基酸;0.000%(重量)~3.0%(重量),优选为0.001%(重量)~0.5%(重量)的维生素。
10.根据权利要求1至9中任一项所述的溶液的制备方法,该制备方法包括以下步骤:
(1)将三氯蔗糖溶于溶剂中,加入活性炭脱色;
(2)除去活性炭,加入其余组分;
(3)采用0.45微米微孔过滤器过滤,滤液即为溶液。
11.根据权利要求1至10中任一项所述的溶液的制备方法,该制备方法包括以下步骤:
(1)将溶剂加热至45℃~60℃,加入结晶状三氯蔗糖,混合搅拌;
(2)在三氯蔗糖溶液中加入活性炭搅拌脱色,过滤除去活性炭,滤液降至室温后依次加入防腐剂、酸度调节剂、稳定剂、增味剂,补充氨基酸和维生素,搅拌后用0.45微米微孔过滤器过滤,滤液经紫外灭菌后包装得到最终产品。
