对于在家庭和个人护理领域中的充气产品,如肥皂、刮胡胶、头发摩丝等,也出现了相同的问题。
令人惊讶地,已经发现了当充气产品含有至少一种盐和至少一种糖酯时,可以形成含有水和至少一种液体油的充气产品。
因此,本发明的一个实施方案涉及含有水和至少一种液体油的可充气产品,其特征在于该可充气产品含有
(i)至少一种盐,和
(ii)至少一种蔗糖酯。
可充气产品是制剂,然后将其充气。

通过测量泡沫的高度来测定稳定性。以百分比给出,其中100%意味着高度没有变化,而例如50%意味着泡沫的高度是开始测量时的一半。
充气和膨胀度

水
根据本发明的可充气产品含有水。含水量可以根据充气产品的用途而改变。

油

糖酯(也称为蔗糖脂肪酸酯)的特征可以在于其亲水亲脂平衡(HLB)及其单-至八-脂肪酸酯的组成。
本发明涉及所有类型的蔗糖酯(以及混合物)。优选,本发明涉及蔗糖硬脂酸酯、蔗糖棕榈酸酯及其混合物。
蔗糖与高级脂肪酸的单酯、双酯和聚酯也是合适的,其中,高级脂肪酸如月桂酸、肉豆蔻酸、棕榈酸、硬脂酸和牛脂油酸(oleic tallow acid)。
蔗糖酯是任何种类的酯化蔗糖以及酯化糖醇。
合适的是脂肪酸的蔗糖聚酯。
根据本发明的可充气产品基于可充气产品的总重量,含有至少0.05wt%的至少一种蔗糖酯。

充气组合物还可以用于食品中。食品在室温下可以是稳定的。但它也可以是冷藏的充气食品或冷冻的充气产品。
膨胀度
组合物中存在的膨胀度的量将根据期望的产品特征而改变。膨胀度为至少10%,优选至少25%或50%。优选,膨胀度的量低于400%,更优选低于300或200%。对于冷冻的充气糖食,膨胀度最优选为70至150%。对于掼打奶油或非乳奶油和相关产品,膨胀度最优选100至160%。
可以通过公知的方法来生产根据本发明的可充气产品以及充气产品。

实验
除非另外指出,在室温下(大约22℃)进行制剂的制备、充气和稳定性实验。
除非另外指出,按照制造商推荐的,将Sisterna蔗糖酯溶解在80℃的水中,并使其冷却至室温。
Sisterna蔗糖酯是蔗糖棕榈酸酯和蔗糖硬脂酸酯的混合物,其中SPXX中的数字表示体系中单酯的百分比。然后加入除了盐以外的所有其余成分。
然后,除非另外指出,通过下列形成泡沫,首先在不存在盐时,使 用具有L4R细筛孔的Silverson混合机在60%的最大速度下将油在水相中乳化60秒。乳化后立即加入盐,并使用手持式掼打装置(SmartCafeTM)将体系充气。也可以使用本领域已知的其他装置。

在80℃下制备Sisterna SP70的水溶液。通过温和的搅拌在室温下组合上述成分,然后用电手动混合器形成泡沫,最后使用Aerolatte无蒸汽奶发泡器充气至50%膨胀度,进而产生奶昔。
Claims (10)
1.一种充气产品,其特征在于所述充气产品含有:
(i)5-99.5wt%的水;
(ii)0.01-80wt%的至少一种液体油;
(iii)0.005-4.5wt%的至少一种盐;和
(iv)0.5-2wt%的至少一种蔗糖酯;
其中所述液体油在20℃/1个大气压下是液体的;
其中所述可充气产品是食品;
其中,所述液体油含有低于液体油重量30%的饱和脂肪酸,
其中所述产品是水包油乳液形式的,和
其中所述至少一种蔗糖酯溶解在80℃的水中,该蔗糖酯是蔗糖硬脂酸酯和蔗糖棕榈酸酯的混合物。
2.根据权利要求1的充气产品,其不含有固体油,其中所述固体油在25℃/1个大气压是固体的。
3.根据权利要求1至2任一项的充气产品,其中油是植物油或动物油。
4.根据权利要求3的充气产品,其中油可以选自向日葵油、橄榄油、大豆油、菜子油及其级分。
5.根据权利要求1的充气产品,其中所述盐选自含有卤素阴离子或磷酸盐离子的无机盐。
6.根据权利要求1的充气产品,基于充气产品的总重量,其含有最高达到50wt%的至少一种其他成分。
7.根据权利要求1的充气产品,其具有至少10%的膨胀度。
8.根据权利要求1的充气产品,其具有低于400%的膨胀度。
9.根据权利要求1的充气产品,其是冷冻充气食品。
10.生产权利要求1至9任一项的充气产品的方法,其中在加入所述盐之前,将所述油、水和蔗糖酯进行乳化。
