技术领域
本发明涉及功能性水稻的特殊种植技术,确切说是紫宝香糯1号的特殊种植技术及其系列产品开发。
背景技术
紫宝香糯1号(又名玉山黑糯)是一种功能性特种水稻新品种。由江西省玉山县特种研究开发中心开发和制备,其种皮为紫红色,有光泽,色泽分布均匀,煮熟的米饭及其产品具有特殊浓香味。化学分析:糙米富含工业维生素,富含不饱和脂肪酸,古今中外无先例,其中亚油酸比世界名食用油橄榄油和山茶油高3倍多,硒、钙、黄铜等含量均较高,营养元素、矿物质全面,是一种无公害的天然优质紫香糯米,广泛应用于食品加工、酿酒、研制营养保健药丸、提炼食用高级香米油。光温变化对紫宝香糯1号养分积累影响很大,特别是灌浆至成熟期,光温变化直接对种皮色泽、米香味影响,技术方法不科学,则生产的糙米一半紫一半黄或淡红,香味淡,营养下降,严重影响糙米品质及其开发的产品品质。
发明内容
本发明的目的就是提供一种紫宝香糯1号的特殊种植技术和加工技术,确保生产的紫宝香糯1号糙米色、香、味、营养保持应有的最佳本质。糙米开发的产品具有天然色泽、天然风味和多种重要天然营养保健成份。
本发明是这样实现的,它采用如下种植技术、加工工艺:
一、种植技术方案
A、根据紫宝香糯1号始穗历期,当地气候特点和种皮紫色素、香味对温光反映规律,安排在特定的温光条件下灌浆成熟。做到适时播种,在6月下旬播种,培育壮秧,亩用种1公斤,亩秧田播种8公斤,二叶前使用多效唑,及时移栽,秧龄25-28天,合理密植,7×8寸,蔸基本苗5条以上,科学施肥(以农家有机肥、绿肥为主,增施生物肥,最后一次用肥时间要距收割期60天以上;
B、实行中耕除草,科学淡水技术,协调好水、肥、气、温关系;
C、农药使用无公害农药,最后一次施药应距收割20天以上。
二、紫宝香糯1号的加工与产品生产工艺路线:
A、功能米(糙米)生产工艺:稻谷筛选→糙米加工→精选→色选→装小袋→封口→装箱(大袋);
B、紫香年糕生产工艺:紫宝香糯1号糙米+专用米→搅拌→吸水→拌紫香米素→粉碎→生榨→蒸熟→榨年糕→切条→冷却→装袋或切片→整形→再装袋→真空封口→灭菌→冷却→检质→帖商标→检验→装箱;
C、紫香贡酒生产流程:紫宝香糯1号干谷→冷浸→蒸煮→摊凉→加酵母→堆放发酵→封缸发酵→吊酒→检测→提取米紫色素、香味进入热酒、冷酒中→灭菌装瓶→封口→贴商标→装瓶;
D、紫香糯米酒生产流程:紫宝香糯1号糙米→冷浸→蒸煮→摊凉→加酵母→进缸保温发酵→化糟→过滤→灭菌装瓶→封口→装箱;
E、高级食用香米油生产工艺:紫宝香糯糙米→烘炒(或生米)→榨油→过滤→灭菌→加食用防腐剂→装瓶→装箱;
F、保健药丸“亚油酸”胶囊生产技术路线:
①高级食用香米油→提炼亚油酸→生产胶囊;
②紫宝香糯1号糙米→高分子技术→分离→提取亚油酸→生产胶囊;
G、副食品类(米粉、速溶米粉、干粉、饼干、方便面、面条、果冻、营养饮料、八宝粥)生产技术路线:
①紫宝香糯1号糙米→烘炒(生米)→粉碎→蒸煮→生产成品;
②紫宝香糯1号糙米→蒸煮→加配料→过滤→杀菌→成形→生产成品。
本发明生产的紫宝香糯1号糙米,能确保其色、香、味,营养保持应有的最佳本质,是一种纯天然无公害多功能营养保健生产原料,用该米为原料研发的产品具有“三天”特色,即天然色泽、天然风味、多种重要天然营养保健成份。广泛用于食品加工、酿酒、研制营养保健药丸、提炼食用高级香米油。
具体实施方式
本发明的栽培技术方案为:
A、适时播种:玉山县气候宜6月下旬播种。培育壮秧,亩播种8公斤,二叶前使用多效唑,及时移栽,秧龄25-28天。合理密植,7×8寸规格,蔸基本苗5条以上。科学施肥,以培植绿肥,增施农家肥作基肥,施用少量速效肥为面肥,使用生物肥追肥,秸秆还田要切碎匀施,要经发酵处理最后一次施肥应在收割前60天进行;
B、科学管水,根据密度、苗情,科学管水,及时中耕除草,协调好水、肥、光、热关系。坚持寸水返青,浅水分蘖,够苗晒田,有水抽穗,干湿壮籽原则,科学管水;
C、搞好农业综合防治,实施病、虫、草综合防治技术,控制病虫发生发展。同时利用天敌和生物农药,无公害农药防治病虫。积极发挥灯光诱虫、种子消毒、土壤杀菌等方法效益,严格控制施药时间,一般最后一次施用农药要在距收割前20天进行,以确保产品无污染。
本发明的产品加工与生产工艺:
紫宝香糯1号糙米生产工艺:稻谷筛选去杂后,用橡胶辊脱壳,然后精选、色选后装小袋,真空封口,最后装箱(袋),检验,封袋(箱)。
天然紫香年糕生产工艺:用紫宝香糯1号糙米配专用米,搅拌均匀,然后用优质地下水浸米(短时),沥干后拌紫香米素,放入磨粉机内粉碎,加入一定量优质地下水拌均匀,然后榨成粉段,再蒸煮,熟后再放入年糕榨机内榨年糕,切成定型长度条状年糕,再冷却,装小袋或切片重新整形再装小袋,然后真空封口、灭菌,冷却后验质贴商标,再装箱,检验封箱。
天然紫香贡洒生产流程:用紫宝香糯1号谷加水冷浸24小时,捞起蒸煮,熟后摊开冷却,加酵母拌匀,然后堆放发酵,冬天要保温,发酵成熟再进缸,重新发酵,一定时间后,加入一定量的优质地下水,立即封缸化酒,化酒达到一定时间后,进行吊酒,检测酒精度,再将糙米皮紫色素和香味提取到热酒或冷酒中,得天然紫红色,有独特香味和高营养成份的烧酒,再装瓶装箱。
天然紫香糯米酒生产流程:用紫宝香糯1号糙米加入一定量的优质地下水,冷浸一定时间,然后捞起蒸煮,熟后翻蒸用浸米水搅拌再蒸,蒸烂后摊冷,把浸米水连同蒸煮的水一起重新烧开,冷却,再把酵母加入蒸烂米中拌匀,加入冷却的红色开水,贮放化糟,一定时间后开坛过滤,检验,再杀菌装瓶封口,装箱。
高级食用香米油生产工艺:用紫宝香糯1号烘炒至一定程度,再研碎,用压榨机榨油或用生米研碎用压榨机榨油,然后过滤,进行灭菌,再加入一定比例的食用防腐剂,最后装瓶装箱。
保健药丸“亚油酸”胶囊生产技术路线:A、用紫宝香糯1号生产出来的高级食用香米油做原料,采用先进技术,从中提炼亚油酸,生产亚油酸胶囊;B、用紫宝香糯1号为原料,利用高分子技术,分离提取亚油酸,生产亚油酸胶囊。
副食品类(米粉、速溶米粉、干粉、饼干、方便面、面条、果冻、营养饮料、八宝粥)生产技术路线:
A、用紫宝香糯1号糙米为原料,高温刹间膨化学工业或生米)粉碎,然后加配料,生产成品,包装;
B、紫宝香糯1号糙米加入一定量的优质地下水,煮烂,加配料,再过滤,杀菌,生产成品,包装。

1.紫宝香糯1号的种植方法,其特征在于步骤为:
A、适时播种:在6月下旬播种,每亩播种8公斤,培育壮秧,秧龄25-28天,进行移栽,按7×8寸规格合理密植,蔸基本苗5条以上,以培植绿肥,增施农家肥作基肥,施用少量速效肥为面肥,使用生物肥追肥,秸秆还田要切碎匀施,最后一次施肥应在收割前60天进行;
B、科学管水:根据密度、苗情,科学管水,协调好水、肥、光、热关系,按照寸水返青,浅水分蘖,够苗晒田,有水抽穗,干湿壮籽原则,科学管水;
