Abstract

La présente invention concerne des graines, des plantes et des huiles présentant une teneur élevée en acide oléique; une faible teneur en acide linoléique; une faible teneur en acide linoléique plus un acide linolénique; et des propriétés fonctionnelles ou alimentaires avantageuses. L'invention concerne des plantes présentant une mutation dans un gène à désaturases d'acide gras delta-12 ou delta-15. Les plantes sont, de préférence, du colza et du tournesol. Les plantes porteuses de tels gènes mutants présentent, dans leurs graines, une composition d'acide gras modifié. Selon un mode de réalisation, la plante présente une mutation dans une région comportant le motif conservé His-Xaa-Xaa-Xaa-His, rencontré dans les désaturases d'acide gras delta-12 et delta-15. Un motif préféré comporte la séquence His-Glu-Cys-Gly-His. Une mutation préférée de ce motif comporte la séquence d'acides aminés His-Lys-Cys-Gly-His. L'invention concerne, en outre, des fragments d'acide nucléique renfermant une séquence mutante de gènes à désaturases d'acide gras delta-12 ou delta-15.
