Abstract
"PRODUTO ALIMENTìCIO FERMENTADO COM UMA OU MAIS BACTéRIAS DE áCIDO LáCTICO E PROCESSO DE PREPARAçãO DE PRODUTO ALIMENTìCIO FERMENTADO". Produto alimentício fermentado com uma ou mais bactérias de ácido láctico que compreende de 4 a 10% em peso de proteína de soja, em que o produto alimentício compreende pelo menos 0,2% em peso de proteína hidrolisada. Além disso, o presente refere-se a um processo de preparação de produto alimentício fermentado, em que um material de partida que compreende proteína de soja é fermentado com uma ou mais bactérias de ácido láctico, em que 40% em peso ou mais com relação à quantidade total de proteína de soja são de proteína de soja hidrolisada.
