"NéCTAR MISTO DE AçAì, PROCESSO DE PRODUçãO E DE CONSERVAçãO". A presente invenção refere-se a uma bebida de composição e sabor distintos, denominada néctar misto de açaí, cujos componentes principais são o açaí, o cupuaçu e o guaraná. A invenção refere-se ainda ao processo de produção do néctar de açaí e a um método combinado de conservação do açaí e do cupuaçu à temperatura ambiente sem adição de conservantes. à mistura que compõe o néctar de açaí também foram adicionadas fontes de glicose para a redução da atividade de água. Esses métodos, aliados ao tratamento com calor, permitiram a obtenção de um produto com qualidades nutritiva e sensorial garantidas e vida útil prolongada à temperatura ambiente."AQUAÍ MIXED NECTAR, PRODUCTION AND CONSERVATION PROCESS". The present invention relates to a beverage of distinct composition and taste, called açai mixed nectar, the main components of which are açai, cupuaçu and guarana. The invention further relates to the process of producing acai nectar and a combined method of preserving acai and cupuassu at room temperature without the addition of preservatives. Glucose sources were also added to the açai nectar mixture to reduce water activity. These methods, combined with heat treatment, allowed to obtain a product with guaranteed nutritional and sensory qualities and prolonged shelf life at room temperature.
