Abstract
"UM PROCESSO PARA PREPARAçãO DE Pó DE TOMATE E SEUS DERIVADOS". A presente invenção descreve um processo para preparação de tomates secos e fatiados/tomates secos e picados/tomates em pó, e seus derivados compreendendo lavar de tomates de cor vermelho intenso, fatiar e picá-los, tratar as fatias ou pedaços por imersão em solução de cloreto de cálcio ou solução de gluconato de cálcio ou solução de lactato de cálcio ou solução de metabisulfito de potássio ou a combinação delas para efetivar a qualidade anti-tostamento.
