Abstract
"COMPOSIçõES E MéTODOS PARA FORTIFICAçãO DE CáLCIO DE PRODUTOS DE LEITERIA E ALIMENTOS OLEAGINOSOS". Complexos de quelato de aminoácido de cálcio para fortificação de produtos de leiteria e alimentos oleaginosos, produtos de leiteria e alimentos oleaginosos fortificados com complexos de quelato de aminoácido de cálcio e métodos de preparar complexos de quelato de aminoácido de cálcio são divulgados e descritos. Adicionalmente, os complexos de quelato de ácido málico de aminoácido de cálcio para a fortificação de alimentos oleaginosos são também descritos. Os complexos de quelato de aminoácido de cálcio e complexos de quelato de ácido málico de aminoácido de cálcio da presente invenção são estáveis, saborosos e biodisponíveis. Os complexos de quelato de aminoácido de cálcio são preparados reagindo-se um composto de cálcio, um ligando de aminoácido, um ajustador de pH e opcionalmente um agente de estabilização/suspensão em um ambiente aquoso. Os complexos de quelato de ácido málico de aminoácido de cálcio são preparados reagindo-se uma fonte de cálcio, um ligando de aminoácido e ácido málico em um ambiente aquoso.
