Abstract
"COMPOSIçãO EDULCORANTE COM UM ALTO GRAU DE EDULCORAçãO, EDULCORANTE, ALIMENTO E BEBIDA, OU UM OUTRO PRODUTO EDULCORADO, PROCESSOS PARA CONFERIR UM SABOR DOCE, E PARA CORRIGIR UM SABOR, MODIFICADOR DE SABOR, E, ALIMENTO E BEBIDA, UM MEDICAMENTO ETC. COM SABOR AMARGO APERFEIçOADO". Proporciona-se composições edulcorantes com um alto grau de edulcoração apresentando características de edulcoração que se aproximam mais estreitamente das características de edulcoração da sucrose que são obtidas combinando-se derivados de éster de dipeptídeo de aspartila que são componentes edulcorantes apresentando um alto grau de edulcoração (por exemplo, 1-metil éster de N-[N-[3-(3-hidróxi-4-etoxifenil) propil]-L-< 244 > aspartil]-L-fenilalanina) com pelo menos um composto selecionado dentre outros componentes edulcorantes apresentando um alto grau de edulcoração (Aspartame, etc.), sacarídeos, álcoois de açúcar e oligossacarídeos, de modo a reforçar o primeiro sabor dos derivados e enfraquecer o sabor residual, aperfeiçoando desta forma o balanço do primeiro sabor e o sabor residual. Os derivados de éster de dipeptídeo de aspartila acima também são utilizáveis como corretores. Utilizando-se estes corretores, pode-se obter e manter um efeito de eliminar amplamente ou aliviar o amargor em composições (bebidas, alimentos, drogas, etc.) sem afetar indesejavelmente as propriedades físicas (em particular, a viscosidade de composições líquidas) ou piorar as qualidades (por exemplo, o acastanhamento) durante o armazenamento. Assim, pode-se proporcionar bebidas, alimentos, drogas etc. apresentando características de sabor favoráveis com amargor aliviado.
