Components existing precipitate is treated in a manner known per se with a solution containing only the soluble milk salts and thus the original milk without lactose content is restored. However, since the extract content of the milk was considerably lower due to the lack of milk sugar, it is replaced by the addition of cream with a fat content of 50-600 / 0, which may have been washed with water.
The salt solution used to dissolve or swell the casein precipitate is best prepared by dissolving 45 ° of a mixture of potassium phosphate and potassium. carbonate, sodium chloride and potassium chloride in 0'6 l water, for one liter of finished milk.
The finished preparation must react almost neutrally or amphoterically.
The dissolution or swelling of the casein precipitate can be facilitated if the corresponding carbonate salts are used instead of sodium chloride and potassium chloride and the preparation is then neutralized with an appropriate amount of hydrochloric acid. Substances that improve taste can also be added.
PATENT CLAIMS:
1. A method for producing a low-sugar milk for diabetics, characterized in that cream, whole milk or skimmed milk in a suitable manner z. B. by carbon dioxide under pressure, filtration through clay cells without decomposition or chemical change of the casein lime into the water-soluble and suspended components and separates the latter in an alkaline salt solution, which only contains the water-soluble salts of the milk in appropriate proportions, the Mix in
