Abstract

Una composición para revestir una confitura congelada; en donde la composición comprende, expresados en % en peso basado en el revestimiento, 30 a 80% en peso de grasa, que comprende una mezcla de grasa de grasa dura y aceite líquido, y 20 a 70% en peso de sólidos que no son grasa, en donde la composición de revestimiento comprende menos de 25% en peso de ácido graso saturado, 10 - 60% en peso, preferentemente, 20 - 40% de ácido graso monoinsaturado y menos de 10%, preferentemente, menos de 5% de ácido graso poliinsaturado, y en donde el ácido graso saturado comprende entre 12 - 24 átomos de C y el ácido graso insaturado contiene 18 átomos de C o más de 18 átomos de C. También se refiere a un proceso para elaborar esta composición y una confitura congelada al menos parcialmente revestida con la composición.
