Abstract
El método de la presente produce concentrados de proteína de leche modificados utilizando un intercambio de cation para reemplazar iones divalentes con iones monovalentes. El concentrado de proteína de leche modificado producido se puede convertir en un gel que puede ser un producto símil queso mismo, o se puede utilizar para elaborar productos tales como quesos, productos símil queso, productos saborizados, postres, productos confitados y productos alimenticios intermedios.
