Abstract

Se describe un proceso para recuperar una composicion rica en proteínas, a partir del tejido muscular animal, siendo la citada composicion rica enproteínas capaz de ser transformada en un gel, proceso que comprende: la formacion de una solucionlíqui da acuosa rica en proteínas, que incluye la citadacomposicion rica en proteínas y que tiene un pH inferior a 3,5 aproximadamente, a partir de una forma particulada de dicho tejido muscular animal y unacomposicion líquida acuosa que tiene un pHmenor que alrededor de 3,5 que no degrada sustancialmente la proteína de la mencionada composicion rica enproteínas, y la recuperacion desde dicha solucion, de la citada composicion rica en proteínas capaz de ser transformada en un gel y que estásustancia lmentelibre de miofribrillas y sarcomeras. Además se describe una composicion solida rica en proteínas, recuperada en un tejido muscular animal, la cual comprendeproteínas miofibrilares sustancialmente libres de miofibrillas y sarcomeras,siendo las citadas proteínas capaces de ser transformadas en un gel, unacomposicion rica en proteínas recuperada de un tejido muscular animal, la cual comprende proteínas miofibrilares sustancialmente libres de miofibrillas yy sarcomeras, ensolucion líquida ac uosa, que tiene un pH menor que alrededor de 3,5 la cual no degrada sustancialmente dichas proteínas, siendo lasmencionadas proteínas capaces de ser transformadas en un gel, y una composicion en gel rica en proteínas recuperadade un tejido muscular animal, la cualcomprende proteínas miofibrilares sustancialmente libres de miofibrillas y sarcomeras.
