You can adjust mouse sensitivity via settings from the pause menu by pressing P key on your keyboard.
Alternatively, your mouse might have a button to control sensitivity.
Monster in not blind. It just can't see a lot and mainly focuses on its hearing.
Although, the monster can still see you standing, say, on the other side of a hallway.
I think the stealth mechanic here works similar to Bethesda games. If you crouch, the monster can't hear you. But if it sees you crouching, it spots you.
Or you can just forget about being cautious and run the entire time as you mentioned.

We are aware of all the downsides, although this game can't be repaired since it's comprised of so much third party assets that we'll have to rework everything, which isn't worth the time spend doing so. Maybe, we should hide this project since it doesn't reflect our current skills.
Hi! Those retro-styled visuals look fantastic. They're so smooth! One thing I'd like to point out is that your game takes up 100% of GPU. If it's made intentionally it'd be great to have an option to turn on VSync or lock FPS :)
And yeah, the sensitivity slider could've been greater, as others mentioned
