Senduduk plants are one type of wild plants and include weeds that have not been used optimally. This plant has a woody stem morphology with a reddish brown color, elliptical leaves with fine hair on its surface, sometimes dark purple-magenta, light red-magenta and white petals. Senduduk fruit are technically classified into berries, when they are fully ripe, the cover of the fruit cracks open to reveal a dark purple fruit, soft texture and many tiny seeds inside. The name melastoma comes from the Greek word for black mouth. This is due to the thick color of the fruit (blackish purple) when consumed directly, leaving a distinctive color on the tongue (Joffry et al., 2012).
Nata formation is also influenced by the length of fermentation time, namely the optimum fermentation time will give the best quality results. Based on research Latumahina et al. (2017) states that the longer the incubation time (fermentation), the thicker the nata formed, but for a longer time it will affect the brownish color of the nata and a hardened texture. The long incubation time also affects the dead bacteria because the cell loses a lot of spare energy because the nutrients from the environment have been depleted. These nutrients slowly decrease along with the increase in acid as a result of metabolites from the fermentation process.
