New fields in the collection should have the prototype_options applied, so the use case described in this blog works: https://symfony.com/blog/new-in-symfony-6-1-customizable-collection-prototypes
If the entry_options are applied instead of prototype_options, the fields would be disabled and thus cannot be submitted.
