Ingredients

2 hours
4-6 servings
  1. 2 Cups cake flour
  2. 4-5 large eggs, beaten
  3. 5 ml salt
  4. As required Water for boiling

Cooking Instructions

    In a bowl combine the flour and salt. Make a well in the middle.

    Add eggs to flour and mix until it forms a stiff dough (I use my Kenwood mixer with dough attachment). Add a little bit of water if all flour is not absorbed.

    Knead dough on a floured surface (again I just continue in my Kenwood) ☆Knead for 5 minutes. The dough should be smooth and elastic. The dough should bounce back when you press your finger in the middle.

    Rest the dough at room temperature for 30 minutes.

    Divide dough into four pieces. Roll dough with rolling pin or pasta machine until desired thickness.

    Cut dough in the desired shape (I made Tagliatelle).

    Cook for 5 minutes in simmer salted water or hang to dry to use later. Use within 4 days.
