A Caramel & Pecan Childhood

Caramel. Pecans. Cake. These three treats stand strong by themselves, but together they form a delicious, dynamic trio!  Growing up in Tennessee, homemade caramel cakes and pecan pie were staples at our church, neighborhood, and family gatherings. When we moved to the West Coast, these traditional Southern desserts were less common. 

It’s been years since I’ve had a good piece of caramel pecan cake…that is until now. I pulled out my mom’s old recipe and could almost hear her voice as she gave me instructions on how to help her in the kitchen. I remembered the aroma of eggs and vanilla in the air, and the difficulty I had in not eating all of melting, sugary sauce she stirred the bubbling caramel.

I still recall those humid summer days at the park drinking sweet tea, eating BBQ ribs and finishing it all off with a big piece of caramel pecan cake. I will certainly be making this tasty treat more often – especially when I want a taste of my childhood once again.
